Versiunea de mai jos este de post (vegana), facuta cu lapte de cocos in loc de lapte de vaca, si are nevoie doar de 5 ingrediente. Initial am incercat reteta traditionala de dulce de leche doar inlocuind laptele de vaca cu lapte de soia, insa nu mi-a iesit. Asa ca am trecut la lapte de cocos, iar de data asta a iesit exact gustul pe care il cautam. Singura diferenta ar fi la aspect: al meu a iesit mai deschis la culoare, insa imi place mai mult asa, arata mai &#8220;laptos&#8221;. \ud83d\ude42<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce ingrediente iti trebuie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Lista e scurta, dar fiecare ingredient are rolul lui. <strong>Laptele de cocos in conserva<\/strong> (400 ml) este baza: alege unul integral, cat mai gras, nu varianta light, pentru ca grasimea ii da sosului cremozitatea si bogatia tipice unui dulce de leche. <strong>Zaharul<\/strong> (jumatate de cana) se caramelizeaza usor in timpul fierberii si aduce aroma de caramel. Combini laptele de cocos cu zaharul si pui la foc mediu, amestecand pana cand zaharul se dizolva complet. Adaugi sarea si vanilia si continui sa amesteci usor, apoi incorporezi amidonul de tapioca cernut. Mareste focul pana cand amestecul ajunge la fierbere, dupa care reduci flacara si lasi sa fiarba la foc mic timp de 20 de minute, amestecand din cand in cand. Sosul se va ingrosa treptat si va capata o culoare cremoasa. La final, il lasi sa se raceasca, moment in care se mai ingroasa putin.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De ce functioneaza metoda asta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta clasica de dulce de leche se bazeaza pe laptele de vaca, care se ingroasa prin reducere lenta si reactia Maillard dintre zaharuri si proteinele din lapte. La versiunea vegana lipsesc proteinele animale, asa ca laptele de cocos singur nu se leaga la fel de bine. De aceea intervine amidonul de tapioca: el gelifiaza la fierbere si da sosului consistenta groasa, lucioasa, pe care altfel nu ai obtine-o doar prin reducere. Fierberea lenta de 20 de minute lasa apa din laptele de cocos sa se evapore si concentreaza aroma, iar amestecul ocazional impiedica lipirea pe fundul cratitei si arderea zaharului. Merge minunat turnat peste <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-cu-aroma-de-turta-dulce\/\">clatite<\/a>, peste o <a href=\"https:\/\/gourmandelle.com\/ro\/budinca-de-orez-cu-lapte-de-cocos\/\">budinca de orez cu lapte de cocos<\/a> sau peste un <a href=\"https:\/\/gourmandelle.com\/ro\/orez-cu-lapte\/\">orez cu lapte<\/a> cald, ca topping de caramel. Daca iti plac deserturile cu lapte vegetal, gasesti mai multe idei in colectia de <a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-lapte-de-cocos\/\">retete cu lapte de cocos<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dupa ce s-a racit complet, pastrezi dulceata de lapte intr-un borcan sau recipient etans, in frigider.
