In spaniola, &#8220;empanada&#8221; inseamna chiar actiunea de a inveli un ingredient in aluat si a-l gati astfel. Umpluturile autentice merg de la branzeturi la carne sau fructe de mare, insa eu am vrut o varianta complet vegetala, asa ca am mers pe ciuperci &#8212; au exact acea textura carnoasa si gust umami care face umplutura sa para &#8220;consistenta&#8221; fara niciun produs de origine animala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Marturisesc ca nu am vrut sa fac aluatul de empanadas de la zero, asa ca am &#8220;trisat&#8221; folosind foietaj cumparat. Si nu regret deloc: invelisul iese de obicei foarte fin si usor, ti se topeste in gura si dezvaluie umplutura delicioasa de dedesubt. Le servesc in portii micute, alaturi de un sos de rosii, asa cum se obisnuieste in Spania, ca sa am parte de o experienta culinara cat mai autentica. Caut intotdeauna un foietaj la care primul ingredient de pe eticheta sa fie un grasime vegetala, nu untura sau unt, ca sa raman in zona vegana &#8212; multe foi din comert contin deja doar grasimi vegetale, dar merita o privire rapida pe ambalaj. Il scot din frigider cu cateva minute inainte sa il intind: daca e prea rece se crapa, iar daca s-a incalzit prea tare devine lipicios si greu de manevrat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile<\/strong> tocate fin sunt inima umpluturii. Alege ciuperci ferme, cu palaria inchisa si fara pete moi &#8212; acelea au cel mai mult gust si lasa cel mai putin lichid. Secretul e sa le toci marunt si sa le gatesti pana se evapora tot lichidul; abia atunci capata gustul concentrat, umami, care imita textura unei umpluturi cu carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boiaua afumata<\/strong> face toata diferenta de aroma. Ea aduce acea nota afumata, calda, care da umpluturii caracter spaniol. Foloseste o boia proaspata, cu un rosu intens &#8212; daca a stat prea mult in dulap isi pierde din parfum si din culoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Maslinele<\/strong> feliate adauga sare naturala si un strop de aciditate care taie din bogatia foietajului. Eu prefer masline negre sau Kalamata pentru un gust mai profund, dar merg si cele verzi, mai blande.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa verde<\/strong> intra in doua roluri: putina in umplutura, pentru prospetime, si restul deasupra la servire, ca sa aduca o nota vie si colorata peste empanadele calde. Foloseste si partea alba, si pe cea verde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sosul de rosii<\/strong> de servire nu e optional in mintea mea &#8212; el ofera umiditatea si aciditatea care completeaza empanadele. Un sos simplu de rosii, cu putin usturoi si ierburi, transforma gustarea intr-o experienta cat mai apropiata de cea autentic spaniola.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Evapora tot lichidul din ciuperci.<\/strong> Cea mai comuna greseala e sa scoti umplutura de pe foc prea devreme. Lasa ciupercile fara capac, amestecand din cand in cand, aproximativ 10 minute &#8212; stii ca sunt gata cand tigaia e aproape uscata si nu mai musteste lichid. O umplutura apoasa inmoaie foietajul si empanadele se desfac.<\/li>\n<li><strong>Nu supraumple cercurile de aluat.<\/strong> O lingura de umplutura per cerc e suficient. Daca pui prea mult, marginile nu se mai lipesc si umplutura curge la copt.<\/li>\n<li><strong>Sigileaza bine cu furculita.<\/strong> Apasa de-a lungul marginii semi-cercului cu dintii furculitei &#8212; nu doar pentru aspect, ci pentru ca presiunea inchide etans aluatul si tine umplutura inauntru.<\/li>\n<li><strong>Unge-le cu ulei inainte de copt.<\/strong> Stratul subtire de ulei de masline le da culoarea aurie si luciul frumos. Pentru o varianta de post, asigura-te ca foietajul ales nu contine unt sau untura.<\/li>\n<li><strong>Condimente.<\/strong> Inlocuieste oregano cu cimbru sau adauga un varf de chili daca iti plac empanadele picante; un strop de chimion le da o nuanta si mai mediteraneana.<\/li>\n<li><strong>Metoda de gatire.<\/strong> Reteta clasica permite si prajirea, nu doar coacerea. Daca le prajesti in baie de ulei, ies mai crocante si mai bogate, dar coacerea ramane varianta mai usoara.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Umplutura de ciuperci se poate pregati cu o zi inainte si se pastreaza la frigider intr-un recipient inchis &#8212; ba chiar are un gust mai bun a doua zi, dupa ce aromele s-au asezat. Poti asambla empanadele si pastra netoate la frigider cateva ore, apoi sa le coci fix inainte de servire, ca sa fie calde si crocante cand sosesc invitatii. Empanadele deja coapte se tin la frigider 2-3 zile si se reincalzesc cel mai bine in cuptor cateva minute, ca sa isi recapete crocantul &#8212; la microunde aluatul se inmoaie. Se pot si congela, crude sau coapte, si se coc direct din congelator adaugand cateva minute in plus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac placintele in toate formele lor, arunca o privire si la <a href=\"https:\/\/gourmandelle.com\/ro\/placinte-de-post\/\">placintele de post<\/a> sau la varianta englezeasca dulce, <a href=\"https:\/\/gourmandelle.com\/ro\/placintele-cu-fructe-uscate-mince-pies\/\">placintelele cu fructe uscate (mince pies)<\/a>. Iar daca vrei o placinta mai consistenta, pentru masa de pranz, incearca <a href=\"https:\/\/gourmandelle.com\/ro\/pot-pie-cu-ciuperci-placinta\/\">pot pie cu ciuperci<\/a> &#8212; tot cu umplutura
