In varianta de fata, vegana, branza feta este inlocuita cu tofu afumat maruntit si caju, pentru o textura cremoasa si un gust bogat. Se rumeneste la cuptor pana devine crocanta si se serveste calda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Spanakopita se coace de obicei in tavi mari si are forma unui rulou lung, dar nu este neobisnuit sa o gasesti taiata in portii mai mici, individuale. Eu o fac in forma de spirala, fiindca asa fiecare bucata are si margini crocante, si miez cremos. Este o placinta cu gust autentic grecesc, foarte satioasa si delicioasa, asa ca o servesc fie ca garnitura, fie ca fel principal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se poate manca si calda, si la temperatura camerei, dar eu iti recomand cu siguranta sa o mananci atunci cand este proaspata si fierbinte, cand foile inca trosnesc la fiecare bucatura. Secretul aici este sa il scurgi foarte bine de excesul de lichid dupa ce se dezgheata si se caleste; daca ramane apos, foile de placinta se inmoaie si placinta nu mai iese crocanta. Il storc cu mainile sau il pun intr-o sita si il apas cu lingura pana nu mai lasa zeama.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> &#8212; 500 g tofu afumat maruntit este inlocuitorul perfect pentru branza feta. Afumatura ii da acel gust intens si sarat care altfel ar lipsi din varianta vegana. Cauta un tofu ferm sau extra-ferm; cel moale lasa prea multa apa. Il maruntesc cu mana, sa ramana bucatele neregulate, asa cum ar arata feta sfaramata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Caju crud<\/strong> &#8212; o jumatate de cana de caju crud tocat fin aduce cremozitate si o nota dulceaga care echilibreaza spanacul. Le toc foarte marunt sau le dau prin robot; daca raman bucati mari, se simt prea tare in umplutura fina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Foi de placinta (filo)<\/strong> &#8212; 15 foi de placinta dau structura crocanta. Foile filo se usuca foarte repede la aer, asa ca le tin acoperite cu un prosop curat usor umezit pana le folosesc. Lucreaza repede si unge fiecare strat cu unt, ca sa se faca acele foi fine si crocante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt vegan topit<\/strong> &#8212; 55 g unt vegan topit este ce leaga si rumeneste foile. Unge generos fiecare foaie; aici nu economisi, fiindca untul este cel care face diferenta intre o placinta crocanta si una uscata. Pentru varianta vegetariana poti folosi unt normal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa, usturoi si ceapa verde<\/strong> &#8212; o ceapa tocata fin si 6 catei de usturoi sunt baza aromata care se caleste in ulei de masline inainte de spanac. Cele 3 linguri de ceapa verde tocata se presara la final, dupa coacere, pentru prospetime si culoare. Dupa ce calesti spanacul, lasa-l intr-o sita si apasa-l bine; o umplutura uscata inseamna foi crocante.<\/li>\n<li><strong>Lasa compozitia sa se raceasca inainte sa o pui pe foi.<\/strong> Daca umplutura este fierbinte, aburul inmoaie foile de placinta si nu mai poti rula spirala curat. Eu o las pana ajunge la temperatura camerei.<\/li>\n<li><strong>Unge fiecare foaie cu unt, fara graba.<\/strong> Foile filo se usuca cat clipesti. Acopera teancul cu un prosop si lucreaza o foaie pe rand, ungand-o din margine in margine.<\/li>\n<li><strong>Aseaza umplutura in fasie subtire, de aproximativ 2 cm.<\/strong> Daca pui prea mult, sulul se crapa cand il rulezi si umplutura iese afara la copt.<\/li>\n<li><strong>Stii ca e gata cand foile sunt aurii si trosnesc.<\/strong> La aproximativ 40 de minute la 180 \u00b0C, suprafata trebuie sa fie rumena uniform. Vei obtine o umplutura mai cremoasa si mai apropiata de spanakopita clasica.<\/li>\n<li><strong>Ierburi proaspete:<\/strong> patrunjelul si mararul tocate merg foarte bine in umplutura si dau acea aroma greceasca tipica. Ca sa redevina crocanta, reincalzeste-o la cuptor la 180 \u00b0C cateva minute; microundele o vor inmuia, asa ca le evit. Poti pregati umplutura cu o zi inainte si o tii la rece, apoi rulezi placinta si o coci proaspata cand ai nevoie.
