De obicei imi place sa le mananc asa cum sunt, proaspete, sau sa fac un fresh de portocale perfect pentru micul-dejun, dar de-a lungul timpului am creat si alte deserturi pe baza de portocale. Recunosc ca nu sunt un mare fan al deserturilor coapte si prefer fructele proaspete in schimb, asa ca m-a surprins eu insami cat de mult am ajuns sa iubesc aceasta prajitura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta prajitura cu portocale cu specific grecesc a devenit, pe nesimtite, unul dintre deserturile mele preferate. Grecii o servesc uneori chiar la micul-dejun, ca sa-si inceapa ziua cu o doza bine-meritata de energie, dar eu o tin minte mai degraba ca pe un desert care imi reaminteste mereu de aromele exotice ale acelei tari. Cumpara-le cat mai proaspete si lasa-le sa se usuce la temperatura camerei timp de 40 de minute inainte de a le faramita, asa cum cere reteta. Pasul asta nu e optional: foile usor uscate se rup in bucati mici, neregulate, care absorb apoi siropul mult mai bine decat foile umede si elastice. Verifica eticheta &#8212; majoritatea foilor de placinta sunt vegane, dar unele marci contin unt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Portocalele<\/strong> &#8212; folosesti atat freshul, cat si coaja, asa ca alege portocale neceruite si spala-le bine. Eu le las la inmuiat intr-o solutie de apa cu otet sau cu bicarbonat de sodiu, ca sa indepartez ceara si reziduurile de pe coaja. Razuieste doar partea portocalie a cojii, nu si albul de dedesubt, care e amar. Pentru fresh, portocalele coapte si grele in mana dau cel mai mult suc si cea mai dulce aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurtul vegan<\/strong> &#8212; inlocuieste oul si lactatele din reteta clasica si aduce umezeala si o usoara aciditate care echilibreaza dulceata siropului. Alege un iaurt vegan mai gros, de tip grecesc (din soia sau cocos), nu unul apos &#8212; consistenta lui ajuta aluatul sa lege bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> &#8212; da fragezime blatului si o nota mediteraneeana subtila. Daca preferi o aroma neutra, poti folosi un ulei de masline mai bland sau un ulei vegetal usor, dar uleiul de masline e cel mai fidel originalului grecesc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidonul<\/strong> &#8212; ajuta aluatul cu iaurt sa se lege si sa ramana umed, fara sa fie crud. O singura lingura e suficienta; nu o sari, pentru ca da structura amestecului turnat peste foi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara si anasonul stelat<\/strong> &#8212; aromatizeaza siropul si fac diferenta dintre o prajitura banala si una cu adevarat parfumata. Foloseste un baton intreg de scortisoara si stelutele de anason, nu pudra &#8212; la fiert isi elibereaza uleiurile aromatice lent, fara sa lase reziduuri in sirop.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Respecta regula &#8220;sirop rece peste blat fierbinte&#8221;.<\/strong> Pregateste siropul primul, ca sa aiba timp sa se raceasca complet, si toarna-l peste prajitura imediat ce o scoti din cuptor. Contrastul de temperatura face siropul sa patrunda uniform; daca ambele sunt calde, prajitura iese lipicioasa, iar daca ambele sunt reci, siropul ramane la suprafata.<\/li>\n<li><strong>Usuca foile inainte de a le faramita.<\/strong> Cele 40 de minute de uscare la temperatura camerei nu sunt o pierdere de timp &#8212; foile usor uscate se sfarama in bucatele care prind aer si absorb siropul, dand textura aceea moale si insiropata, nu un blat compact.<\/li>\n<li><strong>Toarna siropul incet si uniform.<\/strong> Distribuie-l pe toata suprafata, cu lingura sau cu un polonic, ca sa nu se adune doar intr-un colt. E un desert ideal de pregatit din timp: fa-l cu o zi inainte de musafiri si lasa-l la rece peste noapte, asa scapi de orice stres de ultim moment. Serveste-l rece, cu o lingura de crema de cocos sau de inghetata de vanilie deasupra, asa cum cere reteta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac deserturile cu portocale, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/prajitura-budinca-de-portocale\/\">prajitura budinca de portocale<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/prajitura-de-migdale-cu-portocale\/\">prajitura de migdale cu portocale<\/a>.
