Nimic nu se compara cu o salata greceasca proaspata, de aceea recomand sa o faci vara, atunci cand toate legumele sunt in sezon si, deci, foarte aromate. O rosie coapta in iulie nu are nimic in comun cu una de ser\u0103 din ianuarie, iar in aceasta salata atat de simpla diferenta se simte in fiecare imbucatura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Grecii o servesc si ca fel principal, deoarece portiile sunt de obicei destul de mari, sau chiar ca o garnitura alaturi de ceva pe gratar sau orice alt fel principal. Eu o tin in aceeasi categorie: o salata care nu cere efort, dar care poate fi masa intreaga intr-o zi toropita de caldura. Cand le tai felii, vei elibera o parte din zeama lor dulce-acrisoara, iar aceasta se amesteca natural cu dressingul. Evita rosiile prea apoase sau necoapte, fiindca dilueaza salata si nu au aroma necesara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Castraveti<\/strong> &#8212; aduc prospetimea si croccantul care contrasteaza cu moliciunea rosiilor. Alege castraveti fermi, cu coaja lucioasa si fara zone moi. Daca au coaja groasa sau amaruie, poti sa-i cureti partial, lasand dungi de coaja pentru culoare si textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa rosie<\/strong> &#8212; felia subtire e cheia: taiata gros, ceapa rosie domina totul. Daca ti se pare prea iute, las-o cinci minute in putin suc de lamaie inainte de a o adauga, ca sa-si piarda din ascutime si sa devina usor crocanta si dulceaga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Masline negre sau Kalamata fara simburi<\/strong> &#8212; maslinele Kalamata sunt cele care dau acel gust autentic grecesc, untos si sarat. Cauta-le pe cele in saramura, nu in ulei aromatizat, ca sa pastrezi profilul curat al salatei. Daca le cumperi cu simburi, scoate-i inainte, fiindca nimeni nu vrea o surpriza neplacuta la muscatura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa verde<\/strong> &#8212; tocata marunt, adauga o nota proaspata, mai bland-aromata decat ceapa rosie. Foloseste atat partea alba, cat si pe cea verde, pentru culoare si un plus de prospetime.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu<\/strong> &#8212; este vedeta acestei variante de post, transformat in &#8220;feta&#8221;. Alege un tofu ferm sau extra-ferm, ca sa-si pastreze forma de cubulete dupa marinare. Inainte de a-l folosi, scurge-l bine si, daca ai timp, preseaza-l cateva minute intr-un prosop curat: cu cat scoate mai multa apa, cu atat absoarbe mai mult din marinada cu otet, lamaie si busuioc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> &#8212; intra in marinada pentru tofu si aduc acea nota usor &#8220;branzoasa&#8221;, umami, care apropie gustul de cel al branzei feta. Ii gasesti la magazinele naturiste sau la raionul vegan; cauta-i pe cei sub forma de fulgi galbeni, nu pulbere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otet de mere si suc de lamaie<\/strong> &#8212; impreuna dau aciditatea care imita saramura branzei feta si &#8220;trezeste&#8221; tofu-ul fad. Foloseste lamaie proaspat stoarsa pentru o aroma mai vie decat sucul la sticla.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline si oregano uscat<\/strong> &#8212; duo-ul clasic care leaga totul. Un ulei de masline extravirgin bun face diferenta intr-o reteta atat de simpla, iar oregano-ul uscat, presarat la final, este aroma care striga &#8220;grecesc&#8221;.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Lasa tofu-ul la marinat suficient<\/strong> &#8212; minimum doua ore, conform retetei, iar peste noapte e si mai bine. Tofu-ul abia scos din pachet are gust neutru; marinada cu otet, lamaie, busuioc si fulgi de drojdie are nevoie de timp ca sa patrunda in cubulete. Vei sti ca e gata cand cubuletele s-au inmuiat usor si au capatat gust pana in miez.<\/li>\n<li><strong>Preseaza tofu-ul inainte de marinare<\/strong> &#8212; greseala cea mai frecventa este sa marinezi tofu plin de apa, care apoi respinge aroma. Pastreaza tofu marinat la frigider, intr-un recipient inchis, si combina-l cu legumele proaspat taiate abia inainte de servire, ca salata sa ramana crocanta si sa nu lase prea multa zeama. Daca iti raman resturi, tine-le la frigider si consuma-le in aceeasi zi sau a doua zi, stiind ca rosiile si castravetii se vor inmuia treptat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti place sa servesti salata greceasca alaturi de alte preparate de sezon, incearca <a href=\"https:\/\/gourmandelle.com\/ro\/salata-de-rosii-coapte-cu-tofu-afumat\/\">salata de rosii coapte cu tofu afumat<\/a> sau o <a href=\"https:\/\/gourmandelle.com\/ro\/salata-de-vara-cu-rosii-cherry-coapte\/\">salata de vara cu rosii cherry coapte<\/a> pentru o masa usoara de vara.
