Eu am ales sa fierb orezul intr-o supa de legume, nu doar in apa, pentru a-i imbogati paleta de gusturi &#8212; e o diferenta pe care o simti imediat la prima lingura. Orezul nu mai e doar un suport neutru, ci absoarbe aroma legumelor si a verdeturilor, iar rezultatul e cremos, parfumat si reconfortant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place ca este o reteta care nu cere ingrediente scumpe sau greu de gasit. Spanac, ceapa verde, usturoi, marar, menta si orez &#8212; atat. La final, asa cum se face in Grecia, adaug intotdeauna inca putin ulei de masline stropit pe deasupra, chiar inainte de servire. Nu trebuie sa il dezghet inainte, dar daca lasa multa apa, scurge surplusul ca sa nu dilueze prea mult preparatul. Daca preferi spanac proaspat, vei avea nevoie de o cantitate mai mare, pentru ca scade considerabil la gatit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline<\/strong> &#8212; in bucataria greceasca uleiul de masline nu e doar pentru gatit, ci si pentru aroma finala. Eu folosesc un ulei extravirgin de calitate si pastrez putin pentru a-l stropi pe deasupra chiar inainte de servire. Cauta un ulei cu aroma intensa, fructata, pentru ca aici se simte clar in farfurie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orez pentru risotto<\/strong> &#8212; orezul pentru risotto (de tip Arborio sau Carnaroli) este ales pentru ca elibereaza amidon in timpul fierberii si da preparatului acea textura cremoasa, fara sa fie nevoie de smantana sau lactate. Nu il clati inainte, pentru ca tocmai acel amidon de la suprafata creeaza cremozitatea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Marar si menta proaspete<\/strong> &#8212; aceste doua verdeturi dau identitatea preparatului. Mararul aduce o nota usor anasonata, iar menta o prospetime racoroasa. Adauga-le tocate marunt si pe cat posibil proaspete, pentru ca uscate isi pierd mult din aroma vie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vin alb<\/strong> &#8212; jumatate de cana de vin alb sec se adauga inainte de lichidul de fierbere si se lasa sa se evapore. Alcoolul dispare la gatit, dar ramane o aroma fina, usor acida, care echilibreaza grasimea uleiului de masline. Alege un vin alb sec, nu dulce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Suc de lamaie<\/strong> &#8212; lamaia este semnatura preparatului grecesc. Cele 3 linguri de suc adaugate in timpul fierberii, plus feliile de lamaie pentru servire, dau acea aciditate vie care ridica tot felul de mancare. Foloseste lamaie proaspat stoarsa, nu suc imbuteliat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Supa de legume<\/strong> &#8212; eu am ales sa fierb orezul intr-o supa de legume pentru a-i imbogati paleta de gusturi. O cana de supa de legume alaturi de apa face orezul mult mai aromat decat daca ar fierbe doar in apa simpla.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Amesteca des in timpul fierberii.<\/strong> Orezul pentru risotto se lipeste usor de fundul vasului, asa ca amesteca la fiecare 3 minute si adauga mai mult lichid daca este necesar. Asa eviti sa se arda pe fund si obtii o textura uniforma.<\/li>\n\n\n\n<li><strong>Lasa vinul sa se evapore complet.<\/strong> Adauga vinul si asteapta sa nu mai simti mirosul intepator de alcool inainte de a turna apa si supa. Daca grabesti pasul acesta, preparatul ramane cu o aroma de alcool crud.<\/li>\n\n\n\n<li><strong>Calugareste usturoiul si ceapa la foc mediu.<\/strong> Dupa ce incingi tigaia la foc mare, micsoreaza flacara pe mediu cand adaugi usturoiul, ca sa nu se arda si sa devina amar. Stii ca e gata cand devine parfumat si translucid, nu maro.<\/li>\n\n\n\n<li><strong>Verifica textura la final.<\/strong> Orezul e gata cand bobul e fiert, dar inca usor al dente la mijloc, iar preparatul e cremos, nu uscat. Daca s-a uscat prea tare, mai adauga putina apa fierbinte.<\/li>\n\n\n\n<li><strong>Pastreaza uleiul de masline pentru final.<\/strong> Opreste focul si adauga putin ulei de masline crud, asa cum se face traditional. Adauga-l la final, dupa ce ceapa si usturoiul s-au calit.<\/li>\n\n\n\n<li><strong>Fara vin.<\/strong> Daca nu vrei sa folosesti vin alb, il poti inlocui cu mai multa supa de legume si putin suc de lamaie in plus, pentru a pastra nota acida.<\/li>\n\n\n\n<li><strong>Cu alt tip de orez.<\/strong> Daca nu ai orez pentru risotto, poti folosi un orez cu bob rotund, care elibereaza si el amidon. Ajusteaza cantitatea de lichid si timpul de fierbere dupa tipul de orez.<\/li>\n\n\n\n<li><strong>Ierburi dupa gust.<\/strong> Pe langa marar si menta, poti adauga patrunjel proaspat tocat pentru o aroma in plus, daca iti place.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Spanakorizo se pastreaza foarte bine la frigider, intr-un recipient inchis, timp de 3-4 zile. La incalzire, orezul tinde sa se ingroase, asa ca adauga putina apa sau supa de legume si amesteca pana redevine cremos. Este o reteta excelenta de gatit in avans, pentru ca aromele se asaza si devin chiar mai bune a doua zi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Spanakorizo este servit de obicei ca fel principal, la pranz sau cina, dar il poti consuma si ca garnitura, impreuna cu chiftelute vegetale sau orice alt fel de mancare preferi.
