Se pregateste in aproximativ 40 de minute si e perfect de luat la pachet la scoala sau la birou.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sunt sigura ca sunteti deja familiarizati cu unul dintre cele mai faimoase preparate grecesti &#8212; <strong>gyros<\/strong>. Reteta traditionala contine carne rumenita pe rotisor, de obicei pui, miel sau porc, invelita in lipie impreuna cu ceapa, castraveti, rosii si, desigur, sos tzatziki. Dar deoarece nu toti suntem fani ai mancarurilor fast food de obicei nesanatoase, am vrut sa va arat cum sa preparati varianta vegana, de post, care este mult mai sanatoasa, dar si plina de arome autentice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In varianta mea vegana de saorma am folosit ciuperci marinate, care au fost foarte bune si aromate, dar pentru reteta greceasca am vrut sa incerc ceva diferit, la fel de gustos. Asa am ajuns la tofu afumat: cand il las la marinat peste noapte si il prajesc pana se rumeneste pe margini, capata exact acea adancime de aroma care imi aminteste de gyrosul clasic. pastreaza condimentele specifice gyrosului (boia afumata, coriandru, chimion, scortisoara), fara carnea grasa.<\/li>\n<li><strong>Tofu-ul afumat face toata diferenta<\/strong> &#8212; marinada de sos de soia si pasta de rosii ii da o crusta savuroasa care imita gyrosul clasic.<\/li>\n<li><strong>Tzatziki-ul vegan e cremos si racoritor<\/strong> &#8212; din iaurt de soia, castravete ras, usturoi, menta si lamaie, echilibreaza perfect condimentele calde.<\/li>\n<li><strong>Se asambleaza rapid<\/strong> &#8212; odata ce tofu e marinat, totul se pune cap la cap in cateva minute.<\/li>\n<li><strong>E flexibila<\/strong> &#8212; e vedeta retetei si motivul pentru care wrapul capata gust de gyros. Cauta tofu ferm sau extra-ferm afumat, nu silken, pentru ca trebuie sa-l feliezi subtire si sa se tina la prajit. Daca gasesti doar tofu ferm neafumat, compenseaza cu putin plus de boia afumata in marinada. Inainte de a-l felia, e bine sa-l tamponezi cu un servet de bucatarie ca sa scoti excesul de apa &#8212; cu cat e mai uscat, cu atat absoarbe mai bine marinada si se rumeneste mai frumos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurt de soia neindulcit<\/strong> &#8212; baza pentru tzatziki. Foloseste obligatoriu varianta neindulcita, altfel sosul iese dulceag si nu se potriveste cu usturoiul si menta. Cauta un iaurt de soia gros; daca e prea lichid, il poti strecura cateva ore printr-un tifon ca sa iasa un tzatziki mai dens, asa cum este cel grecesc traditional. Pentru o varianta vegetariana, il poti inlocui cu iaurt grecesc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sos de soia<\/strong> &#8212; da sarea si umami marinadei de tofu. Pentru ca aduce deja multa sare, ai grija cu sarea adaugata in restul preparatului. Daca tii cont de gluten, alege tamari fara gluten.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia afumata<\/strong> &#8212; ingredientul cheie care recreeaza senzatia de &#8220;afumat la gratar&#8221; a gyrosului clasic. Cantitatea e mica, dar aroma e puternica, asa ca nu o sari. E diferita de boia dulce obisnuita, deci merita sa o ai in camara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de rosii<\/strong> &#8212; ingrosa marinada si ajuta tofu-ul sa capete o crusta apetisanta cand se prajeste. Folosirea pastei concentrate, nu a sucului de rosii, e importanta, ca sa nu iasa marinada prea apoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Castravete Fabio<\/strong> &#8212; il folosesc atat ras, in tzatziki, cat si feliat, in wrap. Soiul Fabio are coaja subtire si putine seminte, deci nu lasa multa apa. Pentru tzatziki, e bine sa storci castravetele ras intr-un tifon inainte sa-l amesteci cu iaurtul, ca sosul sa nu se subtieze.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Menta proaspata si oregano uscat<\/strong> &#8212; duoul de ierburi care da tzatziki-ului prospetimea caracteristica. Menta proaspata are alt impact decat cea uscata, asa ca merita cautata. Tocaza-o marunt chiar inainte de folosire, ca sa pastreze aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lipiile<\/strong> &#8212; alege lipii mari si flexibile, ca sa poti rula umplutura fara sa crape. Feliile subtiri absorb marinada mai bine decat cuburile groase.<\/li>\n<li><strong>Nu aglomera tigaia.<\/strong> Prajeste feliile de tofu intr-un singur strat, la foc mediu, aproximativ 7 minute, intorcandu-le ocazional. Daca le ingramadesti, fierb in loc sa se rumeneasca si pierzi crusta. Stii ca e gata cand marginile sunt aurii si usor crocante.<\/li>\n<li><strong>Stoarce castravetele pentru tzatziki.<\/strong> Greseala clasica e un tzatziki apos. Da castravetele pe razatoarea mica, apoi storce-l bine intr-un tifon inainte sa-l amesteci cu iaurtul. Asa sosul ramane gros si cremos.<\/li>\n<li><strong>Condimenteaza tzatziki dupa gust.<\/strong> Lasa-l cateva minute la frigider dupa ce l-ai amestecat &#8212; aromele se asaza si se intensifica. Tofu-ul poate sta la marinat in frigider pana la o zi, iar tzatziki-ul se pastreaza bine 2-3 zile intr-un recipient inchis. Iti recomand sa tii componentele separate &#8212; tofu prajit, tzatziki, legume feliate si lipii &#8212; si sa asamblezi gyrosul abia inainte de a-l manca, ca lipia sa nu se inmoaie. Daca il iei la pachet, ruleaza-l strans in folie sau hartie de copt; se mananca foarte bine si rece.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut acest wrap grecesc, incearca si varianta sora din Orientul Mijlociu, <a href=\"https:\/\/gourmandelle.com\/ro\/saorma-vegana\/\">saorma vegana<\/a>.
