Imi place cum se transforma complet la coacere: dintr-o leguma fada si spongioasa cruda, devin cremoase, dulci si afumate, cu un gust care sustine singur o placinta intreaga. Cand am dat prima oara peste Melitzanopita, mi s-a parut imediat reteta perfecta ca sa le pun in valoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu am folosit tofu afumat pentru aceasta versiune vegana, iar rezultatul final este atat de gustos incat sunt sigura ca veti dori sa repetati experienta. Tofu afumat preia rolul branzei traditionale anthotyros sau feta din reteta originala, dar aduce in plus o nota afumata care se leaga frumos cu vinetele coapte. O vanata proaspata are codita verde si neuscata. Le coc intregi la cuptor, nu le prajesc: caldura uscata concentreaza zaharurile si elimina apa, asa ca obtii un gust dulce-afumat si o textura cremoasa, fara excesul de ulei pe care il absorb cand le prajesti in tigaie. Stii ca sunt gata cand se inmoaie complet si coaja se desprinde usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> inlocuieste aici branza traditionala. Cauta unul ferm si bine afumat, nu varianta silken (moale), pentru ca trebuie sa se faramiteze si sa-si pastreze structura in umplutura. Il faramitez cu mana ca sa imite textura branzei feta sfaramate. Daca tofu pe care il gasesti e foarte umed, preseaza-l 10-15 minute intre doua prosoape inainte sa-l folosesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Texturatul de soia granule<\/strong> aduce volum si o textura asemanatoare cu cea a carnii tocate, fara sa fie deloc dominant la gust. Secretul e sa-l hidratezi bine in apa clocotita, apoi sa-l scurgi temeinic intr-o sita: daca ramane prea multa apa, umplutura va fi apoasa si va inmuia foile filo de dedesubt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Foile filo<\/strong> sunt cele care dau placintei crocanta caracteristica. Cumpara-le din comert, dezgheata-le complet inainte de folosire si tine-le acoperite cu un prosop usor umed cat lucrezi, pentru ca se usuca si crapa in cateva minute la aer. Fiecare foaie se unge individual cu ulei de masline: aici se naste stratificarea crocanta, asa ca nu sari peste acest pas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeii capia<\/strong> si <strong>ceapa<\/strong> calita aduc dulceata si profunzime. Caleste ceapa pana devine translucida, nu rumenita: vrei sa-si elibereze dulceata, nu sa capete gust de prajit. Ardeiul capia, mai dulce si mai carnos decat ardeiul gras obisnuit, completeaza profilul mediteraneean al umpluturii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Maslinele<\/strong>, <strong>oregano<\/strong>, <strong>menta uscata<\/strong> si <strong>fulgii de ardei iute<\/strong> sunt cele care duc placinta din &#8220;buna&#8221; in &#8220;autentic greceasca&#8221;. Menta uscata in special e ingredientul pe care multi il sar, dar ea face diferenta: da o prospetime caracteristica retetelor grecesti cu vinete. Maslinele aduc o nota sarata si umami care echilibreaza dulceata vinetelor.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Scurge bine vinetele si soia.<\/strong> Cea mai frecventa greseala la aceasta placinta este umplutura prea apoasa, care inmoaie foile filo de la baza. Dupa ce cureti vinetele coapte, lasa-le cateva minute intr-o sita sa se scurga, iar texturatul de soia stoarce-l bine cu mana inainte sa-l adaugi.<\/li>\n<li><strong>Unge fiecare foaie filo, individual.<\/strong> E tentant sa ungi doar foaia de deasupra ca sa mergi mai repede, dar uleiul intre straturi este exact ce le face sa se desprinda crocante la coacere. Foloseste o pensula de bucatarie si un strat subtire, uniform.<\/li>\n<li><strong>Stropeste cu apa stratul superior.<\/strong> Cele aproximativ 1\/4 cana de apa presarata peste foile de deasupra impreuna cu semintele de susan ajuta crusta sa se rumeneasca uniform si previne arderea marginilor inainte ca interiorul sa fie gata.<\/li>\n<li><strong>Lasa placinta sa se aseze.<\/strong> Dupa ce o scoti din cuptor, asteapta 10-15 minute inainte sa o portionezi. Asa te apropii de reteta greceasca traditionala, in care placinta se face cu feta sau cu branza anthotyros.<\/li>\n<li><strong>Fara texturat de soia:<\/strong> daca preferi o umplutura doar din legume, poti renunta la el si sa cresti putin cantitatea de vinete si tofu. Placinta va fi mai usoara, dar tot consistenta.<\/li>\n<li><strong>Alte verdeturi:<\/strong> langa patrunjel poti adauga marar sau busuioc proaspat tocat, pentru un alt accent de prospetime in umplutura.<\/li>\n<li><strong>Mai picanta sau mai blanda:<\/strong> ajusteaza fulgii de ardei iute dupa gust, sau scoate-i complet daca o servesti copiilor.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Placinta cu vinete se pastreaza la frigider, intr-un recipient inchis, pana la 3 zile. Pentru a-i readuce crocanta, reincalzeste feliile in cuptor sau in air fryer cateva minute, nu la microunde, care le-ar inmuia foile filo. Se mananca foarte bine si rece, asa ca e perfecta pentru pachetul de pranz a doua zi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Poti pregati umplutura cu o zi inainte si sa o tii la frigider, ca apoi sa asamblezi si sa coci placinta cand ai nevoie. Daca vrei sa o congelezi, e mai bine sa o faci dupa coacere si racire completa: se pastreaza pana la o luna, iar la reincalzire in cuptor isi recapata aproape integral textura. Serveste-o cu verdeata proaspata tocata si\/sau iaurt vegan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac vinetele la fel de mult ca mie, arunca o privire si peste <a href=\"https:\/\/gourmandelle.com\/ro\/burger-de-vinete\/\">burgerul de vinete<\/a> sau peste <a href=\"https:\/\/gourmandelle.com\/ro\/crema-de-vinete-coapte-mousse\/\">crema de vinete coapte<\/a>. Iar daca te-a cucerit bucataria greceasca, incearca neaparat si <a href=\"https:\/\/gourmandelle.com\/ro\/spanakopita-placinta-cu-spanac\/\">spanakopita, placinta cu spanac<\/a>.<\/p>\n\n\n<div
