Versiunea aceasta este complet vegana: in loc de carne de miel folosim un ragu bogat de linte rosie, iar sosul Bechamel clasic il transformam intr-o crema matasoasa pe baza de lapte vegetal si tofu silken. Rezulta o mancare satioasa, plina de arome calde de scortisoara si nucsoara, perfecta cand vrei ceva consistent si reconfortant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pastitsio este o reteta traditionala greceasca foarte cunoscuta, pe care o intalnesti pe tot intinsul Greciei. Este cunoscuta si sub numele de &#8220;lasagna greceasca&#8221;, deoarece seamana foarte mult cu <a href=\"https:\/\/gourmandelle.com\/ro\/lasagna-vegetariana-cu-ciuperci\/\">lasagna italieneasca<\/a>, principala diferenta fiind forma pastelor folosite. In varianta autentica, stratul de baza este format din paste cilindrice, pe care grecii le amesteca de obicei cu branza feta pentru a oferi un gust si mai delicios intregului preparat. Desi trebuie sa petreceti putin mai mult timp in bucatarie, veti obtine o cantitate mare de mancare, numai buna de impartit cu familia sau de pus deoparte pentru zilele urmatoare.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele care fac diferenta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta are trei componente, asa ca merita sa intelegi rolul fiecarui ingredient inainte sa te apuci de gatit:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Lintea rosie<\/strong> inlocuieste carnea de miel din varianta clasica. Se gateste repede, se inmoaie complet si absoarbe lichidele, capatand o textura densa si satioasa, perfecta pentru un ragu.<\/li><li><strong>Rosiile, sucul si pasta de rosii<\/strong> dau baza ragului. Pasta de rosii in special aduce o aroma concentrata si o culoare frumoasa.<\/li><li><strong>Vinul rosu<\/strong> adanceste gustul ragului si echilibreaza aciditatea rosiilor. Daca preferi fara alcool, il poti omite si compensa cu putin suc de rosii in plus.<\/li><li><strong>Scortisoara, nucsoara, chimenul si boiaua afumata<\/strong> sunt mirodeniile care dau notele tipic grecesti. Scortisoara si nucsoara intr-un ragu pot parea neobisnuite, dar exact ele fac pastitsio sa aiba acel gust autentic.<\/li><li><strong>Untul vegan, faina si laptele vegetal<\/strong> formeaza sosul Bechamel. Pastele se asaza pe fundul formei si se acopera cu jumatatea de sos Bechamel simplu, fara tofu. Urmeaza stratul de ragu de linte, iar deasupra vine sosul cu tofu, care se rumeneste la cuptor si formeaza crusta aurie de la suprafata. Asa fiecare lingura prinde toate texturile: paste, ragu si crema.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imparte sosul Bechamel in doua parti egale chiar de la inceput. Doar jumatate se mixeaza cu tofu silken in robotul de bucatarie pana devine perfect omogen. Cealalta jumatate ramane asa cum este si se foloseste ca strat intre paste si ragu.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De ce functioneaza metoda<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Fierberea pastelor doar pana la stadiul al dente este importanta pentru ca ele se mai gatesc inca o data la cuptor; daca le fierbi complet de la inceput, riscul este sa se inmoaie prea tare. Tofu silken mixat in sos functioneaza pentru ca are o textura cremoasa si un continut mare de apa, asa ca leaga sosul si ii da corp fara sa ii schimbe gustul, imitand densitatea pe care o avea oul din Bechamelul clasic. Iar gatirea lintei pana absoarbe lichidele inainte de coacere asigura ca ragul ramane dens si nu lasa apa in caserola.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi ca sa-ti iasa perfect<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Gateste sosul Bechamel la foc mic si amesteca insistent cu telul dupa ce adaugi faina, ca sa nu se faca cocoloase.<\/li><li>Adauga laptele vegetal treptat, nu tot deodata, ca sosul sa se omogenizeze frumos.<\/li><li>Lasa ragul de linte sa scada bine inainte sa il asezi in forma; un ragu prea apos face caserola sa nu se taie frumos in portii.<\/li><li>Coace la 200\u00b0C in jur de 35 de minute, dar fii atenta la culoare: scoate caserola cand suprafata e bine rumenita.<\/li><li>Lasa pastitsio sa se odihneasca 10-15 minute dupa ce il scoti din cuptor. O salata verde simpla sau ceva acrisor merge de minune langa o portie consistenta. Daca vrei sa pui pe masa o garnitura calda, se potrivesc <a href=\"https:\/\/gourmandelle.com\/ro\/ceapa-verde-rumenita-la-cuptor-zaatar-masline\/\">ceapa verde rumenita la cuptor cu zaatar si masline<\/a> sau niste <a href=\"https:\/\/gourmandelle.com\/ro\/cartofi-noi-la-cuptor-legume-de-primavara\/\">cartofi noi la cuptor cu legume de primavara<\/a>, ambele cu accente mediteraneene care merg in tema.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pastrare si pregatire din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pastitsio este perfect pentru gatit in avans, exact pentru ca obtii o cantitate mare dintr-o singura coacere. Se pastreaza la frigider, in recipient acoperit, 3-4 zile, iar a doua zi straturile sunt si mai bine asezate. Il poti reincalzi la cuptor, acoperit cu folie ca sa nu se usuce, sau portie cu portie. Poti asambla caserola si o tii la frigider necoapta, urmand sa o bagi la cuptor inainte de masa, sau o coci complet si o pastrezi 3-4 zile la frigider intr-un recipient acoperit.
