Sosul se amesteca cu macaroane fierte al dente si se serveste cald, presarat cu ceapa verde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mac and cheese a fost mereu felul de mancare preferat al copiilor din America, iar pentru mine provocarea a fost sa pastrez exact acea cremozitate si gustul acela bogat de branza, dar fara niciun strop de lactate. Secretul nu sta intr-o branza vegana cumparata, ci intr-un sos construit de la zero din legume fierte si caju, care iese atat de catifelat incat nimeni nu ghiceste ca e de post.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Folosesc dintotdeauna paste micute, cu forma cilindrica sau de scoica, pentru ca ele retin tot sosul in interior si in fiecare imbucatura prinzi branza, nu doar paste goale. caju hidratat plus cartoful si morcovul fierte se blendeaza intr-o textura matasoasa care imita perfect un sos de branza clasic.<\/li>\n<li><strong>Gust autentic de branza, fara branza<\/strong> &#8212; drojdia inactiva aduce acea nota umami, usor de cascaval, iar mustarul si zeama de lamaie dau aciditatea care lipseste de obicei sosurilor vegane.<\/li>\n<li><strong>Fara lactate si fara colesterol<\/strong> &#8212; toata cremozitatea vine din legume, caju si lapte de cocos, asa ca e usor de digerat si potrivit pentru post.<\/li>\n<li><strong>Se face dintr-o singura blenduire<\/strong> &#8212; toate ingredientele sosului merg impreuna in blender, deci nu ai de spalat zeci de vase.<\/li>\n<li><strong>Adaptabila la gustul tau<\/strong> &#8212; e baza cremozitatii, asa ca alege caju crud (nu prajit si nu sarat), pentru ca cel prajit aduce un gust care nu se potriveste cu sosul. Hidratarea peste noapte e cheia: bobul se inmoaie complet si se blendeaza intr-o crema fina, fara granule. Daca ai uitat sa il pui la inmuiat, toarna apa fierbinte peste el si lasa-l 15-20 de minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartoful si morcovul<\/strong> &#8212; ele dau corp si culoare sosului. Cartoful aduce acea textura densa, aproape de branza topita, iar morcovul da nuanta aurie care face sosul sa arate ca un mac and cheese clasic. Taie-le cubulete mici, ca sa fiarba uniform si repede.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele de cocos<\/strong> &#8212; foloseste laptele de cocos gras (din conserva), nu bautura subtire de cocos de la cutie, pentru ca grasimea lui da bogatie sosului. Nota de cocos dispare complet sub mustar, drojdie si condimente, asa ca nu te ingrijora ca va avea gust de cocos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> &#8212; acesta e ingredientul care face magia. Drojdia inactiva (nutritional yeast) are un gust natural umami, usor branzos si de nuca, si e ceea ce transforma o crema de legume intr-un sos care chiar aduce a branza. Cumpara fulgi, nu praf, si verifica sa fie drojdie inactiva, nu drojdie de panificatie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de tapioca<\/strong> &#8212; e ingredientul-surpriza care da sosului acea elasticitate usor filanta, ca branza topita. Cand sosul fierbe pe foc, tapioca se activeaza si leaga totul, dand acea textura intinsa pe care o cunosti de la cascavalul topit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele (mustar, zeama de lamaie, boia afumata, cayenne, usturoi, nucsoara, ienibahar)<\/strong> &#8212; aici se construieste profilul de gust. Mustarul si lamaia dau aciditatea care echilibreaza grasimea, boia afumata si cayenne aduc adancime si o urma de picant, iar nucsoara si usturoiul dau acea caldura clasica de sos branzos. Adauga-le treptat si gusta pe parcurs.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Pastreaza apa de la fierberea pastelor.<\/strong> Aceasta e cea mai importanta greseala de evitat &#8212; nu o arunca. Apa cu amidon de la paste e cel mai bun lichid pentru a subtia sosul daca iese prea dens, pentru ca il leaga si il face mai matasos in loc sa il dilueze fad.<\/li>\n<li><strong>Fierbe pastele doar al dente.<\/strong> Ele continua sa se inmoaie putin cand le amesteci cu sosul cald, asa ca daca le fierbi pana sunt moi de la inceput, vor deveni cleioase in farfurie.<\/li>\n<li><strong>Blendeaza sosul pana e perfect fin.<\/strong> Treci degetul printr-o picatura de sos: daca simti granule de caju, mai lasa blenderul sa lucreze. Cremozitatea finala depinde direct de cat de neted ai blendat compozitia.<\/li>\n<li><strong>Amesteca continuu cand fierbi sosul.<\/strong> Pe foc mediu, sosul se ingroasa rapid din cauza cartofului si a tapiocii si se poate prinde de fund. Sosul e oricum natural fara gluten.<\/li>\n<li><strong>Mac and cheese la cuptor<\/strong> &#8212; de obicei tava cu macaroane se acopera cu un strat generos de pesmet pentru a obtine o crusta delicioasa dupa coacere. Toarna compozitia intr-o tava, presara pesmet deasupra si da la cuptor pana se rumeneste.<\/li>\n<li><strong>Fara caju<\/strong> &#8212; daca ai alergie sau vrei o varianta mai usoara, inlocuieste cajul cu seminte de floarea-soarelui decojite, tot hidratate. Vei obtine un sos putin mai rustic la culoare, dar la fel de cremos.<\/li>\n<li><strong>Mai picant sau mai afumat<\/strong> &#8212; mareste cantitatea de cayenne pentru picant sau de boia afumata pentru o nota intensa, de gratar. Eu reglez astea in functie de cine e la masa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul de branza vegan se poate prepara in avans si pastra la frigider, intr-un recipient inchis, 3-4 zile. Cand il reincalzesti, adauga putina apa de la paste sau apa simpla, pentru ca se ingroasa la rece, si amesteca pe foc mic pana redevine cremos. Iti recomand sa amesteci sosul cu pastele abia inainte de servire, ca sa nu se usuce.
