Sunt sigura ca il stiti cu totii, burgerul acela faimos pe care il gasesti in orice McDonald&#8217;s si pe care probabil l-ati incercat de cateva ori. Ideea din spatele acestei retete a fost sa pastrez exact ce iubeste lumea la el, sosul acela usor dulce-acrisor si straturile generoase, dar sa inlocuiesc carnea cu o chiftea vegetala care sa nu se faramiteze in mana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Faimosul hamburger Big Mac a fost creat in Statele Unite ale Americii in anul 1967, in Pittsburgh, Pennsylvania, de catre Jim Delligatti, in prima sa franciza McDonald&#8217;s. De atunci a devenit un adevarat simbol al fast food-ului. Eu folosesc fasole din conserva pentru rapiditate, dar scurge-o bine si clateste-o sub jet de apa ca sa scapi de lichidul de conservare care altfel inmoaie compozitia. Paseaz-o pana devine piure, dar lasa cateva bucati intregi, ele dau textura si fac chifteaua sa para mai &#8220;carnoasa&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de ovaz si taratele de ovaz<\/strong> au rolul de liant si de a absorbi umezeala din fasole si din legumele gatite. Proceseaza fulgii doar scurt, in cateva impulsuri, ca sa ramana putina textura. Daca maruntesti totul prea fin, chifteaua iese densa si gumoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> sunt secretul care tine totul legat fara ou. Psyllium-ul absoarbe apa si formeaza un gel care leaga compozitia, exact ca un ou intr-o chiftea clasica. De aceea pasul de odihna de 10 minute nu e optional, atunci se activeaza si compozitia devine modelabila.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Maioneza vegana<\/strong> este inima sosului. Cauta una densa si cremoasa, nu apoasa, pentru ca ea da corp sosului. Daca preferi, o poti face si in casa, dar una buna din comert simplifica mult treaba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Castravetii murati<\/strong> aduc aciditatea si crocanta care taie din bogatia sosului. Ii folosesti in doua locuri: tocati fin in sos si feliati intre straturi. Alege castraveti murati in otet, fermi, nu moi, pentru ca cei moi se pierd in burger.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza Cheddar<\/strong> adauga acel strat cremos care se inmoaie peste chifteaua calda. In varianta de post folosesti Cheddar vegan; daca nu tii post, merge si cea normala. Pune-o direct peste chifteaua fierbinte ca sa inceapa sa se topeasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Siropul de artar<\/strong> din sos este detaliul care echilibreaza aciditatea otetului si a castravetilor murati. O lingura e suficienta, doar atat cat sa rotunjeasca gustul, fara sa faca sosul dulce.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Nu sari peste odihna de 10 minute.<\/strong> Este pasul la care psyllium-ul si ovazul absorb lichidul, iar compozitia trece de la lipicioasa la modelabila. Daca formezi chiftelele imediat, se vor lipi de maini si se vor desface in tigaie.<\/li>\n<li><strong>Gateste ceapa, usturoiul si morcovul pana ceapa devine translucida.<\/strong> Asta scoate apa din legume si concentreaza aromele. O ceapa cruda lasata in compozitie inmoaie chifteaua si da gust intepator.<\/li>\n<li><strong>Prajeste chiftelele pe portii, nu inghesuite.<\/strong> Daca aglomerezi tigaia, temperatura scade, chiftelele fierb in loc sa se rumeneasca si nu prind crusta. Lasa-le cele 4 minute pe fiecare parte fara sa le misti, ca sa se formeze o coaja aurie.<\/li>\n<li><strong>Prajeste usor si feliile de chifla.<\/strong> O chifla rumenita la tigaie nu se imbiba in sos si pastreaza burgerul ferm pana la ultima muscatura. Vezi si <a href=\"https:\/\/gourmandelle.com\/ro\/burger-vegetal-cu-fasole-adzuki\/\">burgerul vegetal cu fasole adzuki<\/a> daca vrei sa explorezi o baza diferita.<\/li>\n<li><strong>Varianta cu linte.<\/strong> Pentru o textura mai fina si un gust mai dulceag, poti inlocui o parte din fasole cu linte gatita, asa cum fac in <a href=\"https:\/\/gourmandelle.com\/ro\/burger-vegetarian-cu-linte-cartof-dulce\/\">burgerul cu linte si cartof dulce<\/a>.<\/li>\n<li><strong>Cu sau fara branza.<\/strong> Daca tii post strict, foloseste Cheddar vegan; daca nu, merge si branza normala. Burgerul ramane bun si complet fara branza, daca preferi.<\/li>\n<li><strong>Mai iute sau mai bland.<\/strong> Creste fulgii de ardei iute si boia pentru o versiune picanta sau redu-i la minim pentru copii.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Chiftelele se pastreaza foarte bine. Le poti forma cu o zi inainte si tine la frigider, neprajite, acoperite, sau le prajesti si le pastrezi gatite 3-4 zile la frigider, intr-un recipient inchis. Se reincalzesc cel mai bine in tigaie, ca sa-si recapete crusta. Pentru perioade mai lungi, asaza chiftelele crude pe o tava, congeleaza-le separat, apoi muta-le intr-o punga; se prajesc direct din congelator, doar adauga un minut-doua la timpul de gatire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul se pastreaza intr-un borcan inchis la frigider pana la o saptamana si chiar castiga in gust dupa o zi, cand aromele se intrepatrund. Pastreaza componentele separat si asambleaza burgerul abia inainte de servire, ca chifla sa nu se inmoaie.
