Se coace la cuptor in forma de paine si iese cu o textura frageda, dar care se feliaza frumos, perfecta pentru o masa fara carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Drobul se serveste de obicei cu sosuri precum cel de ceapa, sos barbecue sau ketchup, asa ca am construit reteta in jurul acelorasi arome care imi plac la varianta originala. Pentru reteta mea am folosit un amestec de naut, ardei gras si inlocuitor de ou din seminte de in, drojdie inactiva si multe alte ingrediente sanatoase, ca sa obtin un preparat extrem de asemanator cu cel original in ce priveste gustul si textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce imi place cel mai mult la el este ca nu ai nevoie de niciun ingredient exotic. Totul se face intr-un robot de bucatarie, in cateva minute de pulsat, iar restul muncii o face cuptorul. Scurge-l bine si clateste-l sub jet de apa rece, ca sa scapi de zeama amidonoasa care altfel face amestecul lipicios. Cauta boabe ferme, intregi, nu sfaramate; nautul prea moale se transforma in pasta inainte sa apuci sa-l controlezi. Secretul e sa-l pulsezi scurt, in reprize, ca sa ramana boabe partial intregi pentru textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardei rosu si galben<\/strong> &#8212; toaca-i fin, ca sa se distribuie uniform si sa nu lase bucati apoase in drob. Aleg ardei grasi fermi, cu coaja lucioasa si lucitoare; cei moi lasa prea multa apa si pot inmuia amestecul. Ardeiul aduce dulceata si culoare, asa ca nu il sari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa rosie si alba<\/strong> &#8212; folosesc un amestec din ambele fiindca ceapa rosie e mai dulce si delicata, iar cea alba mai intensa; impreuna dau un fundal aromat echilibrat. Toaca-le foarte fin ca sa se integreze bine si sa nu ramana bucati crude in mijlocul drobului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesmet<\/strong> &#8212; este liantul care absoarbe umezeala si tine drobul legat la feliere. Daca amestecul iti pare prea umed, mai adauga o lingura-doua de pesmet; daca e prea uscat si sfaramicios, lasa-l cateva minute sa se hidrateze inainte sa-l pui in forma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tarate de psyllium<\/strong> &#8212; inlocuiesc oul si au rol de liant: in contact cu lichidul formeaza un gel care tine totul unit. Pentru varianta vegana sunt esentiale. Daca preferi varianta vegetariana, le poti inlocui cu un ou intreg.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> &#8212; dau acea nota savuroasa, usor branzoasa si umami, care apropie drobul vegan de gustul originalului. Nu o confunda cu drojdia de panificatie; drojdia inactiva nu creste si nu fermenteaza, ci doar aromatizeaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tahini si sos de soia<\/strong> &#8212; tahini aduce cremozitate si leaga amestecul, iar sosul de soia adanceste gustul cu sare si umami. Impreuna fac amestecul sa para mai bogat si mai rotund, fara grasimi animale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia afumata si ardei Cayenne<\/strong> &#8212; boiaua afumata da aroma de fum care imita gustul preparatelor coapte la gratar, iar Cayenne aduce un picant subtil. Doza Cayenne din reteta e mica, deci drobul iese cald, nu iute; ajusteaza dupa gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Glazura de rosii<\/strong> &#8212; ketchup, vin alb, zeama de lamaie, zahar brun, sirop de artar, mustar si boia afumata se amesteca pana devin omogene. Aceasta glazura dulce-acrisoara se intinde pe drob la jumatatea coacerii si se caramelizeaza la cuptor, exact ca la meatloaf-ul clasic.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu pulsa nautul prea mult.<\/strong> Greseala cea mai frecventa e sa transformi amestecul in pasta. Pulseaza scurt, in reprize, si opreste-te cand boabele sunt partial intregi &#8212; asa obtii textura aceea frageda, dar care se feliaza.<\/li>\n<li><strong>Unge bine forma de paine.<\/strong> Drobul fara grasime animala se poate lipi; un strat subtire de ulei pe toata forma il scoate intreg dupa coacere. Hartie de copt pe fund ajuta si mai mult.<\/li>\n<li><strong>Glazureaza in doua etape.<\/strong> Coace drobul aproximativ 20 de minute, apoi unge-l cu glazura de rosii si mai baga-l inca 20 de minute. Asa glazura se caramelizeaza fara sa se arda.<\/li>\n<li><strong>Lasa-l sa se odihneasca inainte sa feliezi.<\/strong> Cand iese din cuptor e fragil; daca il lasi sa se raceasca putin, se aseaza, se leaga si feliile ies curate. Stii ca e gata cand glazura s-a inchis la culoare si marginile sunt usor rumenite.<\/li>\n<li><strong>Gusta amestecul crud inainte de coacere.<\/strong> Nautul si pesmetul absorb sarea, asa ca daca pare fad in bol, va fi fad si dupa coacere. Dupa ce s-a racit complet, taie-l felii sau lasa-l intreg, acopera-l si pastreaza-l la frigider 3-4 zile. Se mananca la fel de bine rece, direct din frigider, sau usor reincalzit la cuptor cateva minute, ca sa-si recapete glazura lucioasa. Pentru pastrare mai lunga, feliile se pot congela; lasa-le sa se dezghete la frigider inainte de servire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti place ideea de drob fara carne, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/drob-vegetarian-cu-linte-ciuperci\/\">drobul vegetarian cu linte si ciuperci<\/a>, o varianta cu o textura diferita. Pe masa de post il poti completa cu un <a href=\"https:\/\/gourmandelle.com\/ro\/pate-cremos-de-linte-rosie\/\">pate cremos de linte rosie<\/a> ca aperitiv si cu o <a href=\"https:\/\/gourmandelle.com\/ro\/salata-vegana-a-la-russe\/\">salata vegana a la russe<\/a> alaturi, pentru un meniu complet.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img
