Versiunea de fata este complet vegana, fara unt sau oua, dar pastreaza aromele autentice ale retetei populare americane, perfecta pentru o zi de toamna sau pentru o masa in familie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand m-am apucat de reteta asta, mi-am propus un singur lucru: sa o pastrez la fel de simpla precum cea originala, asa ca sunt sigura ca oricine o poate recrea acasa. Nu am vrut o lista lunga de ingrediente exotice sau tehnici complicate, ci exact ce gasesti in orice bucatarie &#8212; faina, mere, zahar brun si cateva mirodenii. Asta e frumusetea placintei americane cu mere: e un desert care a fermecat generatii intregi tocmai pentru ca e accesibil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce iubesc cel mai mult la versiunea asta este crusta dubla &#8212; aluatul de la baza si fasiile impletite de deasupra, tehnica clasica de &#8220;double-crust pie&#8221;. foloseste unt vegan si lapte vegan, deci nu contine niciun produs de origine animala, dar pastreaza tot gustul placintei traditionale.<\/li>\n<li><strong>Crusta dubla, frageda si crocanta<\/strong> &#8212; combinatia de aluat la baza si fasii deasupra iti da textura aceea clasica, cu margini rumene.<\/li>\n<li><strong>Umplutura cu mirodenii calde<\/strong> &#8212; pe langa scortisoara obisnuita, reteta aduce cardamon, anason, ienibahar si nucsoara, care dau o profunzime de aroma pe care o placinta simpla nu o are.<\/li>\n<li><strong>Merele verzi isi pastreaza forma<\/strong> &#8212; nu se transforma intr-un piure, ci raman in felii care isi tin textura dupa coacere.<\/li>\n<li><strong>Este simpla de facut<\/strong> &#8212; am pastrat reteta cat mai aproape de cea originala, asa ca oricine o poate recrea acasa.<\/li>\n<li><strong>Arata spectaculos<\/strong> &#8212; ai nevoie de 5 mere verzi, decojite si taiate felii. Alege un soi acrisor si ferm, de tip Granny Smith, pentru ca acrisorul lor echilibreaza dulceata zaharului brun, iar pulpa densa nu se inmoaie complet la coacere. Cand cumperi mere pentru placinta, cauta-le tari la pipait, fara zone moi; un mar prea copt se va dezintegra in umplutura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt vegan rece<\/strong> &#8212; cele 145 g de unt vegan trebuie sa fie rece, scos direct din frigider. Secretul unui aluat fraged sta in temperatura: bucatelele de unt rece raman intregi in aluat si, la coacere, elibereaza abur care separa straturile. Daca untul se inmoaie, aluatul devine elastic si crusta iese mai dura, nu sfaramicioasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zahar brun<\/strong> &#8212; reteta foloseste 165 g de zahar brun in umplutura, plus cate o lingura la framantarea aluatului si la presarat deasupra. Zaharul brun, spre deosebire de cel alb, are melasa in compozitie, ceea ce adauga o nota caramelizata si o culoare mai calda umpluturii. El se potriveste perfect cu mirodeniile si cu merele acrisoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> &#8212; vei folosi 315 g de faina pentru aluat si 65 g in umplutura, plus 2-3 linguri pentru framantare. Faina din umplutura are un rol clar: leaga sucul lasat de mere in timpul coacerii, ca placinta sa nu fie apoasa, ci sa aiba o umplutura legata, cremoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mirodeniile<\/strong> &#8212; aici e diferenta fata de o placinta obisnuita: pe langa o lingurita de scortisoara, intra \u00bd lingurita cardamon, \u2153 lingurita anason, \u2153 lingurita ienibahar si \u00bc lingurita nucsoara. Foloseste mirodenii proaspat macinate daca poti, pentru ca isi pierd din intensitate in timp. Acest amestec cald este ce transforma placinta dintr-un desert simplu intr-unul cu adevarat aromat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zeama de lamaie<\/strong> &#8212; cele 60 g de zeama de lamaie din umplutura fac doua lucruri: impiedica merele decojite sa se inchida la culoare si aduc un strop de aciditate care evidentiaza si mai mult aromele. Nu o sari, chiar daca pare un detaliu minor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otet de mere<\/strong> &#8212; lingurita de otet de mere din aluat are un rol pe care multi il ignora: aciditatea lui limiteaza formarea glutenului, asa ca aluatul ramane fraged si nu devine tare. Daca aluatul se incalzeste prea mult cat il framanti, baga-l zece minute la frigider inainte sa-l intinzi.<\/li>\n<li><strong>Nu sari ora de odihna la frigider.<\/strong> Bila de aluat trebuie sa stea o ora invelita in folie. Aceasta pauza relaxeaza glutenul si solidifica untul, asa ca aluatul se intinde mai usor si nu se rupe.<\/li>\n<li><strong>Presara faina si pe aluat, si pe sucitor.<\/strong> Asa cum spune reteta, asta face intregul proces de intindere mult mai usor si previne lipirea. Lucreaza repede, ca aluatul sa nu se incalzeasca.<\/li>\n<li><strong>Stii ca e gata cand crusta e bine rumenita.<\/strong> Placinta se coace aproximativ 45 de minute la 180\u00b0 C, dar fii atent la culoare: cauti o margine aurie-maronie si un suc de mere care incepe sa clocoteasca usor pe la imbinari. Daca marginile se rumenesc prea repede, acopera-le cu putina folie de aluminiu.<\/li>\n<li><strong>Lipeste bine marginile cu furculita.<\/strong> Apasarea cu dintii furculitei nu e doar decorativa &#8212; sigileaza cele doua straturi de aluat ca umplutura sa nu dea pe afara in timpul coacerii.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alt soi de mere<\/strong> &#8212; daca nu gasesti mere verzi acrisoare, poti folosi un alt soi ferm, dar redu putin zaharul daca merele sunt deja foarte dulci, ca sa pastrezi echilibrul de gust.<\/li>\n<li><strong>Crusta in plasa (lattice)<\/strong> &#8212; in loc sa aranjezi fasiile una langa alta, le poti impleti in forma de gratar pentru un aspect si mai spectaculos. Lasata la temperatura camerei, acoperita, rezista doua zile, iar la frigider tine pana la patru-cinci zile. Inainte de servire, o poti incalzi cateva minute in cuptor ca sa-si recapete crocantul crustei. Aluatul poate fi preparat in avans: dupa ce formezi bila si o infasori in folie, o poti tine la frigider o zi sau doua, ori chiar la congelator pentru cateva saptamani &#8212; doar lasa-l sa se dezghete la frigider inainte de intindere.
