Se gateste in mai putin de 30 de minute si se serveste cu coriandru proaspat si bacon crocant din tofu afumat deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Supele se numara printre felurile mele de mancare preferate tocmai pentru ca sunt atat de versatile si usor de facut. Exista atat de multe moduri in care poti schimba o reteta de supa ca sa o faci pe gustul tau, iar asta e libertatea care ma face sa revin mereu la oala mare de pe aragaz. Aceasta supa de porumb e dovada perfecta: porni de la porumbul dulce, adaugi cateva arome mexicane bine alese si obtii un castron care nu are nimic plictisitor in el.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cunoscuta in Mexic si ca <em>sopa de elote<\/em> sau <em>crema de maiz<\/em>, supa asta combina cele mai reprezentative arome ale bucatariei mexicane intr-un preparat simplu si delicios. Porumbul congelat e ideal pentru ca se culege si se congeleaza la varful dulcetii, deci adesea e mai dulce decat cel proaspat din afara sezonului. Nu trebuie sa il dezghete in prealabil, il adaugi direct in oala. Daca prinzi sezon de porumb proaspat, poti folosi boabele taiate de pe stiulete pentru un gust si mai intens.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de cocos<\/strong> &#8212; foloseste laptele de cocos la conserva, neindulcit, nu bautura de cocos de la cutie. Conserva are continut mare de grasime si exact ea da supei cremozitatea matasoasa. Agita bine conserva inainte sa o deschizi, ca partea groasa si cea apoasa sa se reincorporeze.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Jalapeno<\/strong> &#8212; aduce caldura proaspata si verde a retetei. Cea mai mare parte din picant sta in seminte si in membranele albe din interior, asa ca daca vrei o supa mai blanda, scoate-le inainte sa toci ardeiul. Un jalapeno il gatesti in supa, iar pe al doilea il pastrezi felii pentru topping, ca sa ai si culoare, si o intepatura proaspata la final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimion praf<\/strong> &#8212; este condimentul care da supei amprenta mexicana. Pentru aroma maxima, cauta chimion macinat proaspat sau, si mai bine, prajeste-l usor in uleiul incins cateva secunde inainte sa adaugi lichidul &#8212; caldura ii elibereaza uleiurile aromatice si intensifica gustul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> &#8212; baza baconului vegetal. Alege tofu afumat ferm, ca sa il poti taia in fasii subtiri care se rumenesc frumos. Cu cat il tai mai subtire, cu atat devine mai crocant in tigaie. Boiaua afumata adaugata peste el dubleaza aroma de afumat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de tapioca sau amidon de porumb<\/strong> &#8212; rolul lor este sa lege si sa ingroase supa. Le adaugi peste legumele calite, inainte de lichid, ca sa se &#8220;gateasca&#8221; si sa nu ramana gust de faina cruda. Daca pui amidon direct in supa fierbinte fara sa il amesteci intai cu grasimea, risti sa faci cocoloase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia afumata<\/strong> &#8212; nu o confunda cu boiaua dulce obisnuita. Cea afumata (pimenton) e uscata pe lemn si exact ea transforma tofu-ul intr-un bacon convingator. Putin ajunge departe, asa ca masoara cu masura.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Caleste ceapa pana devine translucenta, nu rumena.<\/strong> Cele aproximativ 5 minute la foc mediu sunt suficiente &#8212; ceapa trebuie sa devina sticloasa si moale, nu maronie. Daca se arde, da o nota amara intregii supe.<\/li>\n<li><strong>Prajeste chimionul si tapioca inainte de lichid.<\/strong> Acel scurt moment in care le amesteci cu legumele calite &#8220;trezeste&#8221; aroma chimionului si activeaza amidonul, ca supa sa iasa cremoasa, nu apoasa.<\/li>\n<li><strong>Adauga laptele de cocos la final si nu-l mai fierbe agresiv.<\/strong> Dupa ce il incorporezi, acoperi oala si o lasi deoparte. Fierberea intensa poate face laptele de cocos sa se taie si sa apara mici grunji de grasime la suprafata.<\/li>\n<li><strong>Tofu-ul e gata cand e crocant si auriu.<\/strong> Asta inseamna in jur de 8 minute la foc mediu, amestecand din cand in cand. Aromele chiar se aseaza si se intensifica peste noapte, asa ca a doua zi e adesea si mai buna. O incalzesti usor, la foc mic, amestecand des, ca laptele de cocos sa nu se taie. Baconul din tofu il prepari ideal proaspat, chiar inainte de servire, ca sa ramana crocant &#8212; daca il pastrezi, se inmoaie, dar il poti rumeni din nou cateva minute in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru congelare, tine cont ca laptele de cocos isi poate schimba putin textura dupa dezghetare; daca planuiesti sa congelezi, o varianta este sa faci baza supei fara lapte de cocos si sa il adaugi proaspat la reincalzire. Pastreaza coriandrul, jalapeno-ul felii si baconul mereu separat si le adaugi doar in momentul servirii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut, incearca si alte supe calde de pe
