Sotarea orezului inainte de fierbere este pasul cheie &#8212; da boabelor o culoare aurie si o aroma de nuca care face diferenta fata de orezul fiert pur si simplu. La final: coriandru proaspat si zeama de lime. Orezul basmati da si o aroma subtila de nuca. In Mexic se foloseste traditional orez cu bob scurt (arroz morelos), care da o textura ceva mai lipicioasa si mai compacta. Ambele variante sunt corecte. Cel mai important: nu clateste orezul inainte de sotare &#8212; amidonul de suprafata ajuta la formarea crustei aurii caracteristice. Mai multe <a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-orez\/\"><strong>retete cu orez<\/strong><\/a>.<\/p><p><strong>Rosiile<\/strong> &#8212; Rosii proaspete taiate cubulete mici sau pulpa de rosii din conserva. Rosiile proaspete dau o aroma mai vie si mai acida; conserva da o culoare mai intensa si uniforma. Vara, cu rosii coapte in sezon, rezultatul cu rosii proaspete este superior. Iarna, conserva e varianta practica. Poti folosi si rosii cherry taiate in jumatate pentru un aspect mai atragator.<\/p><p><strong>Supa de legume<\/strong> &#8212; Foloseste supa de legume cu gust bun &#8212; fie facuta acasa, fie din cub de buna calitate. Supa da orezului mult mai multa adancime de gust decat apa simpla. Raportul clasic: 1 parte orez la 2 parti lichid. Cu supa de legume in loc de apa, orezul absoarbe mai multa aroma la fiecare bob.<\/p><p><strong>Coriandrul<\/strong> &#8212; Nelipsit din orezul mexican autentic. Se adauga proaspat, tocat, la final &#8212; nu se gateste, altfel isi pierde aroma si culoarea verde. Daca nu iti place coriandrul (aroma sa nu e pe placul tuturor), inlocuieste cu patrunjel proaspat tocat &#8212; rezultatul e mai bland dar tot bun.<\/p><p><strong>Porumbul si mazarea<\/strong> &#8212; Optionale, dar adauga culoare, dulcete naturala si textura. Din conserva sau congelate, se adauga in ultimele 5 minute de fierbere &#8212; nu au nevoie de gatire indelungata. Acesta este pasul cel mai important al retetei. Orezul sotat nu se mai lipeste si absoarbe aromele mult mai bine la fierbere.<\/li>\n<li>Adauga usturoiul si ceapa dupa orez, nu inainte &#8212; daca pui usturoiul in uleiul gol, se arde inainte sa fie gata orezul. Ordinea corecta: ulei incins, orez sotat 2 minute, ceapa, inca 2 minute, usturoi, 1 minut.<\/li>\n<li>Nu ridica capacul in timp ce orezul fierbe. Aburul din oala coace orezul uniform &#8212; deschizand capacul scapi aburul si orezul poate fi inegal gatit sau lipicios. Fierbe la foc mic, acoperit, 18-20 minute.<\/li>\n<li>Lasa orezul sa se odihneasca 5 minute dupa fierbere inainte de a ridica capacul si a amesteca. Se reincalzeste la foc mic cu 2-3 linguri de apa adaugate pentru a reda umiditatea pierduta, sau la microunde cu un capac pus deasupra vasului.<\/p><p>Se congeleaza bine pana la 3 luni. Portioneaza in pungi sau recipiente individuale inainte de congelare pentru reincalzire rapida. Dezgheat la frigider sau direct la microunde cu putina apa adaugata.<\/p><p>Orezul mexican facut in avans (chiar a doua zi) are aroma mai intensa decat cel proaspat &#8212; condimentele au timp sa se integreze complet.
