Un preparat consistent, picant si bogat in proteine, gata in mai putin de 30 de minute, perfect pentru zilele de post.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru reteta mea am folosit carne tocata de soia, ca sa mimez textura carnii din reteta originala, impreuna cu legumele clasice: morcovi, rosii, porumb dulce, fasole rosie si condimente. Asa obtin acel chili dens, satios, in care nimeni nu simte ca lipseste carnea &#8212; doar aroma afumata si caldura placuta a ardeiului iute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place sa il servesc asa cum se cuvine unui chili adevarat: alaturi de orez, chipsuri de porumb sau paine de porumb, cu un strop de zeama de lime deasupra. minimum de vase si de efort, maximum de aroma.<\/li>\n<li><strong>Este bogat in proteine si fibre.<\/strong> Fasolea rosie si granulele de soia aduc impreuna o doza serioasa de proteine vegetale, care satura cu adevarat.<\/li>\n<li><strong>Aroma se intensifica peste noapte.<\/strong> Ca orice chili bun, este si mai gustos a doua zi, dupa ce condimentele apuca sa se aseze.<\/li>\n<li><strong>Este complet vegan si de post.<\/strong> Niciun produs de origine animala, dar cu gust plin, datorita boielei, cayenne-ului si pastei de rosii.<\/li>\n<li><strong>Il ajustezi exact cum iti place.<\/strong> Mai bland sau mai iute, mai dens sau mai zemos &#8212; el da senzatia de &#8220;carne tocata&#8221;. Granulele uscate se hidrateaza foarte repede in lichidul fierbinte din tigaie, asa ca nu e nevoie sa le inmoi separat daca ai suficienta supa si suc de rosii. Cauta texturat de soia cu granulatie fina sau medie, nu fasii mari; granula mica se integreaza mai uniform in sos. Un truc: lasa-l sa absoarba lichidul si aroma din tigaie macar 15 minute, asa cum cere reteta, ca sa se inmoaie complet si sa nu ramana &#8220;scartos&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fasolea rosie din conserva<\/strong> aduce cremozitate, proteine si acea textura clasica de chili. Clateste-o bine sub jet de apa inainte de a o folosi &#8212; lichidul din conserva e sarat si poate da un gust metalic. Daca preferi fasole gatita de tine, foloseste aceeasi cantitate scursa. Adaug-o spre final, ca sa ramana intreaga si sa nu se faca pasta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de rosii<\/strong> este secretul aromei adanci. Cele 4 linguri concentreaza dulceata si aciditatea rosiilor si ingroasa sosul. Daca ai timp, prajeste pasta de rosii cateva secunde in tigaie inainte de a adauga lichidul &#8212; caldura ii scoate la iveala aroma dulce-caramelizata si elimina gustul crud de conserva.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boiaua dulce si cayenne<\/strong> formeaza coloana vertebrala a aromei. Boiaua dulce da culoarea rosie-aramie si o nota usor afumata, iar cayenne aduce caldura. Cumpara boia cat mai proaspata si pastreaz-o la intuneric &#8212; condimentele macinate isi pierd aroma in cateva luni. Doza de cayenne din reteta (jumatate de lingurita) da un picant moderat; mareste sau micsoreaza dupa gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sosul de soia sau tamari<\/strong> inlocuieste sarea si adauga acea adancime umami care lipseste de obicei din preparatele de post. Foloseste tamari daca tii la varianta fara gluten. Adauga-l treptat si gusta &#8212; e sarat, asa ca probabil nu vei mai avea nevoie de sare in plus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coriandrul proaspat si lime-ul<\/strong> se adauga la final si fac toata diferenta. Frunzele de coriandru tocate aduc prospetime, iar zeama de lime taie din bogatia preparatului cu aciditatea ei. Daca o lasi sa se arda, usturoiul devine amar si strica intreaga baza de aroma.<\/li>\n<li><strong>Lasa-l sa fiarba pana se ingroasa.<\/strong> Cele 15 minute de fiert nu sunt optionale &#8212; amestecul trebuie sa devina dens, nu apos. Stii ca e gata cand lingura lasa o dara pe fundul tigaii care se inchide incet. Daca ramane prea lichid, mai fierbe cateva minute descoperit.<\/li>\n<li><strong>Gusta si ajusteaza inainte de a servi.<\/strong> Greseala obisnuita e sa nu echilibrezi sosul: daca e prea acru, un varf de zahar il calmeaza; daca e fad, mai pune putin tamari; daca e prea picant, o lingura de pasta de rosii il imblanzeste.<\/li>\n<li><strong>Nu adauga coriandrul si lime-ul la fiert.<\/strong> Caldura distruge prospetimea lor. La frigider, intr-un recipient inchis, rezista 4-5 zile, iar aroma chiar se imbunatateste dupa prima zi. Se incalzeste usor pe aragaz, cu putina apa sau supa de legume daca s-a ingrosat prea mult. Pentru depozitare lunga, il poti congela in portii pana la 3 luni &#8212; e perfect de pregatit in avans pentru saptamana de post.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac astfel de retete satioase de post, cauta si alte <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-mancare-de-post\/\">retete de mancare de post<\/a> de pe blog. Pentru o masa cu fasole in stil mai rustic, incearca <a href=\"https:\/\/gourmandelle.com\/ro\/cassoulet-mancare-de-fasole\/\">cassoulet, mancarea de fasole<\/a>, iar daca vrei tot ceva consistent si
