Burritos autentici mexicani sunt de fapt mici si subtiri (uneori numiti si &#8220;flautas&#8221;), preparati din tortilla de grau si umpluti doar cu una sau doua dintre urmatoarele ingrediente: un tip de carne sau peste, orez, fasole, cascaval sau ardei iuti chili. Cand le cumperi, verifica sa fie flexibile la pipait prin ambalaj; daca s-au uscat, le poti incalzi cateva secunde intr-o tigaie sau la microunde ca sa redevina maleabile inainte sa le umpli.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> este ingredientul care da personalitate acestui burrito. Spre deosebire de tofu simplu, cel afumat este deja ferm si aromat, asa ca nu trebuie presat sau marinat. Taie-l cubulete mici, ca sa se distribuie uniform in fiecare imbucatura; cauta la cumparare un bloc dens, nu unul spongios, fiindca cel dens isi tine forma mai bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fasolea neagra<\/strong> din conserva este cea mai rapida sursa de proteina aici. Scurge-o si clateste-o bine sub jet de apa rece &#8212; asa scapi de lichidul gros din conserva care altfel ar inmuia tortilla. O fasole bine scursa pastreaza umplutura uscata si tortilla crocanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orezul fiert<\/strong> functioneaza cel mai bine cand este rece, nu cald si abia scos de pe foc. Orezul rece este mai uscat si mai bobat, asa ca nu lasa abur in burrito si nu il inmoaie. De aceea aceasta reteta este perfecta pentru orezul ramas de ieri.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Varza rosie murata<\/strong> aduce aciditatea si crocanta care taie din bogatia umpluturii. Tocata marunt, se distribuie mai bine si da fiecarei imbucaturi o nota proaspata. Daca este foarte acra, stoarce-o usor inainte sa o adaugi, ca sa nu lase prea mult lichid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Salsa rosie si feliile de jalapeno murate<\/strong> regleaza nivelul de picant. Salsa aduce umezeala aromata in interior, iar feliile de jalapeno dau caldura. Lasa cateva degete libere pe margini si pune umplutura intr-o fasie, nu in mijloc imprastiat.<\/li><li><strong>Pune partea cu lipirea in jos prima data.<\/strong> Cand asezi burrito in tigaie, pune-l cu marginea rulata dedesubt; caldura &#8220;sudeaza&#8221; tortilla si nu se mai desface in timpul prajirii.<\/li><li><strong>Asculta tigaia.<\/strong> Stii ca burrito este gata sa fie intors cand tortilla nu se mai lipeste de tigaie si capata o culoare aurie &#8212; aproximativ 3-5 minute la foc mediu. Daca incerci sa il intorci prea devreme, se rupe.<\/li><li><strong>Foloseste foc mediu, nu mare.<\/strong> La foc prea mare tortilla se arde pe dinafara inainte ca umplutura sa se incalzeasca.
