Pentru versiunea mea vegana am folosit ardei gras, fasole neagra, avocado si alte ingrediente delicioase, pe care le-am impaturit intr-o tortilla de grau si le-am copt la foc mediu pana cand &#8220;cascavalul&#8221; s-a topit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place ca o quesadilla nu cere niciodata aragazul ocupat mult timp: cat se incinge tigaia, am deja amestecul de avocado pregatit. Cand il tii in palma trebuie sa cedeze usor la o apasare blanda, fara sa fie moale ca o terci. Daca e tare ca piatra, lasa-l doua-trei zile la temperatura camerei, langa o banana, ca sa se coaca mai repede. Pentru umplutura il zdrobesc doar usor cu furculita, ca sa pastrez bucatele &#8211; un piure prea fin se transforma in pasta si pierde textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fasolea neagra<\/strong> &#8211; aduce proteina si tine de foame. Daca folosesti fasole din conserva, clateste-o bine sub jet de apa pana cand nu mai face spuma; asa scapi de lichidul sarat si de o parte din substantele care provoaca balonare. O scurg bine inainte de a o pune in tigaie, pentru ca apa in plus impiedica condimentele sa se prinda de boabe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mozzarella vegana rasa<\/strong> &#8211; este ingredientul care tine quesadilla impreuna. Alege un sortiment care se topeste (scrie de obicei pe ambalaj &#8220;melts&#8221; sau &#8220;se topeste&#8221;), pentru ca nu toate brandurile vegane fac asta la fel de bine. Se rade direct si se presara peste umplutura inainte de a impaturi lipia, ca sa se topeasca uniform si sa lege straturile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lipiile de tortilla<\/strong> &#8211; eu folosesc lipii de grau pentru ca se indoaie usor fara sa crape, dar pentru varianta fara gluten le inlocuiesti cu lipii fara gluten. Incalzeste-le putin inainte daca sunt reci de la frigider &#8211; o tortilla rece tinde sa se rupa cand o impaturesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeiul gras<\/strong> &#8211; taiat cubulete mici, se caleste rapid impreuna cu ceapa si da dulceata si o textura usor crocanta. Alege un ardei ferm, cu pielita lucioasa si fara pete moi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amestecul de condimente<\/strong> &#8211; chimion macinat, boia dulce, oregano, usturoi si ceapa pudra, putin chili dupa gust, sare si piper. Chimionul este nota care da profilul mexican, asa ca nu il sari. Le amestec intr-un bol mic inainte, ca sa le adaug toate odata peste fasole si sa se distribuie uniform.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Coace lipiile intr-o tigaie curata si uscata, fara ulei suplimentar. Quesadillele se coc traditional fara ulei, iar tigaia uscata da exteriorul acela crocant si patat auriu, fara sa devina grasa.<\/li>\n<li>Nu supraincarca tortilla. Daca pui prea multa umplutura, lipia nu se mai inchide si totul iese afara cand o intorci. Un sfert din amestecul de avocado plus fasolea si mozzarella sunt suficiente pentru o lipie.<\/li>\n<li>Stii ca este gata cand suprafata are pete aurii-maronii si mozzarella s-a topit la interior &#8211; de obicei 2-3 minute pe fiecare parte la foc mediu. Apasa usor cu spatula ca sa lipesti straturile.<\/li>\n<li>Intoarce quesadilla cu o spatula lata, sustinand-o pe dedesubt, ca sa nu se desfaca la mijloc. Daca ai una mare, taie-o in triunghiuri abia dupa ce s-a racit un minut.<\/li>\n<li>Greseala cea mai des intalnita este focul prea mare: exteriorul se arde inainte ca mozzarella sa apuce sa se topeasca. Tortilla de porumb este de altfel varianta originala a quesadillei.<\/li>\n<li><strong>Coriandru sau patrunjel<\/strong> &#8211; reteta merge cu oricare dintre ele. Daca nu esti fan de coriandru, patrunjelul tocat este o inlocuire foarte buna si pastreaza prospetimea.<\/li>\n<li><strong>Mai mult sau mai putin picant<\/strong> &#8211; chili-ul este dupa gust. Pentru o varianta mai blanda il lasi deoparte, iar pentru una iute adaugi mai mult sau pui putin ardei iute proaspat in umplutura.<\/li>\n<li><strong>Alte legume<\/strong> &#8211; poti adauga ciuperci calite sau spanac in amestecul de fasole, pentru o umplutura mai consistenta.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Quesadilla este cea mai buna proaspata, coapta, cat este inca crocanta. Daca vrei sa o pregatesti in avans, poti face umplutura de fasole condimentata si amestecul de avocado separat si sa le tii in frigider. Pentru avocado, pastreaza zeama de lime peste el si acopera-l bine cu folie direct pe suprafata, ca sa nu se inchida la culoare. Asambleaza si coace lipiile abia inainte de servire, ca sa pastrezi textura crocanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti raman quesadillas deja coapte, tine-le in frigider intr-un recipient inchis pana la doua zile si reincalzeste-le intr-o tigaie uscata sau la cuptor, niciodata la microunde &#8211; microundele le inmoaie si pierd tot ce le face bune.
