Foloseste tofu ferm sau extra-ferm si zdrobeste-l cu mana ca sa capete o textura de \u201ecarne tocata&#8221;.<\/li><li><strong>Fasole neagra (180 g) si porumb dulce (150 g)<\/strong> &#8211; din conserva sau congelate. Fasolea aduce proteine si consistenta, iar porumbul un contrast dulce. Scurge si clateste fasolea din conserva ca sa nu fie prea sarata.<\/li><li><strong>Sos de rosii (500 g)<\/strong> &#8211; baza umeda a caserolei. El leaga totul si tine straturile de tortilla moi.<\/li><li><strong>Ceapa, chili, chimion, usturoi<\/strong> &#8211; inima aromei mexicane. Praful de chili si chimionul dau caldura si acel gust afumat specific.<\/li><li><strong>6 lipii tortilla mari<\/strong> &#8211; poti folosi si tortilla fara gluten daca ai nevoie de varianta fara gluten.<\/li><li><strong>Branza vegana rasa (1 \u00bd cana)<\/strong> &#8211; pentru stratul care se topeste si se rumeneste. Cine prefera varianta lacto-vegetariana poate folosi branza obisnuita.<\/li><li><strong>Iaurt de soia (sau grecesc) si verdeata proaspata<\/strong> &#8211; pentru servire, ca sa echilibreze condimentele.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se prepara, pas cu pas<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Incalzeste cuptorul la 200\u00b0C. Intr-o tigaie cu putin ulei de masline, calesti ceapa la foc mediu pana devine translucida, apoi adaugi sosul de rosii, praful de chili, chimionul, usturoiul, sarea si piperul. Lasa sosul sa fiarba usor aproximativ 8 minute &#8211; acest timp nu e optional, pentru ca aici condimentele isi elibereaza aroma si ceapa se indulceste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Unge o tava cu ulei de masline si incepe sa asezi straturile: un strat de 2 tortilla pe fund, sos de rosii deasupra, apoi tofu maruntit, o treime din porumb, o treime din fasole si o treime din branza vegana. Acopera cu inca 2 tortilla si repeta straturile inca de doua ori. Acopera tava cu folie de staniol si coace aproximativ 30 de minute. Indeparteaza folia si mai coace 10 minute, pana ce stratul exterior se rumeneste. Se coace mai intai acoperit cu folie: aburul prins sub folie inmoaie tortilla si topeste branza uniform, fara ca marginile sa se usuce. Abia la final scoti folia, ca sa lasi stratul de deasupra sa se rumeneasca si sa capete textura. Sosul de rosii, distribuit intre straturi, e cel care tine totul umed si impiedica tortilla sa devina tare. De aceea nu sari peste sos la fiecare nivel.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Vrei mai mult picant?<\/strong> Adauga jalapeno tocat sau un varf de cutit de fulgi de ardei iute in sos.<\/li><li><strong>Fara gluten:<\/strong> foloseste tortilla fara gluten, restul ingredientelor raman la fel.<\/li><li><strong>Varianta cu carne:<\/strong> inlocuieste toful cu carne tocata de porc, vita sau pui, calita separat cu aceleasi condimente.<\/li><li><strong>Lasa caserola sa se odihneasca<\/strong> 10 minute dupa ce o scoti din cuptor &#8211; straturile se aseaza si portiile ies mai frumos taiate.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce se serveste si cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Caserola mexicana este satioasa in sine, dar merge minunat alaturi de o <a href=\"https:\/\/gourmandelle.com\/ro\/supa-de-porumb-mexicana\/\"><strong>supa de porumb mexicana<\/strong><\/a> sau o <a href=\"https:\/\/gourmandelle.com\/ro\/supa-de-dovlecel-mexicana\/\"><strong>supa de dovlecel mexicana<\/strong><\/a> ca prim fel, ori cu un bol de <a href=\"https:\/\/gourmandelle.com\/ro\/quinoa-mexicana\/\"><strong>quinoa mexicana<\/strong><\/a> pentru o masa cu si mai multe proteine. Deasupra, o lingura de iaurt, verdeata proaspata si, daca ai, felii de avocado.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Resturile se pastreaza foarte bine la frigider, intr-un recipient inchis, 3-4 zile. Se reincalzeste la cuptor sau la microunde, iar a doua zi aromele sunt chiar mai bine legate. Poti pregati caserola si din timp: o asamblezi, o acoperi si o tii la frigider pana o bagi la cuptor.
