Sunt gata in cateva minute, plini de arome autentice mexicane si complet pe baza de plante. Perfecti pentru o cina rapida sau pentru zilele de post.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tacos se numara printre cele mai iconice preparate mexicane din lume: lipii mici umplute, mancate cu mana, fara furculita si cutit. In varianta clasica se folosesc tacos de asador, facuti din carne (de obicei chorizo sau maruntaie), gatite pe gratar pana devin crocante, alaturi de guacamole, sosuri, ceapa si coriandru. Exista si &#8220;breakfast taco&#8221;, varianta americana umpluta de obicei cu oua, cascaval si carnaciori sau bacon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru versiunea mea de tacos vegani, potriviti si pentru zilele de post, am folosit multe legume si cubulete de tofu afumat ca sa asigur aportul de proteine. Imi place pentru ca pastrezi acea senzatie de &#8220;street food&#8221; mexican, dar fara nimic de origine animala, iar tofu afumat aduce exact acea nota fumurie pe care ti-o lasi inselat ca vine de la carne. Cand il cumperi, cauta un bloc ferm, nu silken, ca sa se taie frumos in cubulete care nu se sfarama in tigaie. Daca gasesti doar tofu obisnuit, presa-l bine inainte (pune-l sub o greutate 15-20 de minute ca sa scoata apa) si adauga un strop de fum lichid sau boia afumata la calire, ca sa imite gustul afumat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praf de chimion, chili, usturoi si ceapa<\/strong> sunt cele patru condimente care dau identitatea mexicana. Secretul este sa le adaugi peste tofu chiar in tigaia incinsa, nu peste cubulete reci: caldura &#8220;trezeste&#8221; uleiurile aromatice din condimente (asa-numita inflorire a mirodeniilor) si gustul devine mult mai profund. Cumpara-le cat mai proaspete, pentru ca praful de chimion mai ales isi pierde repede aroma daca sta luni intregi in dulap.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mixul de ardei gras<\/strong> (rosu, galben si verde) aduce culoare, dulceata si textura crocanta. Alege ardei fermi, cu coaja lucioasa si fara pete moi. Ii lasi cruzi si tocati marunt, ca sa pastreze acel crunch care contrasteaza placut cu tofu cald si moale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeiul jalapeno<\/strong> e cel care regleaza iuteala. Daca il vrei mai bland, scoate semintele si nervurile albe din interior, acolo se concentreaza cea mai mare parte din capsaicina. Pentru un plus de prospetime, foloseste-l proaspat feliat subtire; varianta din borcan e mai acra si mai moale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Salsa verde<\/strong> aduce aciditatea care leaga totul. Este facuta in mod traditional din tomatillos si ardei verzi, cu un gust usor acrisor care taie din bogatia tofului. Daca nu gasesti la magazin, o poti face in casa rapid, dar verifica eticheta sa fie fara ingrediente de origine animala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mozzarella vegana rasa<\/strong> se adauga la final, peste umplutura inca calda, ca sa se inmoaie usor. Mozzarella vegana se topeste mai greu decat cea clasica, asa ca daca o vrei putin fondanta, presar-o cat tofu e fierbinte sau incalzeste tacoul asamblat cateva secunde intr-o tigaie fara ulei.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu aglomera tigaia cand calesti tofu.<\/strong> Daca pui prea multe cubulete deodata, lasa apa si se fierb in loc sa se rumeneasca. Stii ca tofu e gata cand cubuletele au o crusta aurie pe margini, in jur de 5 minute la foc mediu.<\/li>\n<li><strong>Incinge bine tigaia inainte de a adauga uleiul si tofu.<\/strong> O tigaie rece face tofu sa se lipeasca si sa se rupa. Asteapta sa simti caldura cand tii palma deasupra, apoi adauga uleiul de masline.<\/li>\n<li><strong>Toaca legumele uniform si marunt.<\/strong> Intr-un taco tot ce pui trebuie sa incapa intr-o muscatura, asa ca bucatile mici de ardei si ceapa fac diferenta intre o umplutura eleganta si una care cade pe langa.<\/li>\n<li><strong>Incalzeste lipiile inainte de umplere.<\/strong> O lipie incalzita cateva secunde pe tigaia uscata devine mai flexibila si nu crapa cand o pliezi. Lipia rece se rupe exact in momentul in care musti.<\/li>\n<li><strong>Asambleaza in ultimul moment.<\/strong> Daca pui umplutura prea devreme, lipia se inmoaie de la umiditatea legumelor si a salsei. Umplutura de tofu calit se tine la frigider, intr-un recipient inchis, 3-4 zile, iar legumele tocate stau si ele bine 1-2 zile intr-un bol acoperit. Lipiile le tii la temperatura camerei, in ambalajul lor.
