Se prepara simplu si rapid, se coace circa 40 de minute la 200\u00b0C si se serveste presarat cu zahar pudra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bucataria germana e plina de deserturi care reusesc sa fie spectaculoase si, in acelasi timp, surprinzator de simple, iar strudelul e exemplul perfect. Cuvantul &#8220;strudel&#8221; inseamna in germana &#8220;vartej&#8221; sau &#8220;vortex&#8221;, exact ce se intampla cand rulezi aluatul subtire in jurul umpluturii. Imi place varianta cu foietaj cumparat tocmai pentru ca elimina partea cea mai dificila a retetei traditionale: intinsul aluatului pana devine atat de subtire incat poti citi ziarul prin el. Cu foietaj la temperatura camerei, ai aceeasi crusta aurie si crocanta fara stresul aluatului care se rupe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Merele Granny Smith fac toata diferenta aici: acrisoare si ferme, ele isi pastreaza forma la cuptor si echilibreaza dulceata zaharului brun, in loc sa se transforme intr-un piure moale. Scoate-l din frigider cu 15-20 de minute inainte de a-l folosi, ca sa ajunga la temperatura camerei: foietajul prea rece se crapa cand il intinzi, iar cel prea cald devine lipicios si greu de rulat. Cauta un foietaj cu o lista scurta de ingrediente; daca vrei varianta de post, alege unul facut cu ulei vegetal sau margarina in loc de unt, pentru ca multe foietaje contin unt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Merele Granny Smith<\/strong> sunt alegerea ideala pentru ca sunt acrisoare si ferme. Aciditatea lor echilibreaza zaharul brun, iar textura ferma face ca bucatile sa ramana intregi dupa coacere, in loc sa se dezintegreze. Cand le cumperi, alege mere tari, fara pete moi, cu coaja lucioasa de un verde intens. Curata-le si taie-le in cubulete de marime egala, ca sa se gateasca uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara, cardamomul si nucsoara<\/strong> formeaza inima aromatica a umpluturii. Daca poti, foloseste nucsoara proaspat rasa, pentru ca isi pierde rapid aroma odata macinata. Cardamomul aduce o nota citrica si florala care ridica strudelul peste un desert obisnuit cu mere si scortisoara; foloseste-l cu masura, pentru ca e puternic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul brun<\/strong> nu doar indulceste, ci aduce si o nota de caramel datorita melasei pe care o contine, completand aromele de toamna. Daca ai doar zahar alb, poti sa-l folosesti, dar vei pierde acea adancime usor caramelizata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> are aici un rol tehnic, nu de gust: amestecata cu condimentele si presarata peste mere, ea absoarbe sucul pe care merele il elibereaza la coacere si impiedica aluatul sa devina ud pe fundul interior. E un pas mic care face diferenta dintre o crusta crocanta si una imbibata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Stafidele<\/strong> se hidrateaza in apa calda inainte de a fi adaugate, ca sa nu ramana uscate si tari in umplutura. Acoperite cu apa calda, se umfla si devin moi si suculente, eliberand dulceata in fiecare felie. Scurge-le bine inainte de a le amesteca cu merele.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-list wp-block-list\">\n<li>Lasa foietajul sa ajunga la temperatura camerei inainte de a-l intinde. Daca il intinzi prea rece, se crapa; daca e prea cald, se lipeste. Momentul potrivit e cand cedeaza usor la apasare, dar inca isi pastreaza forma.<\/li>\n<li>Pune umplutura doar pe jumatate din foaie si lasa marginile neatinse. Marginile curate sunt cele care se vor lipi la rulare si vor tine umplutura inauntru; daca le murdaresti cu mere, strudelul se poate desface la coacere.<\/li>\n<li>Aseaza strudelul pe tava cu marginea (cusatura) in jos. Astfel greutatea lui mentine ruloul inchis si nu se desface in timpul coacerii.<\/li>\n<li>Fa crestaturi mici pe deasupra inainte de a-l baga la cuptor. Ele lasa aburul sa iasa, astfel incat crusta nu se umfla si nu se crapa neregulat, iar interiorul se gateste uniform.<\/li>\n<li>Stii ca strudelul e gata cand crusta e usor rumenita si aurie, iar bucataria miroase puternic a mere si scortisoara. Evita soiurile foarte dulci si moi, pentru ca se transforma in piure si elibereaza prea mult suc.<\/li>\n<li><strong>In loc de stafide:<\/strong> poti folosi merisoare uscate, stafide aurii sau bucatele de caise uscate, hidratate la fel in apa calda. Pentru o nota diferita, hidrateaza-le in rom in loc de apa.<\/li>\n<li><strong>Mai multa textura:<\/strong> presara cateva nuci sau migdale tocate peste umplutura inainte de a rula, pentru un contrast crocant.<\/li>\n<li><strong>Varianta de post:<\/strong> alege un foietaj facut cu ulei vegetal sau margarina, fara unt, si vei avea un strudel complet de post, asa cum sugereaza si pozele acestei retete.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Strudelul e cel mai bun in ziua in care e copt, cat crusta e inca crocanta. Il poti pastra la temperatura camerei, acoperit lejer, pana la doua zile, dar crusta se va inmuia treptat. Pentru a-i reda crocanta, incalzeste feliile cateva minute in cuptor la 160-170\u00b0C, nu la microunde, care le face moi si cauciucate. Poti pregati umplutura de mere cu cateva ore inainte si o poti tine la frigider, apoi sa o scurgi de surplusul de suc inainte de a o aseza pe aluat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iubesti deserturile cu mere, mai incearca <a href=\"https:\/\/gourmandelle.com\/ro\/cornulete-cu-mere-si-scortisoara\/\">cornuletele cu mere si scortisoara<\/a> sau clasica <a href=\"https:\/\/gourmandelle.com\/ro\/placinta-americana-cu-mere\/\">placinta americana cu mere<\/a>.
