Se coace circa 40 de minute la 200&deg;C si poate fi facut vegetarian sau, foarte usor, in varianta vegana, inlocuind oul cu tarate de psyllium.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tortul Streusel este un tip special si delicios de tort nemtesc, facut de obicei cu o umplutura de cirese, visine sau mere. L-am ales pe cel cu mere pentru ca este, dupa parerea mea, varianta cea mai potrivita pentru zilele reci de toamna: merele se inmoaie la cuptor, scortisoara parfumeaza toata casa, iar acel topping de farame ramane crocant deasupra. Streusel inseamna practic &#8220;farame&#8221; in limba germana, iar exact textura aceea contrastanta &#8212; blat moale, crema cremoasa, streusel uscat si crocant &#8212; face acest desert special.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Veti gasi diverse tipuri de tort Streusel in cafenelele din Germania si va recomand cu caldura sa incercati o felie de tort autentic daca veti vizita vreodata aceasta tara fascinanta. Mergi pe soiuri ferme, usor acrisoare, care isi tin forma la coacere, cum sunt Granny Smith sau un Golden mai tare. Merele moi sau prea coapte se transforma in pireu si lasa prea multa apa in blat. Decojeste-le si taie-le cubulete uniforme, ca sa se gateasca egal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos<\/strong> &#8212; se foloseste atat in streusel, cat si in blat, si trebuie sa fie la temperatura camerei, adica moale dar nu lichid. Asa se incorporeaza in faina si formeaza acele farame de streusel. Daca uleiul e topit complet, streuselul iese lipicios in loc de sfaramicios; daca e prea rece si tare, nu se amesteca bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidon de porumb<\/strong> &#8212; este ingredientul care ingroasa crema de vanilie. Gateste-l pe foc mediu, amestecand continuu, pana ce compozitia devine densa, in jur de 7 minute, fara sa o lasi sa fiarba. Daca dai focul prea tare, amidonul se poate branzi sau face cocoloase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otet de mere nefiltrat<\/strong> &#8212; combinat cu laptele vegetal, creeaza un fel de &#8220;lapte gros&#8221; (lapte batut vegetal) care reactioneaza cu bicarbonatul si praful de copt si ridica blatul. Nu te speria de cantitate: la coacere, gustul de otet dispare complet si ramane doar un blat aerat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara<\/strong> &#8212; apare si in streusel, si in stratul de mere. Pentru aroma cea mai puternica, foloseste scortisoara macinata proaspat sau cumparata de la un magazin cu rulaj mare, pentru ca pierde din intensitate in timp. Coaja de lamaie rasa adaugata peste mere ii echilibreaza dulceata si scoate in fata aroma fructelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oul (sau taratele de psyllium)<\/strong> &#8212; pentru varianta clasica vegetariana folosesti un ou; pentru varianta vegana sau de post, il inlocuiesti cu doua linguri de tarate de psyllium. Psyllium retine apa si formeaza un gel care leaga aluatul, exact rolul pe care il joaca oul.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Lasa crema sa se raceasca complet inainte sa o intinzi.<\/strong> Daca o pui calda peste aluat, se va imprastia si va patrunde in blat. Acopera bolul cu folie direct pe suprafata cremei, ca sa nu prinda pojghita.<\/li>\n<li><strong>Tine streuselul la frigider pana in ultimul moment.<\/strong> Uleiul de cocos rece tine faramele separate, asa ca atunci cand le presari peste mere raman bucatele distincte si se coc crocant, nu intr-o crusta compacta.<\/li>\n<li><strong>Nu amesteca prea mult aluatul de blat.<\/strong> Combina ingredientele uscate cu cele umede doar cat sa se uneasca, aproximativ un minut. Daca insisti, dezvolti glutenul si blatul iese tare in loc de pufos.<\/li>\n<li><strong>Verifica coacerea cu o scobitoare.<\/strong> Dupa 40 de minute la 200&deg;C, infige o scobitoare in blat (nu in stratul de mere): daca iese curata, e gata. Poti inlocui merele cu visine scurse bine, pastrand acelasi strat de zahar si scortisoara.<\/li>\n<li><strong>Lapte la alegere:<\/strong> reteta merge cu orice lapte vegetal &#8212; de soia, ovaz sau migdale &#8212; sau cu lapte normal, in functie de ce ai si de preferinte.<\/li>\n<li><strong>Mai multa aroma:<\/strong> adauga un varf de nucsoara sau putin ghimbir macinat in streusel sau peste mere, pentru o nota mai calda de toamna.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Tortul Streusel de mere se pastreaza la frigider, intr-un recipient inchis, 3-4 zile. Pentru ca textura streuselului sa revina, incalzeste o felie cateva minute la cuptor inainte sa o servesti &#8212; microundele il fac moale, in timp ce cuptorul il reda crocant. Crema de vanilie si stratul de mere se pot pregati cu o zi inainte si tinute la frigider, ca sa imparti munca pe doua zile. Tortul se congeleaza bine felii, invelite separat; lasa-l sa se dezghete la temperatura camerei, apoi incalzeste-l scurt la cuptor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac deserturile cu mere si scortisoara, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/cornulete-cu-mere-si-scortisoara\/\">cornuletele cu mere si scortisoara<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/prajitura-rasturnata-cu-mere\/\">prajitura rasturnata cu mere<\/a>.
