Cei mai multi iubitori de pretzel considera ca acestia au o istorie religioasa, fiind originari din vechile manastiri. La fel ca si painea, covrigii de casa erau un mod accesibil si foarte convenient de a rezolva problema foametei des intalnita in patura celor saraci. Ingredientele principale ce formeaza aluatul sunt faina, apa, drojdia si zaharul. Drojdia care este pusa in aluat produce dioxid de carbon, ce ofera covrigului acea consistenta usoara si aerata. Textura de la exterior este obtinuta prin &#8220;imbaierea&#8221; covrigului intr-o solutie alcalina numita &#8220;lesie&#8221; sau praf de copt, chiar inainte de coacere. Inmuierea aluatului in lesie altereaza raportul dintre zahar si proteine, rezultand intr-o crusta crocanta si delicioasa.
