Aluatul ei este intotdeauna facut prin inmuierea painii intr-un mix lichid, de obicei din lapte, oua, zahar si un tip de grasime, fie unt, fie ulei sau seu. Eu am decis insa sa fac varianta vegana, fiindca am vrut un desert care sa fie la fel de delicios ca cel original, dar potrivit si pentru zilele de post.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mi-a placut mereu ideea ca un desert atat de bun poate porni de la cateva felii de paine uscata pe care altfel le-ai fi aruncat. E genul de reteta la care ma intorc cand am paine ramasa de cateva zile si nu vreau sa o irosesc, iar visinele din compot ii dau exact acea aciditate care echilibreaza dulceata.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Aceasta reteta e potrivita daca ai nevoie de<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>un desert de post sau vegan care sa nu para deloc unul restrictiv<\/li><li>o modalitate de a folosi painea uscata ramasa, in loc sa o arunci<\/li><li>un desert cald, reconfortant, perfect pentru sezonul rece<\/li><li>un final de masa copioasa care cere ceva dulce, dar nu greoi<\/li><li>o reteta simpla, fara mixer si fara tehnici complicate<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Zero risipa.<\/strong> Transforma painea neagra uscata, pe care multi o arunca, intr-un desert care merita servit la masa.<\/li><li><strong>Complet vegana si de post.<\/strong> Semintele de chia inlocuiesc ouale, iar laptele vegetal pe cel de vaca, fara sa pierzi din textura cremoasa.<\/li><li><strong>Servita calda din cuptor.<\/strong> Asa cum se mananca traditional in Germania, cu marginile rumenite si interiorul moale.<\/li><li><strong>Echilibru dulce-acrisor.<\/strong> Visinele si afinele aduc o aciditate care taie din dulceata si o face sa nu fie satioasa.<\/li><li><strong>Aromata si parfumata.<\/strong> Scortisoara, nucsoara si vanilia ii dau acel parfum cald, de desert facut in casa.<\/li><li><strong>Usor de pregatit.<\/strong> Combini, lasi painea sa se inmoaie, coci. Painea trebuie sa fie uscata, taiata cubulete, fiindca doar asa absoarbe lichidul fara sa se transforme in pasta. Daca painea ta este inca proaspata, las-o intinsa pe o tava cateva ore sau usuc-o cateva minute in cuptor la foc mic. Cu cat painea e mai uscata la inceput, cu atat budinca tine mai bine forma dupa coacere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele vegan<\/strong> este lichidul care inmoaie painea si o leaga. Eu folosesc varianta vegetala, dar reteta merge la fel de bine cu lapte normal daca preferi o versiune vegetariana. Un lapte de ovaz sau de soia, putin mai gras, da o textura mai cremoasa decat cele foarte apoase, cum e cel de orez.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Semintele de chia alba praf<\/strong> sunt secretul versiunii vegane: inlocuiesc ouale. Cand chia macinata intalneste lichidul, formeaza un gel care leaga compozitia exact cum ar face-o oul, asa ca nu sari peste cele 5 minute de odihna ale amestecului de lapte. Folosesc chia alba pentru ca nu lasa puncte negre in desert, dar la gust nu este nicio diferenta fata de cea inchisa la culoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Visinele din compot<\/strong> aduc aciditatea care defineste un Kirschenmichel autentic (de altfel, numele vine de la cuvantul german pentru cirese si visine). Scurge-le bine de sirop inainte sa le adaugi, altfel surplusul de lichid inmoaie prea tare compozitia. Daca ai visine congelate, merg si ele, scurse dupa ce s-au dezghetat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul brun sau de cocos<\/strong> indulceste, dar aduce si o nota usor caramelizata, mai calda decat zaharul alb. O parte intra in compozitie, iar lingura presarata deasupra inainte de coacere formeaza acea crusta fina, rumenita, la suprafata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara, nucsoara si vanilia<\/strong> sunt sufletul aromatic al budincii. Nucsoara, mai ales daca o razuiesti proaspat, face o diferenta enorma fata de cea cumparata gata macinata. Nu exagera insa cu ea, fiindca este puternica si poate domina celelalte arome.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Lasa painea sa se inmoaie cu adevarat.<\/strong> Graba e cea mai frecventa greseala aici. Daca torni amestecul si bagi imediat la cuptor, miezul ramane uscat. Lasa cubuletele de paine sa absoarba lichidul cateva minute bune, pana se inmoaie complet.<\/li><li><strong>Apasa usor compozitia in forma.<\/strong> Pasul acesta, mentionat in reteta, scoate golurile de aer si ajuta budinca sa se lege uniform, fara zone sfaramicioase.<\/li><li><strong>Urmareste culoarea, nu doar ceasul.<\/strong> Stii ca e gata cand suprafata e frumos rumenita, iar marginile s-au desprins usor de forma. In jur de 30 de minute la 200C este reperul, dar cuptoarele difera.<\/li><li><strong>Scurge bine fructele.<\/strong> Excesul de sirop de la visine este principalul motiv pentru care o budinca de paine iese prea moale. Restul ingredientelor raman neschimbate.<\/li><li><strong>Alte fructe:<\/strong> daca nu ai visine, mergi pe cirese din compot sau pe un amestec de fructe de padure. Pastreaza ideea de fructe usor acrisoare, ca sa nu iasa desertul prea dulce.<\/li><li><strong>Mai multe afine proaspete:<\/strong> afinele se adauga dupa coacere, asa ca poti pune mai multe, pentru prospetime si culoare.<\/li><li><strong>Servire cu sos:<\/strong> asa cum o servesc eu, cu un sos de vanilie si coacaze deasupra, care leaga totul si o face de masa festiva.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Budinca de paine se pastreaza la frigider, acoperita, 2-3 zile. Reincalzeste-o in cuptor cateva minute, ca sa isi recapete marginile rumenite; la microunde se inmoaie si isi pierde din textura. Poti pregati amestecul de lapte cu chia si condimente in avans si il poti tine la frigider, urmand sa adaugi painea si visinele chiar inainte de coacere.
