In Marea Britanie si Irlanda acompaniaza de obicei friptura, cum ar fi cea de porc, miel, vita sau pui, iar in unele parti ale <strong><a href=\"https:\/\/gourmandelle.com\/ro\/bucataria-asiatica\/\">Asiei<\/a><\/strong> orice parte lichida a unui preparat, cum ar fi sosul de curry, poate fi numita tot &#8220;gravy&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Versiunea pe care o fac eu nu are nevoie de nicio picatura de carne ca sa fie bogata si savuroasa. Tot gustul vine din ciuperci, si pot sa iti spun ca un sos gravy sau un sos de ciuperci facut in casa va avea intotdeauna un gust infinit mai bun decat un sos cumparat. Diferenta o simti de la prima lingura.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile Porcini uscate<\/strong> sunt secretul intregului sos. Prin uscare, aroma lor de padure se concentreaza puternic, iar apa in care le inmoi devine un fond intens, aproape ca o supa de oase vegetala. De aceea nu arunca apa de inmuiere: o torni inapoi in tigaie, pentru ca acolo se aduna cea mai mare parte din gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Galbiorii de padure<\/strong> aduc o textura carnoasa si o nota fina, usor fructata, care echilibreaza intensitatea Porcini. Spala-i cu grija, pentru ca prind usor nisip intre lamele; cel mai bine ii stergi cu o carpa umeda sau ii clatesti rapid, fara sa-i lasi la inmuiat in apa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de rosii<\/strong> joaca un rol de adancire a gustului. O lingura pare putin, dar adauga aciditate si umami care fac sosul sa para mai &#8220;copt&#8221; si mai rotund. Daca o gatesti scurt in tigaie inainte de a turna lichidul, isi pierde gustul crud si capata o dulceata discreta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de tapioca sau amidonul de porumb<\/strong> este agentul de ingrosare. O adaugi la final, dupa ce ai strecurat sosul, ca sa-l transformi dintr-o supa aromata intr-un sos onctuos. Amesteca bine ca sa nu faca cocoloase si tine focul mic in timp ce se leaga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrul, rozmarinul si frunza de dafin<\/strong> dau profilul de iarna, cald si lemnos, specific unui gravy bun. Daca esti grabit, foloseste apa fierbinte si redu timpul la 30 de minute, dar nu mai putin.<\/li>\n<li><strong>Gateste ceapa pana devine translucenta, nu rumenita.<\/strong> Cele trei minute la foc mediu sunt suficiente. Daca o arzi, sosul capata o nota amaruie greu de corectat.<\/li>\n<li><strong>Caleste pasta de rosii cateva secunde inainte de lichid.<\/strong> Greseala cea mai des intalnita este sa torni supa peste pasta de rosii cruda, ceea ce lasa un gust acru, plat. Amesteca-o in tigaia calda intai.<\/li>\n<li><strong>Strecoara inainte de a ingrosa.<\/strong> Strecurarea iti da un sos catifelat, fara bucati, asa cum este un gravy clasic. Daca preferi un sos rustic cu ciuperci in el, poti pastra galbiorii deoparte si sa-i adaugi inapoi dupa strecurare.<\/li>\n<li><strong>Stii ca e gata cand<\/strong> sosul imbraca dosul lingurii si lasa o dara curata atunci cand treci degetul prin el. Il mai torn peste legume la cuptor, peste hrisca sau orez, sau alaturi de o <strong><a href=\"https:\/\/gourmandelle.com\/ro\/friptura-vegana-fara-seitan\/\">friptura vegana<\/a><\/strong> de sarbatoare. Daca vrei sa ramai pe filonul cu ciuperci, merge minunat langa <strong><a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-ciuperci-canepa\/\">chiftelutele de ciuperci cu canepa<\/a><\/strong> sau langa un <strong><a href=\"https:\/\/gourmandelle.com\/ro\/drob-vegetarian-cu-linte-ciuperci\/\">drob de linte si ciuperci<\/a><\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul se pastreaza la frigider, intr-un recipient inchis, 3-4 zile. La rece se ingroasa, asa ca atunci cand il reincalzesti adauga putina supa sau apa si amesteca pe foc mic pana redevine cremos. Se poate si congela pana la 2-3 luni, insa dupa decongelare textura poate aparea usor taiata; o readuci la loc amestecand bine pe foc. Poti pregati in avans fondul de Porcini, lasand ciupercile la inmuiat de cu seara, ca a doua zi sosul sa fie gata mult mai repede.<\/p>\n\n\n<div id=\"recipe\"><\/div><div
