Sunt simple de preparat, satioase si perfecte servite cu piure, paste sau salata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ai ruga zece suedezi sa iti spuna reteta standard de <em>K\u00f6ttbullar<\/em>, ai primi zece raspunsuri diferite. Nu exista, de fapt, un standard al acestui preparat mult-iubit: fiecare familie din Suedia ajusteaza reteta dupa gusturi si preferinte, putin mai mult din acest condiment, mai putin din celalalt. Mie imi place tocmai aceasta libertate, asa ca am refacut clasicul intr-o varianta de post, fara sa renunt la ce conteaza cu adevarat: chiftelute aromate, bine condimentate, scaldate intr-un sos catifelat care le tine umede.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa adaugi si mai multa aroma, recomandarea mea este sa prajesti chiftelutele in unt (sau, pentru varianta de post, intr-un unt vegetal de calitate) inainte de a le inabusi in sos. Cauta granule de soia uscata cu o culoare uniforma, fara miros ranced, si hidrateaza-le in supa de legume calda, nu in apa simpla, ca sa preia aroma de la bun inceput. Dupa hidratare, stoarce foarte bine excesul de lichid: daca raman prea ude, compozitia nu se va lega si chiftelutele se vor desface in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> sunt liantul de post care inlocuieste oul. Psyllium-ul absoarbe lichidul si formeaza un gel care tine compozitia compacta, exact rolul pe care l-ar avea oul batut in varianta clasica. Daca nu prepari de post, poti folosi un ou batut in locul lor. Cumpara tarate (husk) de psyllium, nu pulbere fina, pentru o legare mai buna.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orezul cu bob rotund fiert<\/strong> aduce moliciune si volum in interiorul chiftelutei. Bobul rotund elibereaza mai mult amidon decat cel cu bob lung, deci ajuta si el la legare. Fierbe-l in avans si lasa-l sa se raceasca putin inainte de a-l incorpora, ca sa nu inmoaie prea tare restul compozitiei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boiaua afumata<\/strong> este ingredientul care face diferenta de aroma. Ea da chiftelutelor acea nota afumata, adanca, pe care o asociem cu preparatele din carne. Foloseste boia afumata adevarata (smoked paprika), nu boia dulce obisnuita, altfel pierzi exact caracterul care le face savuroase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> adauga un gust umami, usor de branza si de nuca, care rotunjeste compozitia. Sunt diferiti de drojdia de panificatie, deci nu ii inlocui cu aceasta. Pastreaza-i intr-un recipient inchis, ferit de umezeala, ca sa nu se aglomereze.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele de cocos<\/strong> sta la baza sosului cremos. Pentru un sos bogat si catifelat, foloseste lapte de cocos gras, din conserva, nu bautura de cocos diluata din cutie. Gustul de cocos se estompeaza la fierbere si in prezenta nucsoarei si a usturoiului, deci sosul nu iese dulce, ci cremos si echilibrat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina usor prajita<\/strong> este agentul de ingrosare al sosului. Prajirea fainii la tigaie, pana prinde o nuanta usor aurie, elimina gustul crud de faina si adauga o aroma de nuca prajita. Dupa cele 10 minute de hidratare, preseaza granulele intr-o sita sau intre palme pana scoti excesul de lichid. O compozitie umeda nu se modeleaza si chiftelutele se desfac la prajit.<\/li>\n<li><strong>Lasa compozitia sa se odihneasca.<\/strong> Dupa ce amesteci totul cu taratele de psyllium, da-i cateva minute de stat. Psyllium-ul are nevoie de timp ca sa absoarba lichidul si sa lege, iar compozitia devine mult mai usor de modelat.<\/li>\n<li><strong>Coace, apoi rumeneste.<\/strong> Reteta coace chiftelutele intai la 200\u00b0C, apoi le rumeneste in tigaie. Coacerea le fixeaza forma, iar trecerea prin tigaie le da crusta. Stii ca sunt gata de tigaie cand sunt ferme la atingere si nu se mai lipesc de tava.<\/li>\n<li><strong>Nu sari peste prajirea fainii.<\/strong> Faina cruda lasa gust de fainos in sos. Prajeste-o pana prinde o nuanta usor aurie si miroase a nuca, apoi incorporeaz-o in lichid amestecand continuu, ca sa nu faca cocoloase.<\/li>\n<li><strong>Pentru aroma in plus, prajeste chiftelutele in unt.<\/strong> Recomandarea mea este sa le treci prin unt (vegetal, pentru varianta de post) inainte de a le inabusi in sos &#8211; aroma se schimba complet in bine.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Ou in loc de psyllium.<\/strong> Daca nu prepari de post, inlocuieste cele 2 linguri de tarate de psyllium cu un ou batut, asa cum sugereaza si reteta. Compozitia se va lega la fel de bine.<\/li>\n<li><strong>Varianta fara gluten.<\/strong> Foloseste pesmet fara gluten si faina fara gluten pentru sos. Iti recomand sa pastrezi sosul separat de chiftelute daca le faci in avans, pentru ca raman mai ferme; le combini si le reincalzesti impreuna chiar inainte de servire. La reincalzire, sosul s-ar putea ingrosa, asa ca subtiaza-l cu putina supa de legume sau apa, la foc mic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Compozitia de chiftelute o poti modela si cu o zi inainte, apoi o tii acoperita la frigider pana cand esti gata sa o coci. Chiftelutele coapte (fara sos) se pot si congela: lasa-le sa se raceasca complet, congeleaza-le pe o tava ca sa nu se lipeasca, apoi muta-le intr-o punga. La servire, le reincalzesti si pregatesti sosul proaspat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa explorezi si alte idei, sosul cremos de la aceasta reteta merge minunat si peste alte preparate &#8211; inspira-te din <a href=\"https:\/\/gourmandelle.com\/ro\/sos-de-ciuperci\/\">reteta de sos de ciuperci<\/a>.
