Asa le-am mancat mereu si tot asa le pun in farfurie si acum, cu sirop care se prelinge printre straturi. In varianta vegana inlocuiesc cubuletul de unt cu putin ulei de cocos sau unt vegetal, dar gestul ramane acelasi: un teanc generos si sirop din belsug deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cartoful dulce este eroul discret al retetei. Ii imprumuta aluatului culoarea caramelizata, o dulceata naturala care iti permite sa folosesti mai putin sirop si o umezeala care tine clatitele fragede si dupa ce s-au racit. Il macini in blender pana devine faina fina, asa ca nu ai nevoie sa cumperi faina de ovaz gata facuta. Daca tii cont strict de gluten, alege ovaz certificat fara gluten, pentru ca ovazul obisnuit este adesea contaminat in moara cu cereale care contin gluten. Fulgii marunti se macina mai repede si mai uniform decat cei mari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Piureul de cartof dulce<\/strong> da retetei culoarea, dulceata si umezeala. Cel mai bun gust il obtii daca cartoful dulce este copt la cuptor in coaja, nu fiert &#8212; coacerea concentreaza zaharurile si scoate la iveala aroma caramelizata, in timp ce fierberea lasa piureul apos. Alege cartofi cu coaja neteda, fara pete moi sau muguri, iar miezul portocaliu intens iti spune ca ai parte de mult beta-caroten.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> joaca rolul oului si leaga aluatul. Psyllium absoarbe lichidul si formeaza un gel care tine clatitele intregi cand le intorci. Lasa amestecul cateva minute sa se hidrateze inainte de prajit. Daca prepari varianta vegetariana, poti folosi in loc un ou intreg, care da acelasi efect de legare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Siropul de artar<\/strong> este indulcitorul principal si aduce o aroma profunda, de caramel, pe care zaharul simplu nu o are. Cauta sirop de artar pur, nu sirop cu aroma de artar, care e de fapt sirop de porumb colorat. Pastreaza putin si pentru servire, ca sa picuri deasupra teancului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otetul de mere nefiltrat<\/strong> reactioneaza cu bicarbonatul si elibereaza dioxid de carbon, exact bulele care fac clatitele pufoase. Nu ii vei simti gustul in produsul final, asa ca nu il sari &#8212; este ingredientul care face diferenta intre o clatita densa si una aerata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos<\/strong> intra atat in aluat, cat si in tigaie pentru prajit. In aluat aduce frageziune, iar in tigaie da clatitelor marginile acelea usor crocante si aurii. Topeste-l usor inainte sa il adaugi in aluat, ca sa se incorporeze uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mirodeniile<\/strong> &#8212; scortisoara, ghimbirul si nucsoara &#8212; sunt ceea ce transforma clatitele dintr-o reteta simpla intr-una cu aroma de toamna. Pe foc prea iute, clatitele se ard la exterior si raman crude la mijloc. Foc mediu si rabdare.<\/li>\n<li><strong>Asteapta semnul ca e momentul sa intorci clatita.<\/strong> Cand vezi bule mici care se sparg la suprafata si marginile s-au inchegat, atunci e gata de intors. Daca o forezi prea devreme, se rupe.<\/li>\n<li><strong>Nu turna prea mult aluat.<\/strong> Aproximativ o lingura si jumatate la o clatita &#8212; daca faci clatite prea mari, mijlocul ramane necopt cand exteriorul e deja rumen.<\/li>\n<li><strong>Lasa aluatul sa se odihneasca cateva minute<\/strong> dupa ce l-ai amestecat. Asa psyllium-ul se hidrateaza, ovazul se inmoaie, iar clatitele ies mai pufoase si mai usor de intors.<\/li>\n<li><strong>Unge tigaia subtire intre serii.<\/strong> Sterge surplusul de ulei cu un servet, ca sa nu se prajeasca clatitele in baie de ulei si sa iasa unsuroase.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Varianta vegetariana:<\/strong> inlocuieste taratele de psyllium cu un ou intreg si foloseste lapte de vaca in loc de lapte vegetal. Le incalzesti cateva secunde in tigaie sau in prajitorul de paine, ca sa isi recapete marginile usor crocante. Se pot si congela: aseaza-le in straturi separate cu hartie de copt intre ele, iar la nevoie le scoti direct la incalzit, fara sa le mai dezgheti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru un mic-dejun rapid in timpul saptamanii, poti pregati piureul de cartof dulce din timp si il tii la frigider, gata de pus in blender. Daca iti plac clatitele, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-pufoase-vegane-fara-gluten\/\">clatitele pufoase vegane fara gluten<\/a> sau varianta clasica de <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-de-post\/\">clatite de post<\/a>.
