Are o textura matasoasa si un gust sarat-afumat surprinzator de apropiat de original, iar reteta foloseste ingrediente simple, ieftine si usor de gasit. Il pregatesti acasa in cateva minute de lucru efectiv, restul fiind doar timp de marinare la frigider.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ai trecut la o <strong><a href=\"https:\/\/gourmandelle.com\/ro\/dieta-vegana\/\">dieta vegana<\/a><\/strong>, probabil ti s-a parut ca trebuie sa renunti la o gramada de gusturi cu care erai obisnuit. In realitate, exista o versiune pe baza de plante pentru aproape orice preparat &#8212; iar acesta este un exemplu perfect. Combinatia de fum lichid (sau boia afumata), sos de soia, pasta miso si o foaie de nori reproduce tocmai notele care definesc somonul afumat: afumatura, sarea, gustul umami profund si aroma marina. Nori-ul adauga acel iz de mare pe care nicio leguma nu il are de la sine, iar miso si sosul de soia construiesc adancimea de gust. Morcovul si rosia sunt doar suportul care preia toate aceste arome si imita textura.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele care fac diferenta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Lista e scurta, dar fiecare ingredient are un rol clar. Iti las cateva repere ca sa alegi bine si sa intelegi ce face fiecare.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Morcovii<\/strong> &#8212; alege-i drepti si grosi, ca sa poti taia felii lungi si subtiri dupa coacere. Coptul ii inmoaie si concentreaza dulceata, dandu-le o textura carnoasa.<\/li><li><strong>Rosiile prunisoare<\/strong> &#8212; au putine seminte si pulpa fermare, asa ca raman intregi dupa oparire si curatare de coaja. Sunt varianta cu textura cea mai apropiata de pestele crud.<\/li><li><strong>Fumul lichid sau boiaua afumata<\/strong> &#8212; este nota cheie de afumatura. Daca folosesti boia afumata, doza-o cu grija, fiindca poate amarui daca pui prea mult.<\/li><li><strong>Pasta miso si sosul de soia<\/strong> &#8212; aduc sarea si gustul umami. Impreuna creeaza adancimea care face gustul convingator.<\/li><li><strong>Foaia de nori<\/strong> &#8212; taiata fasii in marinata, da aroma marina specifica. Dupa ce se racesc, ii feliezi lung si subtire cu cutitul de curatat legume, ii pui in marinata si ii lasi la frigider cel putin 2 ore, ideal peste noapte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru <strong>varianta din rosii<\/strong>, crestezi un X la baza fiecarei rosii, le oparesti 4 minute in apa fierbinte cu focul oprit, apoi le decojesti usor. Le tai in jumatati, scoti semintele cu o lingurita, le adaugi in marinata si le lasi la frigider cel putin o ora sau peste noapte. Aici se intampla toata magia: aroma intra in leguma doar daca o lasi sa stea la rece.<\/li><li>Doza fumul lichid putin cate putin si gusta marinata pe parcurs. Este foarte concentrat si e mai usor sa adaugi decat sa corectezi.<\/li><li>Daca folosesti rosii, alege-le bine coapte, dar inca ferme, ca sa nu se destrame la decojire.<\/li><li>Scurge bine morcovii sau rosiile de marinata in exces inainte de a le pune pe paine, ca sandvisul sa nu devina apos.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce se potriveste<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cel mai des il pun pe un bagel cu crema vegana de branza, marar si capere, exact ca pe varianta clasica. Merge insa minunat si in <strong><a href=\"https:\/\/gourmandelle.com\/ro\/sushi-vegan\/\">sushi vegan<\/a><\/strong>, unde inlocuieste somonul fara probleme, sau intr-o <strong><a href=\"https:\/\/gourmandelle.com\/ro\/salata-de-cuscus\/\">salata satioasa<\/a><\/strong> ca sursa de gust afumat. Tine 3-4 zile fara probleme, iar gustul chiar se intensifica dupa prima zi, pe masura ce aroma patrunde mai adanc. Nu il recomand la congelator, fiindca atat morcovii cat si rosiile isi pierd textura dupa dezghetare. Scoate-l cu cateva minute inainte de servire, ca sa nu fie prea rece, si presara putin marar proaspat deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca incerci reteta, lasa-mi te rog o nota cu stelute si spune-mi in comentarii pentru ce varianta ai optat &#8212; morcovi sau rosii &#8212; si daca ai pus si sos de peste vegan in marinata. Rosiile sunt gata mai repede, dupa aproximativ o ora, dar si ele castiga in gust daca le lasi peste noapte. Cu cat marinarea e mai lunga, cu atat gustul e mai profund.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1733002450304\"><strong class=\"schema-faq-question\">Pot inlocui fumul lichid daca nu am?<\/strong> <p class=\"schema-faq-answer\">Da, foloseste boia afumata in loc de fum lichid, in aceeasi cantitate orientativa. Dozeaz-o putin cate putin si gusta marinata, fiindca prea multa boia poate amarui.
