In varianta mea vegana, straturile de paine integrala alterneaza cu humus, crema de caju, castraveti si o pasta cremoasa de avocado, totul &#8220;imbracat&#8221; si decorat ca un tort adevarat. Practic este un sandvis urias care contine de toate, ideal pentru zilele in care nu te poti decide ce vrei sa mananci si ai vrea sa guisti putin din fiecare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cel mai important detaliu pe care l-am invatat este rolul painii: aici folosesc o paine din cereale integrale, dar de obicei se foloseste o paine de tip alb sau de secara, iar rolul ei e acela de a tine amestecul laolalta. Daca painea este foarte proaspata si moale, lasa feliile cateva minute la aer sau usuca-le foarte putin &#8212; o paine usor mai ferma sustine mai bine umpluturile si nu se imbiba prea repede. De obicei se foloseste paine alba sau de secara, dar varianta integrala adauga mai multa fibra si un gust mai plin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Humusul<\/strong> apare in doua roluri: humus clasic (amestecat aici cu turmeric, ardei galben si praf de ceapa) si humus cu sfecla rosie. El este &#8220;liantul&#8221; cremos dintre straturi. Daca il faci in casa, lasa-l ceva mai gros decat de obicei &#8212; un humus prea moale se va strecura printre felii. Turmericul nu este doar pentru culoarea galbena vie, ci adauga si o nota usor pamantie care echilibreaza dulceata sfeclei din celalalt strat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Crema de branza din caju<\/strong> aduce stratul bogat, untos, care imita perfect crema de branza clasica. Pentru o textura matasoasa, inmoaie caju in apa cu cateva ore inainte (sau in apa fierbinte 15-20 de minute daca te grabesti), apoi blendeaza pana devine complet fina. Daca preferi varianta vegetariana, poti folosi crema de branza obisnuita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Avocado<\/strong> este &#8220;glazura&#8221; tortului, asa ca alege fructe bine coapte &#8212; trebuie sa cedeze usor la o apasare blanda, fara sa fie moi sau cu pete intunecate. Avocado prea tare nu se va pisa cremos, iar unul prea copt va avea gust amarui. Zeama de lamaie nu este optionala aici: acidul incetineste oxidarea si pastreaza pasta verde si proaspata mai mult timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Maioneza vegana<\/strong> se intinde subtire intre straturi si ajuta painea sa nu se usuce, lipind in acelasi timp etajele intre ele. Pentru varianta vegetariana poti folosi maioneza obisnuita. Castravetii murati tocati fin si ardeiul galben aduc nota acra, respectiv crocanta si dulce, care taie din bogatia cremelor.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Lasa tortul la frigider cel putin o ora inainte de servire. Vei sti ca este gata cand straturile s-au asezat si feliile se taie curat, fara sa alunece unele de pe altele.<\/li>\n<li>Greseala cea mai frecventa este umplutura prea lichida: daca humusul sau crema de caju curg, straturile aluneca si tortul se &#8220;darama&#8221;. Tine cremele groase, ca o pasta tartinabila ferma.<\/li>\n<li>Intinde fiecare strat uniform, pana la marginea feliilor, ca tortul sa fie drept si stabil pe inaltime. Restul retetei ramane neschimbat.<\/li>\n<li><strong>Painea:<\/strong> daca nu ai paine integrala, merge la fel de bine paine alba sau de secara &#8212; rolul ei este sa tina amestecul laolalta, deci foloseste ce gasesti, atata timp cat feliile sunt uniforme.<\/li>\n<li><strong>Umpluturile:<\/strong> poti varia humusul (de naut clasic, cu sfecla, cu ardei copti) sau adauga alte legume tocate fin in straturi, in functie de ce ai la indemana.<\/li>\n<li><strong>Toppingul:<\/strong> semintele si nucile pentru topping sunt la alegere, iar verdeturile pot fi orice ai proaspat &#8212; patrunjel, marar, microplante sau frunze de salata.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Acest tort este facut parca special pentru preparare in avans. Il poti asambla cu cateva ore inainte (sau chiar de seara pentru a doua zi) si il tii acoperit la frigider &#8212; racirea ajuta straturile sa se aseze si sa se lege, iar feliile se vor taia mai frumos. Lasa insa decorul final &#8212; pasta de avocado pe laturi, verdeturile si semintele &#8212; pentru chiar inainte de servire, ca avocado sa ramana verde si toppingul crocant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru pastrare, tine resturile acoperite la frigider si consuma-le in maximum o zi-doua; painea se inmoaie in timp, asa ca este la cel mai bun gust proaspat asamblat.
