Lintea inlocuieste carnea tocata, asa ca iese un fel de mancare satios, bogat in proteine si numai bun pentru o masa de familie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Trebuie sa incercati neaparat aceasta reteta de placinta ciobaneasca sau, cum am numit-o eu, musaca de cartofi cu linte. Mi-a placut mereu ideea de cottage pie clasic, dar am vrut o varianta fara carne care sa fie la fel de consistenta &#8212; iar lintea face exact treaba asta. Pentru o musaca ce isi tine forma, lintea bruna sau verde (cum e cea du Puy) e ideala, fiindca ramane intreaga dupa fierbere si nu se transforma in pasta. Evita lintea rosie decorticata aici &#8212; aceea se face crema si nu mai obtii textura de umplutura. Cand o cumperi, alege boabe lucioase, fara urme de praf sau boabe sparte, semn ca e proaspata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartofii<\/strong> formeaza stratul de piure de la suprafata. Pentru un piure pufos alege cartofi fainosi, nu cei cerosi (de salata), care raman aposi si lipiciosi. Secretul unui piure care nu se lipeste este sa nu il amesteci prea mult &#8212; cu cat il bati mai tare, cu atat eliberezi mai mult amidon si devine cleios.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartoful dulce<\/strong> intra in umplutura, taiat cubulete, si aduce o dulceata fina care echilibreaza aciditatea rosiilor. Alege unul ferm, cu coaja neteda, fara pete moi. Taie-l in cuburi cat mai egale, ca sa se gateasca uniform pana se inmoaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile<\/strong> apar in trei forme: pasta de tomate pentru concentratie, rosii din conserva pentru sos si rosii proaspete cubulete pentru prospetime. Pasta de rosii adauga o aroma intensa, dar e bine sa o calesti scurt impreuna cu ceapa si usturoiul &#8212; caldura ii scoate dulceata si elimina gustul crud, acrisor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> sunt ingredientul care da gustul umami, usor branzos, fara lactate. O lingura e suficienta cat sa adanceasca aroma umpluturii. Ii gasesti la magazinele bio sau cu produse vegane si se pastreaza luni intregi intr-un borcan inchis.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cascavalul ras<\/strong> se amesteca in piure si se topeste la cuptor, dand stratul auriu de deasupra. Poti folosi cascaval normal sau o varianta vegana, dupa preferinta. Santurile lasate de furculita se rumenesc primele si dau acea crusta crocanta atat de placuta.<\/li>\n<li>Caleste ceapa pana devine translucida, nu aurie, inainte sa adaugi usturoiul. Usturoiul se arde repede si capata gust amar, asa ca il pui abia dupa ceapa si il tii pe foc doar un minut.<\/li>\n<li>Lasa umplutura sa fiarba la foc mic cele 20 de minute, fara graba. Asa lintea absoarbe supa si aromele, iar sosul se ingroasa &#8212; daca ramane prea apos, musacaua nu isi tine forma la portionare.<\/li>\n<li>Scurge bine cartofii fierti inainte sa ii pasezi. Apa ramasa dilueaza piureul si nu mai obtii un strat ferm care sa stea frumos deasupra.<\/li>\n<li>Lasa musacaua sa se odihneasca 10 minute dupa ce o scoti din cuptor. Pentru a pregati in avans, poti asambla cele doua straturi in forma, le acoperi si le tii la frigider pana a doua zi, apoi coci totul fix inainte de masa &#8212; e o reteta ideala pentru meniul de weekend sau pentru musafiri. Daca vrei sa o congelezi, lasa musacaua sa se raceasca complet, apoi o impacheteaza bine; rezista pana la 3 luni.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut aceasta reteta cu linte, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/linte-cu-legume-gratinate\/\">lintea cu legume gratinate<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/drob-vegetarian-cu-linte-ciuperci\/\">drobul vegetarian cu linte si ciuperci<\/a>.
