Eu cred ca nu ar trebui sa fie atat de greu, asa ca am refacut-o complet, fara carne, dar cu acelasi efect spectaculos cand o tai la masa. Si, ca sa fie clar de la inceput: un Wellington gatit bine implica intotdeauna ciuperci, si cu asta am incheiat povestea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O servesc de obicei in cadrul cinei de <strong><a href=\"https:\/\/gourmandelle.com\/ro\/retete-vegetariene-de-craciun\/\">Craciun<\/a><\/strong> sau al unei petreceri speciale, dar o poti prepara si pentru o adunare de familie ori chiar pentru cina de duminica seara, atunci cand ai mai mult timp liber si te poti ocupa de pregatirea ei in cel mai mic detaliu. Ele nu au gust propriu, asa ca secretul este sa le hidratezi cu o supa de legume aromata, nu cu apa simpla. Asa absorb toate aromele de dafin, boia afumata si chimion si capata o textura carnoasa, suculenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile Champignon<\/strong> dau profunzime intregului preparat. Le sotez pana isi lasa apa si apoi pana se evapora complet, pentru ca exact acolo se concentreaza aroma. Sunt elementul fara de care un Wellington nu este Wellington, asa cum spuneam.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanacul<\/strong> aduce culoare, prospetime si un strat verde frumos cand tai felia. Il gatesc doar pana se inmoaie si pana se evapora tot lichidul, ca sa nu inmoaie foietajul din interior.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Foietajul<\/strong> este invelisul care face spectacolul. Pentru varianta vegana verifica eticheta si alege un foietaj fara unt, pe baza de ulei vegetal. Trebuie sa fie rece cand il intinzi, altfel se rupe si nu mai creste frumos la copt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boiaua afumata<\/strong> si <strong>chimionul<\/strong> sunt condimentele care dau caracterul &#8220;carnos&#8221; si afumat tocaturii de soia. Fara ele, umplutura ar fi fada, asa ca nu le sari.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Trucuri ca sa iasa perfect<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Usuca bine fiecare strat.<\/strong> Cel mai des greseala este sa pui umplutura prea umeda in foietaj. Soia bine strecurata, ciupercile cu lichidul evaporat si spanacul fara apa sunt cheia unui foietaj crocant. Daca un strat este umed, foietajul se inmoaie pe dedesubt.<\/li>\n<li><strong>Hidrateaza soia cu supa fierbinte, nu cu apa.<\/strong> Lasa granulele aproximativ 20 de minute in supa, apoi storce-le bine. Asa preiau toata aroma supei si nu raman insipide.<\/li>\n<li><strong>Soteaza ciupercile pana se evapora apa.<\/strong> Stii ca sunt gata cand tigaia nu mai are lichid si ciupercile capata o culoare aurie. Acolo se concentreaza gustul.<\/li>\n<li><strong>Lasa straturile sa se raceasca<\/strong> inainte de a le aseza pe foietaj. Umplutura calda topeste grasimea din aluat si il face lipicios si greu de modelat.<\/li>\n<li><strong>Unge foietajul si presara susan negru<\/strong> inainte de copt, pentru o crusta lucioasa si rumena. Daca preferi bland, scoate-l sau pune doar o jumatate.<\/li>\n<li><strong>Fara susan:<\/strong> daca nu ai susan negru, presara seminte de mac sau lasa foietajul simplu, doar uns.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce o servesc<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">O tai in felii groase, ca sa se vada straturile de soia, ciuperci si spanac. Merge minunat cu un piure de cartofi, cu legume coapte la cuptor sau cu o salata verde simpla. La masa de sarbatori o pun in centru, alaturi de un sos cald, si arata exact ca un fel principal de restaurant. Asambleaza Wellington-ul cu umplutura rece, nu calda, ca foietajul sa nu se inmoaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Copt, se pastreaza la frigider 2-3 zile intr-un recipient inchis. Reincalzeste-l in cuptor la 180C cateva minute, ca foietajul sa redevina crocant, nu la microunde, unde s-ar inmuia.
