Se face din numai cateva ingrediente de baza, iar secretul sta in tava bine incinsa, nu in vreo tehnica complicata. In mod traditional se face intr-o tava adanca pentru copt, insa in ziua de azi tava pentru briose este optiunea cea mai comuna &#8212; la fel am ales si eu sa folosesc pentru aceasta varianta vegana! Compartimentele mici incing uleiul mai repede si iti dau bucatele individuale, cu marginile crocante, exact asa cum trebuie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta clasica are un aluat din oua, faina si <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-lapte-vegetal\/\">lapte<\/a> sau apa. Bate-o cu mixerul pana devine pufoasa, ca sa inglobeze aer &#8212; acest aer este ceea ce ridica budinca in cuptor.<\/li>\n<li><strong>Faina<\/strong> obisnuita, alba, formeaza structura aluatului. Cele 125 g dau consistenta potrivita, nici prea groasa, nici prea lichida.<\/li>\n<li><strong>Praful de copt<\/strong> da un plus de crestere, alaturi de aerul din aquafaba.<\/li>\n<li><strong>Laptele de soia<\/strong> aduce lichidul si proteina care ajuta aluatul sa se rumeneasca frumos.<\/li>\n<li><strong>Uleiul de masline<\/strong> se pune fierbinte in tava; el este cel care creeaza marginile crocante si impinge aluatul sa se umfle.<\/li>\n<li><strong>Sarea neagra (kala namak)<\/strong> da acea aroma usor de oua, perfecta pentru o varianta de post. Uleiul trebuie sa fie foarte fierbinte in momentul in care torni aluatul, iar tava sa iasa din cuptor doar cat sa umpli formele. Cand aluatul rece atinge uleiul incins, apa din compozitie se transforma rapid in abur si impinge aluatul in sus, creand golul din mijloc si marginile inalte, crocante. Lasa-le sa se raceasca complet, apoi tine-le intr-o cutie inchisa la frigider pentru o zi sau doua. Ca sa isi recapete textura crocanta, reincalzeste-le cateva minute in cuptorul incins, nu la microunde &#8212; microundele le fac moi.
