Se serveste ca aperitiv de tras cu mana la masa de sarbatori, arata spectaculos si se face din doar cateva ingrediente. Fiecare preparat trebuie sa aiba caracter festiv, de aceea lumanarile, crengutele de brad si luminitele vor fi mereu o idee buna pe masa. Uneori mancarea chiar salveaza atmosfera: cineva intra in camera cu aperitivele si toata lumea uita de motivul pentru care se contrazicea. Mi-am propus sa va demonstrez ca un meniu de Craciun de post sau vegan este foarte usor de facut si extrem de gustos, iar acest bradut din foietaj este exemplul perfect pe care il puteti incerca.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce ingrediente iti trebuie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta are doua parti: pesto-ul de busuioc si aluatul foietaj care ii da forma. Pentru pesto ai nevoie de busuioc proaspat, seminte de pin, usturoi, suc de lamaie, ulei de masline, sare de mare si fulgi de drojdie inactiva (drojdie nutritionala) &#8211; aceasta din urma da gustul usor branzos, umami, care inlocuieste parmezanul din pesto-ul clasic. Busuiocul trebuie sa fie proaspat si de un verde viu; frunzele ingalbenite sau ofilite vor amarui sosul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Partea a doua e simpla: doua foi de aluat foietaj, putina faina pentru intins, plus decorul de final &#8211; merisoare uscate, boabe de piper rosu si rozmarin proaspat. In timp ce mixeaza aparatul, toarna uleiul de masline putin cate putin &#8211; asa emulsioneaza sosul si controlezi mai bine consistenta, care trebuie sa fie cremoasa, dar destul de densa cat sa nu curga afara din foietaj.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca esti pe fuga, poti sari peste acest pas si folosi un pesto vegan gata facut. Ai grija doar ca stratul de umplutura sa nu fie prea gros sau prea lichid, altfel foile aluneca la coacere si crengutele nu isi mai tin forma.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum dai forma de brad<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Aici sta tot spectacolul, dar e mai usor decat pare. Aseaza prima foaie de foietaj pe o suprafata presarata cu faina si intinde pesto-ul uniform pe toata suprafata, lasand un centimetru liber pe margini. Acopera cu a doua foaie si taie cu un cutit ascutit un triunghi mare &#8211; acesta e bradul. Din bucatile ramase decupezi trunchiul si o steluta pentru varf.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fa crengile crestand lateralele triunghiului spre interior, dar fara sa tai pana in mijloc, ca sa ramana coloana centrala intreaga. Rasuceste fiecare crenguta de cateva ori si apasa bine capetele in aluat, ca sa nu se desfaca la coacere. Semnul clar ca e gata: crengutele sunt umflate, rumene la varfuri si suna a gol cand bati usor in ele. Daca partea de sus se coloreaza prea repede, acoper-o lejer cu putina folie de aluminiu si lasa restul sa se rumeneasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Scoate tava din cuptor si, cat inca e cald, presara boabele de piper rosu si merisoarele si aseaza cateva crengute de rozmarin proaspat. Rozmarinul adaugat pe cald degaja aroma si imita perfect acele de brad, iar merisoarele rosii arata ca niste globulete in miniatura. Il poti aseza pe un platou generos alaturi de <a href=\"https:\/\/gourmandelle.com\/ro\/aperitive-cu-iaurt-tzatziki\/\">tzatziki<\/a> sau un <a href=\"https:\/\/gourmandelle.com\/ro\/aperitive-cu-iaurt-sos-de-iaurt-cu-menta\/\">sos de iaurt cu menta<\/a> pentru inmuiat crengutele, plus niste <a href=\"https:\/\/gourmandelle.com\/ro\/aperitiv-mini-falafel\/\">mini falafel<\/a> ca sa ai si ceva mai consistent. Poti insa castiga timp modeland bradutul cu o zi inainte: il asezi format pe hartia de copt, il acoperi si il tii la frigider, iar in ziua petrecerii il bagi direct in cuptor. Asa eviti aglomeratia de ultim moment si serveisti totul cald.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a ramas, pastreaza-l intr-un recipient inchis la temperatura camerei maximum o zi sau la frigider pana la doua-trei zile. Reincalzeste-l cateva minute in cuptor la 180\u00b0C ca sa isi recapete crocantul &#8211; la microunde foietajul se inmoaie si isi pierde tot farmecul.
