Aceasta varianta este vegana si de post: foloseste lapte de migdale si unt vegan, dar o poti face vegetariana cu lapte si unt normal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vreti sa incercati si voi acest desert minunat acasa, trebuie sa faceti reteta mea de rulouri cu scortisoara vegane\/de post! Pentru mine, scortisoara, vanilia si ciocolata sunt \u201ereginele\u201d aromelor din lumea deserturilor, iar aceste rulouri le pun pe primele doua exact in centrul atentiei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce imi place cel mai mult la reteta asta este momentul in care scoti tava din cuptor si toata bucataria miroase a scortisoara calda si a coaja de portocala. Adaug si putin cardamom si nucsoara in umplutura, plus o mana de merisoare, pentru ca asa rulourile capata o aroma mai complexa, nu doar dulce-monoton. Verifica intotdeauna termenul de valabilitate: drojdia veche nu mai creste aluatul. Cand o amesteci cu laptele cald si o lingura de zahar, ar trebui sa faca spuma in cateva minute &#8212; daca nu spumeaza deloc, e moarta si merita inceput din nou, altfel aluatul nu va dospi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte cald.<\/strong> Foloseste lapte de migdale pentru varianta vegana sau lapte de vaca pentru cea vegetariana. Important este sa fie cald, nu fierbinte: la peste 40-45\u00b0C drojdia incepe sa moara. Eu il incalzesc doar pana e caldut la deget, ca atunci cand testezi temperatura unui biberon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina.<\/strong> Reteta cere 300 g plus inca putina pentru framantat. Cerne-o peste amestecul de drojdie, asa cum spune reteta &#8212; cernerea aereaza faina si ajuta aluatul sa devina mai usor. Adauga faina suplimentara treptat, doar cat sa nu se mai lipeasca aluatul de masa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt (vegan sau normal).<\/strong> Untul topit intra in aluat, iar cel de la temperatura camerei in umplutura. Pentru varianta de post foloseste unt vegan; pentru cea vegetariana, unt normal. Untul moale se intinde mult mai usor pe dreptunghiul de aluat decat cel rece.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zahar brun.<\/strong> In umplutura merge zahar brun, nu alb, fiindca melasa din el da un gust mai cald, de caramel, si se topeste frumos cu untul intr-un sirop care imbiba rulourile la copt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara, cardamom, nucsoara si coaja de portocala.<\/strong> Acesta este sufletul umpluturii. Scortisoara este vedeta, dar cardamomul si nucsoara o adancesc, iar coaja de portocala adauga prospetime. Foloseste coaja rasa de la o portocala bine spalata si rade doar partea portocalie, nu albul de dedesubt, care e amar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Merisoare.<\/strong> Se presara peste umplutura inainte de rulare si aduc un contrast acrisor placut. Stii ca e gata cand face bule si si-a dublat volumul &#8212; asta e semnul ca drojdia lucreaza.<\/li>\n<li><strong>Nu adauga prea multa faina la framantat.<\/strong> Greseala clasica este sa indesi faina pana aluatul devine tare. Adauga doar cat sa nu se mai lipeasca de masa; un aluat usor moale da rulouri mai pufoase.<\/li>\n<li><strong>Ruleaza strans si lipeste marginea.<\/strong> Cand intinzi dreptunghiul si il rulezi, strange bine si lipeste marginea in lungime, apoi pune ruloul cu cusatura in jos. Asa rulourile nu se desfac la copt.<\/li>\n<li><strong>Taie cu un cutit ascutit sau cu ata.<\/strong> Pentru cele 8 rulouri, taie intai ruloul in jumatate, apoi fiecare jumatate inca o data. Le poti pastra acoperite la temperatura camerei 1-2 zile sau la frigider pana la 4 zile. Inainte de servit, incalzeste-le cateva secunde la cuptorul cu microunde sau cateva minute in cuptor, ca sa redevina moi si aromate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, poti pregati rulourile pana la pasul taierii si le poti tine la frigider peste noapte, urmand sa le lasi sa ajunga la temperatura camerei si sa dospeasca inainte de copt. Aluatul copt se congeleaza bine: lasa-le sa se raceasca complet, congeleaza-le fara glazura, iar glazura o adaugi proaspata dupa ce le incalzesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca
