{"id":24915,"date":"2018-12-18T18:21:44","date_gmt":"2018-12-18T16:21:44","guid":{"rendered":"https:\/\/gourmandelle.com\/?p=24915"},"modified":"2026-07-10T14:15:48","modified_gmt":"2026-07-10T12:15:48","slug":"budinca-toffee","status":"publish","type":"post","link":"https:\/\/gourmandelle.com\/ro\/budinca-toffee\/","title":{"rendered":"Budinca Toffee (Budinca Caramel)"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\"><strong>Budinca toffee, sau sticky toffee pudding, este un desert englezesc clasic facut din blaturi umede si dulci pe baza de curmale, servite calde sub un sos bogat de caramel.<\/strong> In versiunea de mai jos totul este vegan si de post: untul, laptele si sosul de caramel sunt facute integral din ingrediente vegetale, fara ca desertul sa piarda ceva din textura aceea lipicioasa si fina care il face celebru. Iar cum Regatul Unit este o tara cu o istorie complexa si o populatie diversa, la fel se poate spune si despre bucataria lor traditionala, inclusiv despre multitudinea de budinci minunate pe care le-au daruit lumii intregi. Dupa ce am scris despre <strong><a href=\"https:\/\/gourmandelle.com\/ro\/budinca-yorkshire\/\">budinca Yorkshire<\/a><\/strong>, am inceput sa observ niste lucruri care se repeta: inca din vremuri demult, englezii au inventat si consumat o multitudine de feluri de budinca, de la retetele clasice cu paine si unt pana la cele mai complexe, cum ar fi budinca de curmale.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Povestea din spatele acestui desert<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta ar fi fost inventata in anii &#8217;70 de un om pe nume Francis Coulson, care a servit-o prima oara la hotelul sau, Sharrow Bay Country. Poate suna ca o poveste complicata, dar in general cele mai bune retete din lumea asta nu sunt rezultatul unei singure persoane, iar eu cred asta cu tarie. Sticky toffee pudding a devenit de-a lungul timpului unul dintre cele mai iubite deserturi britanice, iar vestea buna este ca se traduce foarte usor intr-o varianta 100% vegetala.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce ingrediente iti trebuie pentru budinca toffee<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredientele se impart in doua parti: aluatul pentru budinci si sosul de caramel. Cateva lucruri de stiut inainte sa incepi:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Curmalele<\/strong> sunt inima desertului. Ele dau dulceata naturala, umezeala si acea culoare inchisa, caramelizata. Foloseste curmale fara samburi si, daca sunt mai uscate, inmoaie-le bine in lapte inainte de a le mixa.<\/li><li><strong>Piureul de mere<\/strong> tine loc de ou in aluat: leaga compozitia si o pastreaza fragede fara sa aiba gust dominant.<\/li><li><strong>Untul vegan<\/strong> si <strong>laptele de migdale<\/strong> inlocuiesc untul si laptele obisnuit din reteta clasica, iar rezultatul ramane la fel de bogat.<\/li><li><strong>Condimentele<\/strong> (scortisoara, nucsoara, ghimbir) dau caldura specifica desertului. Cand incalzesti curmalele in lapte, fibrele lor se inmoaie si elibereaza zaharurile naturale, iar dupa mixare formeaza o baza umeda care tine blatul lipicios din interior, chiar si dupa coacere. Grasimea din untul vegan topit impreuna cu zaharul brun creeaza o structura fina, iar piureul de mere adauga umezeala si ajuta compozitia sa se lege in lipsa oului. Practic, obtii un blat care nu se usuca, exact asa cum trebuie sa fie acest desert.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum prepari budinca toffee pas cu pas<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta are doi pasi principali: blaturile si sosul. Incepe prin a incalzi cuptorul la 180\u00b0C. Incalzeste curmalele cu laptele intr-o tigaie mica timp de aproximativ 5 minute, pana se inmoaie, apoi mixeaza-le pana devin piure. Adauga piureul de mere si continua sa mixezi. Separat, topeste zaharul brun, siropul de artar si untul vegan intr-o tigaie, apoi amesteca-le cu piureul de curmale. Combina faina cu praful de copt si condimentele, incorporeaza-le in compozitia umeda, imparte aluatul intr-o tava de briose unsa si coace 30 de minute sau pana cand trece testul scobitorii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Intre timp prepara sosul de caramel: topeste zaharul brun, untul vegan si siropul de artar intr-o tigaie, apoi adauga vanilia si laptele de cocos, amestecand pana se ingroasa usor. Nu tine budincile prea mult in cuptor de teama ca nu sunt coapte.<\/li><li><strong>Serveste-le calde.<\/strong> Sticky toffee pudding se bucura cel mai bine cald, cand sosul se scurge in blat. Rece isi pierde din farmec, dar se reincalzeste usor.<\/li><li><strong>Ajusteaza dulceata sosului dupa gust.<\/strong> Daca iti place mai putin dulce, redu putin zaharul brun din sos si lasa curmalele din blat sa faca treaba.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce se potriveste si cum o servesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Budinca toffee este delicioasa simpla, doar cu sosul ei de caramel, dar merge minunat si alaturi de o cupa de inghetata vegetala rece sau o lingura de frisca de cocos, care echilibreaza dulceata calda a desertului. Pentru servire, incalzeste budincile cateva secunde la microunde sau in cuptor, apoi toarna sosul cald peste ele: vor reveni la textura lipicioasa initiala. Aluatul si sosul se pot prepara si cu o zi inainte, ceea ce face reteta perfecta pentru o masa festiva cand vrei sa ai desertul gata din timp. Daca vrei sa explorezi mai mult acest univers, iti recomand si <strong><a href=\"https:\/\/gourmandelle.com\/ro\/budinca-de-paine\/\">budinca de paine<\/a><\/strong> clasica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca incerci aceasta budinca toffee, spune-mi in comentarii cat de lipiciosi ti-au iesit blaturile si daca ai ajustat dulceata sosului dupa gustul tau.
