Nori-ul da gustul de mare, iar toful afumat aduce textura densa care imita pestele. Reteta este mult mai veche decat ati putea crede, facandu-si aparitia pentru prima data in 1860, iar astazi exista mii de restaurante cu aceasta tematica in Anglia, numite <em>chippies<\/em> sau <em>chippers<\/em>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru reteta mea de fish and chips vegan, de post, am folosit unul dintre cei mai buni inlocuitori pentru carnea de peste: tofu afumat. Combinat cu algele nori, capata exact acel gust de mare pe care il astepti de la preparatul clasic, fara niciun ingredient de origine animala.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> este inima retetei. Afumarea ii da o aroma savuroasa, iar textura ferma rezista bine la prajit si nu se destrama in aluat. Inainte sa-l folosesti, scoate cat mai multa apa din el: aseaza feliile intre doua prosoape de bucatarie si apasa usor. Cu cat e mai uscat, cu atat aluatul se prinde mai bine si iese mai crocant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Foile de alge nori<\/strong> sunt trucul care aduce gustul de mare. Le tai pe masura feliilor de tofu si imbraci fiecare felie pe ambele parti. Un strop de suc de lamaie pe nori il face lipicios si il ajuta sa adere la tofu, asa ca nu sari peste acest pas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Berea<\/strong> este secretul aluatului crocant. Dioxidul de carbon din bere si bicarbonatul de sodiu creeaza bule care fac crusta usoara si aerata, nu densa si grea. Foloseste berea rece direct din frigider: contrastul dintre aluatul rece si uleiul incins da cea mai crocanta crusta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de naut<\/strong> si <strong>taratele de psyllium<\/strong> leaga aluatul fara oua. Asaza-le pe un singur strat, fara sa se suprapuna, ca sa devina crocante peste tot.<\/li>\n<li><strong>Verifica temperatura uleiului inainte sa prajesti.<\/strong> Daca arunci putin aluat si se ridica imediat la suprafata cu bule mici, e gata. Uleiul prea rece imbiba tofu in grasime, iar cel prea fierbinte arde aluatul inainte sa se faca.<\/li>\n<li><strong>Usuca bine feliile de tofu.<\/strong> Apa ramasa in tofu face ca aluatul sa alunece si stropeste uleiul. Tofu uscat = aluat lipit si crusta crocanta.<\/li>\n<li><strong>Prajeste in transe mici.<\/strong> Daca pui prea multe felii odata, temperatura uleiului scade brusc si aluatul iese moale. Lasa loc intre bucati.<\/li>\n<li><strong>Stii ca e gata cand aluatul devine auriu si crocant<\/strong>, in jur de un minut. Daca preferi o garnitura mai dulce, incearca-i ca <strong><a href=\"https:\/\/gourmandelle.com\/ro\/cartofi-dulci-prajiti-la-cuptor\/\">cartofi dulci prajiti la cuptor<\/a><\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aluatul cu bere il poti inlocui cu apa minerala rece, daca vrei o reteta complet fara alcool. Bulele de la apa carbogazoasa fac aproape acelasi lucru ca berea. Pentru gustul de mare, sosul de &#8220;peste&#8221; vegan facut in casa este optional, dar completeaza frumos preparatul. Daca tii o <strong><a href=\"https:\/\/gourmandelle.com\/ro\/dieta-vegana\/\">dieta vegana<\/a><\/strong> stricta, verifica eticheta berii, pentru ca unele sunt limpezite cu produse de origine animala.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Fish and chips vegan este cel mai bun servit imediat, cat aluatul e crocant si cald. Daca iti raman portii, pastreaza-le la frigider intr-un recipient inchis pana la doua zile. Reincalzeste-le in cuptor sau in friteuza cu aer cald la 180C cateva minute, ca sa redevina crocante. Microundele inmoaie aluatul, asa ca evita-le.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Poti pregati cartofii din timp si feliile de tofu invelite in nori le poti tine la frigider cateva ore, gata de prajit. Aluatul, in schimb, il prepari abia inainte sa prajesti: berea isi pierde bulele si crusta nu mai iese la fel de aerata. Daca vrei sa servesti totul cu o garnitura proaspata, un <strong><a href=\"https:\/\/gourmandelle.com\/ro\/pate-cremos-de-linte-rosie\/\">pate cremos de linte rosie<\/a><\/strong> merge surprinzator
