Sunt 100% vegane, fara carne si fara grasimi animale, dar la fel de aromate si satioase ca varianta traditionala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru mine, nicio masa de Craciun sau de Revelion nu este completa fara sarmale. La noi, in Romania, ele sunt nelipsite de la ocaziile speciale, de la Craciun si Revelion pana la nunti, iar varianta de post mi-a permis sa le pun pe masa si in posturile lungi de peste an, fara sa renunt la gustul cu care am crescut.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le gatesc de obicei la cuptor, asa cum se faceau si la soba pe vremuri, pentru ca acolo se petrece magia: fiertul lung si bland lasa varza sa se inmoaie complet si orezul sa absoarba toata aroma de ciuperci si condimente. ciupercile Champignon, tocate fin in robot, dau umpluturii o textura densa si un gust adanc, savuros, care imita perfect senzatia de &#8220;plin&#8221; a sarmalelor cu carne.<\/li>\n<li><strong>Usor de digerat<\/strong> &#8212; fara grasimi animale si fara carne grasa, raman mult mai usoare decat sarmalele clasice, ideale dupa o masa de sarbatoare deja incarcata.<\/li>\n<li><strong>Perfecte de pregatit in avans<\/strong> &#8212; gustul lor se intensifica a doua zi, asa ca le poti face inainte si scoti din stresul gatitului in ziua mare.<\/li>\n<li><strong>Cu orez brun<\/strong> &#8212; folosesc orez brun cu bob rotund in loc de orez alb, pentru mai multe fibre si o textura cu mai mult corp in umplutura.<\/li>\n<li><strong>Tradititionale, dar de post<\/strong> &#8212; pastreaza varza murata, boiaua si frunzele de dafin care fac sarmalele sa fie sarmale, doar ca intr-o forma potrivita pentru zilele de post.<\/li>\n<li><strong>Se gatesc singure la cuptor<\/strong> &#8212; alege o capatana mare, cu frunze intregi si elastice, nu sfaramicioase. Cand cumperi varza murata la butoi, gusta zeama: trebuie sa fie acrisoara si curata, nu prea sarata. Daca varza e foarte sarata, clateste frunzele in apa rece inainte de a le umple, altfel sarmalele ies prea sarate. Frunzele groase de la baza capatanii sunt cele mai bune pentru rulat, fiindca nu se rup.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile Champignon<\/strong> &#8212; sunt inima acestei umpluturi de post. Cumpara ciuperci ferme, cu palaria inchisa si fara pete maronii; cele proaspete au un miros placut, de pamant, nu intepator. Tocate fin in robotul de bucatarie si sotate bine, ele isi lasa apa si se concentreaza intr-o pasta savuroasa care da umpluturii gustul acela &#8220;umami&#8221; specific.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orezul brun cu bob rotund<\/strong> &#8212; bobul rotund este alegerea potrivita pentru sarmale fiindca elibereaza amidon si leaga umplutura. Tine minte ca orezul nu trebuie gatit complet inainte: il pui la inmuiat doar 15 minute si il fierbi partial, fiindca se va mai umfla la cuptor. Daca il gatesti de tot de la inceput, va iesi sfaramat si moale dupa fierberea lunga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcovii<\/strong> &#8212; ii dau pe razatoarea mica sau ii proceseaza impreuna cu ciupercile, ca sa se topeasca in umplutura si sa aduca un dulce natural care echilibreaza aciditatea verzei murate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de tomate<\/strong> &#8212; se adauga la final, deasupra sarmalelor, cu o jumatate de ora inainte de a le scoate din cuptor. Asa isi pastreaza prospetimea si culoarea vie, fara sa se acreasca de la fierberea lunga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8212; boiaua dulce, cimbrul, coriandrul macinat, foile de dafin si mararul proaspat sunt cele care transforma o umplutura simpla intr-una de sarmale adevarate. Lasa-l usor crocant, fiindca se va umfla la cuptor; daca il gatesti de la inceput, sarmalele ies cu umplutura papoasa.<\/li>\n<li><strong>Soteaza bine ciupercile.<\/strong> Lasa pasta de ciuperci si morcov la foc pana isi lasa apa si aceasta se evapora aproape complet (in jur de 10 minute). Stii ca e gata cand amestecul s-a inchis la culoare si miroase intens, a ciuperci rumenite &#8212; acolo se ascunde toata aroma.<\/li>\n<li><strong>Taie cotorul tare al frunzei.<\/strong> Partea groasa din mijlocul fiecarei frunze de varza se subtiaza cu cutitul; altfel sarmaua nu se ruleaza frumos si ramane tare in mijloc.<\/li>\n<li><strong>Captuseste fundul cratitei.<\/strong> Pune frunzele rupte sau partile tari pe fundul cratitei. Ele protejeaza sarmalele de la baza sa nu se arda si dau zeama mai gustoasa.<\/li>\n<li><strong>Verifica apa la fiecare jumatate de ora.<\/strong> La cuptor, lichidul scade. Le poti reincalzi la cuptor, acoperite, cu putina apa in cratita ca sa nu se usuce. Se congeleaza foarte bine: lasa-le sa se raceasca complet, aseaza-le in straturi cu zeama lor si tin pana la 3 luni la congelator. Le poti pregati linistita cu o zi inainte de masa de sarbatoare, exact ce iti trebuie cand ai cuptorul ocupat cu alte feluri.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac sarmalele de post, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/sarmale-in-varza-rosie\/\">sarmalele in varza rosie<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/sarmalute-vegetariene-in-foi-de-vita\/\">sarmalutele vegetariene in foi de vita<\/a>. Le servesc adesea alaturi de o portie de <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-mamaliga\/\">mamaliga<\/a>, asa cum se obisnuieste la noi.<\/p>\n\n\n<div id=\"recipe\"><\/div><div
