Au o textura densa, fibroasa, surprinzator de apropiata de cea a carnatilor clasici, dar fara niciun produs de origine animala. Nu a fost cazul. Secretul nu sta doar in gluten, ci in combinatia cu fasolea alba si aquafaba, care ii dau o textura mai blanda si mai naturala, nu acel cauciuc tare cu care toata lumea asociaza glutenul de grau gatit prost.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Va recomand sa incercati aceasta reteta de carnati de post data viitoare cand aveti pofta de o portie de carnati sanatosi. Eu ii fac in serii mari, ii tin la frigider si ii prajesc dimineata, la micul dejun, sau ii pun langa o garnitura simpla de cartofi si muraturi. Cauta-l sub denumirea de &#8220;gluten vital de grau&#8221; sau &#8220;vital wheat gluten&#8221; &#8212; e o pudra fina, bej, cu un continut de proteine de peste 75%. Nu il confunda cu faina obisnuita pentru paine, care contine mult mai putin gluten si nu va da aceeasi structura. Cu cat il framanti mai mult, cu atat carnatii ies mai tari, asa ca amesteca doar pana se leaga aluatul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fasole alba piure<\/strong> imblanzeste textura glutenului si aduce cremozitate si proteine in plus. Foloseste fasole bine fiarta, scursa, pasata pana la o pasta neteda &#8212; daca raman bucati intregi, aluatul nu se leaga uniform. Poti folosi fasole din conserva, bine clatita, ca sa scapi de excesul de sare si de gustul de zeama.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Aquafaba<\/strong> este apa de la conserva de naut, acel lichid vascos pe care multi il arunca degeaba. El leaga aluatul si tine locul oualor intr-o reteta vegana. Cauta o aquafaba mai groasa, usor siropoasa &#8212; daca e prea apoasa, lasa conserva la frigider cateva ore ca sa se ingroase, sau redu putin lichidul la foc mic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de naut<\/strong> ajuta la legarea aluatului si adauga un plus de proteine si o aroma usor de leguminoasa. E o faina densa, asa ca o lingura e suficienta &#8212; nu exagera, altfel carnatii devin sfaramiciosi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> (drojdie nutritiva) dau acea aroma savuroasa, usor branzoasa si &#8220;umami&#8221; care lipseste de obicei din mancarea de post. Nu confunda cu drojdia de panificatie &#8212; aceasta nu creste si nu dospeste, ci e doar pentru gust si pentru aportul de vitamine din grupul B.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia afumata<\/strong> este ingredientul care face diferenta intre niste carnati fazi si unii cu adevarat savurosi. Ea imita gustul afumat al carnatilor traditionali fara afumare reala. Cauta boiaua afumata spaniola (pimenton) si pastreaz-o intr-un loc intunecat, ca sa nu isi piarda aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimente pentru carnati<\/strong> si <strong>mixul de condimente italiene<\/strong>, alaturi de usturoi, praf de ceapa, chimion, coriandru, chimen si sos de soia, construiesc profilul aromatic complex. Sosul de soia adauga sare si umami, asa ca echilibreaza restul de sare in functie de cat de sarat e el.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu framanta prea mult aluatul.<\/strong> Glutenul se dezvolta cu cat amesteci mai mult, iar daca exagerezi, carnatii ies tari ca de cauciuc. Amesteca doar pana ingredientele sunt incorporate si aluatul devine elastic.<\/li>\n<li><strong>Inveleste bine carnatii in folie.<\/strong> Ruleaza-i strans si prinde capetele ferm, ca niste bomboane &#8212; daca folia se desface in apa, carnatii se umfla si isi pierd forma. Asta e greseala cea mai frecventa la prima incercare.<\/li>\n<li><strong>Fierbe-i la foc mic, nu in clocot puternic.<\/strong> Apa trebuie sa fiarba abia mocnit. Clocotul agresiv face suprafata buretoasa si poate rupe folia. Stii ca sunt gata cand devin fermi la atingere prin folie, dupa aproximativ jumatate de ora.<\/li>\n<li><strong>Lasa-i la frigider peste noapte.<\/strong> Pasul asta nu e optional. Racirea fermeaza textura si ii face mult mai usor de feliat si de prajit. Carnatii prajiti direct dupa fierbere sunt prea moi.<\/li>\n<li><strong>Prajeste-i pana se rumenesc bine.<\/strong> Crusta aurie de la tigaie e cea care aduce gustul final. De fapt, reteta este gandita ca sa fie facuta in avans: dupa fierbere se racesc si stau peste noapte la frigider inainte sa fie prajiti. Asa ai mereu o portie de proteine pregatita pentru zilele aglomerate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru pastrare mai lunga, ii poti congela dupa fierbere si racire. Inveleste-i individual si tine-i la congelator pana la doua-trei luni, apoi dezgheata-i la frigider inainte de a-i praji.
