Fierbi cartofii in coaja, ii faci piure, ii legi cu faina si tarate de psyllium, apoi inchizi in fiecare chifteluta o umplutura calita de ciuperci si ceapa. Le prajesti pana se rumenesc. Sunt sigura ca toti stim ce este acela un cotlet: o bucata de carne fara os, taiata subtire si de obicei gatita in tigaie. Subtirimea cotletului se obtine, de regula, prin presarea bucatii de carne pana ajunge la o grosime uniforma, iar cotletele sunt adesea date prin pesmet inainte de a fi gatite. Preparatul a evoluat insa atat de mult incat nu mai este musai sa contina carne, asa ca eu am ales un nume mai potrivit: chiftele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu am ales sa ma inspir mai mult din bucataria ruseasca, in care aceste chiftele de cartofi se numesc <em>draniki<\/em>. In opinia mea, chiftelutele de cartofi sunt un fel de mancare minunat pentru cand vrei sa te relaxezi cu ceva bun. Umplutura de ciuperci o prepar inabusind ciupercutele intr-o tigaie impreuna cu ierburile voastre favorite &#8212; recomand patrunjelul, merge de minune in aceasta reteta!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cand sa faci reteta asta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Aceste chiftele cu cartofi si ciuperci sunt de obicei servite ca gustare de dupa-amiaza, la o ceasca de ceai. Le poti pune insa si ca garnitura alaturi de orez cu legume sau linte, atunci cand vrei ceva mai consistent pe masa. Ii fierb intregi, cu coaja, nu taiati si curatati. Asa absorb mult mai putina apa, iar piureul iese mai uscat si mai usor de modelat in chiftele care nu se desfac in tigaie. Foloseste cartofi cu continut mai mare de amidon, genul cei pe care ii folosesti la piure, pentru ca leaga mai bine compozitia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile<\/strong> formeaza umplutura. Pe masura ce se calesc, elibereaza apa, iar gustul lor se concentreaza si devine mai intens si mai dulce. De aceea le gatesc pana se evapora tot lichidul &#8212; o umplutura prea umeda inmoaie aluatul din interior. Toaca-le fin, ca sa poti inchide usor chifteluta in jurul lor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> se caleste prima, un minut, inainte de ciuperci. Asa apuca sa-si piarda din asprime si sa devina dulceaga, fara sa ramana cruda in mijlocul umpluturii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina si taratele de psyllium<\/strong> sunt cele care leaga piureul. Psyllium-ul absoarbe umezeala si formeaza un gel care tine compozitia laolalta, exact rolul pe care l-ar avea ouale. Daca preferi varianta vegetariana, poti inlocui cele 4 linguri de tarate de psyllium cu 2 oua mari, batute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjelul proaspat<\/strong> tocat este ierbul meu preferat aici. Un piure prea apos face chiftele care se sparg in tigaie.<\/li>\n<li><strong>Lasa compozitia o ora la frigider.<\/strong> Pasul asta nu este optional. Aluatul rece se intareste, se modeleaza mult mai usor si isi tine forma cand ajunge in ulei.<\/li>\n<li><strong>Gateste umplutura pana se evapora lichidul.<\/strong> Stii ca ciupercile sunt gata cand nu mai ramane apa in tigaie si incep sa se rumeneasca usor. O umplutura umeda inmoaie chifteaua din interior.<\/li>\n<li><strong>Presara faina pe blat inainte sa modelezi.<\/strong> Asa aluatul nu se lipeste de maini si poti inchide marginile curat peste umplutura.<\/li>\n<li><strong>Nu intoarce chiftelele prea devreme.<\/strong> Lasa-le cate aproximativ 5 minute pe fiecare parte, la foc mediu. Le incalzesti cel mai bine intr-o tigaie sau la cuptor, ca sa-si recapete crusta &#8212; la microunde se inmoaie. Compozitia de cartofi se preteaza si la pregatit in avans: o poti tine la rece pana a doua zi, iar racirea aceea lunga doar o ajuta sa se modeleze mai usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac chiftelutele cu ciuperci, incearca si aceste <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-ciuperci-canepa\/\">chiftelute de ciuperci cu canepa<\/a> sau, pentru ceva mai consistent, aceste <a href=\"https:\/\/gourmandelle.com\/ro\/chiftele-de-vinete-cu-ciuperci\/\">chiftele de vinete cu ciuperci<\/a>.
