Il faci in aproximativ 20 de minute, are gustul sarat-afumat pe care il asteptam de la bacon si nici o urma de carne. Este acelasi sos marinat pe care il folosesc in mai toate retetele de bacon vegan de pe blog. Poti sa experimentezi un pic cu ingredientele, dar eu am folosit zeama de lamaie, sirop de agave, paprika dulce, sos de soia, praf de usturoi si alte cateva ingrediente &#8220;magice&#8221; care dau gustul acela de afumatura.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce pui in marinada afumata<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Marinada este inima acestei retete, asa ca merita sa intelegi ce face fiecare ingredient. Sosul de soia aduce sarea si nota &#8220;umami&#8221; care imita gustul carnii. Siropul de agave da un pic de dulceata si ajuta feliile sa se caramelizeze la margini. Fumul lichid este ingredientul care transforma vanata in &#8220;bacon&#8221; &#8212; fara el ai doar vinete condimentate, cu el capeti aroma de afumatura. Paprika dulce da culoarea rosiatica si un gust cald, iar zeama de lamaie taie din dulceata si echilibreaza totul. Praful de usturoi, chimionul si piperul negru completeaza profilul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand alegi vanata, cauta una ferma, cu coaja lucioasa si fara pete moi &#8212; se va felia mai frumos si nu va lasa prea multa apa la copt. Feliile subtiri, de grosime cat mai uniforma, se coc egal si au cele mai multe sanse sa iasa crocante.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum obtii felii crocante, nu moi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cel mai frecvent &#8220;esec&#8221; la baconul din vinete e sa iasa moale in loc de crocant, iar cauza aproape mereu e aceeasi: feliile prea groase sau prea inghesuite pe tava. Taie vanata cat de subtire poti si asaza feliile intr-un singur strat, fara sa se atinga, ca sa aiba loc aburul sa iasa. Prima coacere, inainte de a aplica marinada, ajuta feliile sa isi lase o parte din apa, iar a doua coacere le usuca si le caramelizeaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Iti recomand sa aplici sos din plin, deoarece vanata are gustul ei specific pe care ar trebui sa il acoperi cu &#8220;aroma&#8221; de bacon. Foloseste o pensula de bucatarie sau spatele unei linguri ca sa prinzi bine fiecare felie. Doneness-ul il vezi cu ochiul: feliile sunt gata cand marginile s-au inchis la culoare, sunt aurii si se simt crocante la atingere. Merge minunat intr-un sandwich sau intr-un avocado toast la micul dejun, presarat peste o supa crema sau intr-un bol de dimineata. Daca vrei sa ramai in zona vinetelor, il poti aseza langa un <a href=\"https:\/\/gourmandelle.com\/ro\/burger-de-vinete\/\">burger de vinete<\/a> sau alaturi de o <a href=\"https:\/\/gourmandelle.com\/ro\/pizza-vegana-fara-gluten-vinete-dovlecei\/\">pizza vegana fara gluten cu vinete si dovlecei<\/a>. Pentru un platou de aperitive, il combini frumos cu un <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-vinete-marinate-la-borcan\/\">humus cu vinete marinate<\/a> sau cu o <a href=\"https:\/\/gourmandelle.com\/ro\/crema-de-vinete-coapte-mousse\/\">crema de vinete coapte<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut ideea de &#8220;bacon&#8221; fara carne, ai si alte variante pe blog din care sa alegi: <a href=\"https:\/\/gourmandelle.com\/ro\/bacon-din-cocos\/\">bacon din cocos<\/a>, <a href=\"https:\/\/gourmandelle.com\/ro\/bacon-din-ciuperci\/\">bacon din ciuperci<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/bacon-din-tofu\/\">bacon din tofu<\/a>. Fiecare are textura si gustul lui, dar folosesc aceeasi logica a marinadei afumate.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum il pastrezi si il faci din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Baconul din vinete se pastreaza cel mai bine intr-un recipient inchis, la frigider, doua-trei zile. Cu timpul isi pierde din crocanta, asa ca daca il faci din timp, il poti reincalzi cateva minute in cuptor sau intr-o tigaie uscata ca sa isi revina textura. Nu iti recomand cuptorul cu microunde &#8212; il inmoaie. Marinada o poti pregati separat, cu o zi inainte, si o tii la rece, ca sa fii gata sa ungi feliile in ziua in care coci.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Va recomand cu desavarsire sa incercati aceasta reteta acasa, fie ca doriti sa incepeti o <a href=\"https:\/\/gourmandelle.com\/ro\/dieta-vegana\/\">dieta vegana<\/a>, fie ca vreti pur si simplu o varianta de bacon mai putin grasa. Daca o faci, spune-mi in comentarii cat de subtire ai reusit sa feliezi vanata si daca ai iesit cu marginile crocante &#8212; si nu uita sa lasi si o nota retetei ca sa stiu ce parere
