{"id":25507,"date":"2019-02-20T06:18:27","date_gmt":"2019-02-20T04:18:27","guid":{"rendered":"https:\/\/gourmandelle.com\/?p=25507"},"modified":"2026-06-12T14:53:44","modified_gmt":"2026-06-12T12:53:44","slug":"stroganoff-de-ciuperci","status":"publish","type":"post","link":"https:\/\/gourmandelle.com\/ro\/stroganoff-de-ciuperci\/","title":{"rendered":"Stroganoff de ciuperci"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Stroganoff de ciuperci este o alternativa vegana la clasicul Beef Stroganoff rusesc: ciuperci brune sotate intr-un sos cremos pe baza de lapte de cocos, parfumat cu usturoi, cimbrisor, chimion si un strop de vin alb sec. Se gateste in mai putin de 30 de minute si se serveste peste tagliatelle proaspat fierte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand am vrut prima data sa transform Stroganoff-ul intr-o reteta de care sa ma pot bucura fara carne, am pornit de la intrebarea care da numele acestui preparat. Numele de &#8220;Stroganoff&#8221; descrie intocmai felul in care se prepara carnea de vita in reteta traditionala, asa ca am pastrat tehnica si am inlocuit doar ingredientul principal. Pentru mine, ciupercile sunt alegerea perfecta aici: au acea textura &#8220;carnoasa&#8221; si gustul umami care fac sosul sa para bogat, fara sa fie greu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cea mai buna parte la aceasta reteta, cred eu, este faptul ca poti alege chiar tu ce ciuperci sa folosesti. Eu am folosit supa de legume in loc de cea de vita si lapte de cocos in loc de smantana, exact ca atunci cand vrei o varianta mai usoara sau complet vegetala. Cand le cumperi, alege exemplare ferme, cu palaria inchisa, fara pete umede sau lucioase. Nu le spala sub jet de apa, pentru ca absorb lichidul ca un burete si nu se mai rumenesc &#8212; sterge-le doar cu un servetel umed sau o periuta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de cocos<\/strong> &#8212; el inlocuieste smantana si da cremozitatea sosului. Foloseste lapte de cocos la conserva, nu bautura de cocos pentru cafea, care e prea apoasa. Daca vrei un sos si mai bogat, ia partea groasa de la suprafata conservei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tagliatelle<\/strong> &#8212; benzile late de paste prind bine sosul cremos, de aceea sunt alegerea mea aici. Daca ai nevoie de varianta fara gluten, foloseste paste fara gluten si fierbe-le al dente, pentru ca tind sa se inmoaie mai repede.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vin alb sec<\/strong> &#8212; doar un strop, dar deglazeaza tigaia si ridica toate sucurile rumenite de pe fund, adaugand aciditate care echilibreaza grasimea cocosului. Alege un vin sec pe care l-ai bea si tu; cel dulce ar dezechilibra sosul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrisor si chimion macinat<\/strong> &#8212; cimbrisorul proaspat aduce o nota lemnoasa care merge perfect cu ciupercile, iar chimionul macinat da caldura discreta tipica preparatelor de inspiratie est-europeana. Adauga cimbrisorul devreme, ca sa apuce sa-si elibereze aroma in sos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi si ceapa<\/strong> &#8212; baza de aroma. Ceapa taiata felii se soteaza pana se inmoaie si devine dulceaga, iar usturoiul zdrobit se adauga odata cu ea, fara sa-l lasi sa se arda, altfel devine amar.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu aglomera tigaia cu ciuperci.<\/strong> Daca pui prea multe odata, elibereaza apa si se fierb in loc sa se rumeneasca. Vrei sa le auzi sfaraind si sa capete margini aurii &#8212; asa stii ca s-au caramelizat si au gust, nu ca au fiert.<\/li>\n<li><strong>Lasa vinul sa se evapore complet.<\/strong> Dupa ce adaugi vinul si cimbrisorul, gateste pana cand surplusul de lichid s-a evaporat, aproximativ 4 minute. Daca ramane alcool, sosul are un gust crud, intepator.<\/li>\n<li><strong>Gateste faina inainte de a adauga lichidul.<\/strong> Presara faina peste ciuperci si amesteca un minut, pana se incorporeaza, ca sa-i dispara gustul de crud. Abia cand amestecul incepe sa se ingroase adaugi supa si laptele de cocos.<\/li>\n<li><strong>Sincronizeaza pastele cu sosul.<\/strong> Fierbe tagliatelle exact cat construiesti sosul, ca sa le servesti proaspat fierte. Te sfatuiesc sa tii sosul separat de paste, daca stii ca vrei sa pastrezi resturi: pastele absorb sosul in timp si se inmoaie. La reincalzire, foloseste foc mic si adauga o lingura-doua de apa sau lapte de cocos, pentru ca sosul se ingroasa la rece. Eu nu recomand congelarea, pentru ca sosurile pe baza de cocos se pot taia la decongelare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu ciuperci, mai gasesti pe blog si <a
