Sunt satioase, bogate in proteine vegetale si se potrivesc la pranz, la cina sau intr-un Buddha bowl.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imagineaza-ti scenariul clasic: se apropie cina in familie, vrei sa gatesti ceva gustos si satios pentru toata lumea, dar la masa ai unul sau mai multi vegani. Aceste chiftele sunt solutia mea preferata exact pentru momentele astea, pentru ca multumesc pe toata lumea, fie ca tin sau nu o dieta vegana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul, pentru mine, este pasul cu sosul. Dupa ce le prajesc, le las sa fiarba incet in sosul de rosii cu ardei copt si apoi le tin la rece: mediul rece face sosul sa se infuzeze in chiftele, ca si cum ar fi fost mereu parte din ele. Asa capata gustul acela rotund, ca si cum le-ai fi gatit de cu o zi inainte. Si, ca de obicei, nu uitati sa-mi spuneti si mie cum v-au iesit si, mai ales, de ce anume v-au adus aminte.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" Dupa ce le tii la rece, sosul de rosii cu ardei copt patrunde in interior si gustul devine rotund, ca si cum ar fi fost mereu parte din ele.<\/li>\n<li><strong>Sunt bogate in proteine vegetale.<\/strong> Fasolea neagra si faina de ovaz dau o masa satioasa, care tine de foame mult timp.<\/li>\n<li><strong>Se fac din ingrediente de camara.<\/strong> O conserva de fasole, niste ovaz rasnit si condimente de baza sunt aproape tot ce iti trebuie.<\/li>\n<li><strong>Sunt versatile.<\/strong> Le servesti ca fel principal, intr-un bowl, intr-o salata sau ca aperitiv cald, decorate cu Eu folosesc o conserva de 400 g, bine scursa: e important sa o lasi sa se scurga bine, pentru ca lichidul in plus inmoaie compozitia si face chiftelele sa se desfaca la prajit. Daca gatesti fasole uscata, las-o sa se raceasca si scurge-o complet inainte de a o pasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de ovaz<\/strong> este liantul si structura compozitiei. Eu o fac in casa, rasnind 180 g de ovaz in blender pana devine pudra fina. Faina de ovaz absoarbe umezeala si leaga totul, asa ca daca compozitia ramane prea moale, mai poti adauga putina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> tin loc de ou si dau coeziune compozitiei vegane. Doua linguri de psyllium absorb apa si formeaza un gel care leaga ingredientele, exact ca un ou batut. Pentru varianta vegetariana poti folosi in locul lor un ou.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boiaua afumata<\/strong> este, dupa parerea mea, condimentul vedeta. Ea da acel gust afumat care imita partial savoarea unei chiftele de carne. Cauta boia afumata adevarata (smoked paprika \/ pimenton), nu boia dulce obisnuita, pentru ca diferenta de aroma este uriasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> aduc un gust savuros, usor branzos, care da profunzime compozitiei fara produse lactate. Sunt unul dintre cele mai utile ingrediente in bucataria vegana, asa ca merita sa ai un borcan in camara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de sfecla rosie<\/strong> (sau o sfecla mica gatita) da culoare compozitiei si o nuanta usor dulce-pamantoasa. E un detaliu mic, dar ajuta chiftelele sa arate mai apetisant, mai apropiate de cele clasice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeiul gras rosu copt<\/strong> este sufletul sosului. Coacerea lui concentreaza zaharurile naturale si adauga o dulceata afumata sosului de rosii. Daca il coci tu, lasa-l sa transpire intr-un bol acoperit dupa coacere, ca sa se curete usor de coaja.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile din conserva si pasta de tomate<\/strong> formeaza corpul sosului. Pasta de tomate concentreaza aroma si ingroasa sosul, iar lingura de zahar brun echilibreaza aciditatea rosiilor. Daca fasolea sau compozitia raman moi, chiftelele se desfac in tigaie. Scurge fasolea complet si, daca e nevoie, mai adauga putina faina de ovaz.<\/li>\n<li><strong>Lasa compozitia sa se odihneasca 10 minute.<\/strong> Acest repaus permite fainii de ovaz si psyllium-ului sa absoarba umezeala si sa lege amestecul, asa ca chiftelele se modeleaza mult mai usor si isi tin forma.<\/li>\n<li><strong>Nu le intoarce prea des.<\/strong> Prajeste-le la foc mediu si amesteca-le abia la fiecare doua minute. Daca le misti prea repede, inainte sa se formeze o crusta, se sfarama.<\/li>\n<li><strong>Tine-le la rece dupa gatit.<\/strong> Pasul meu preferat: dupa ce le fierbi in sos, lasa-le la frigider. Mediul rece face sosul sa se infuzeze in chiftele si gustul devine mult mai bun a doua zi.<\/li>\n<li><strong>Gusta sosul inainte de a-l pasa.<\/strong> Echilibreaza zaharul brun cu sarea si aciditatea rosiilor dupa gustul tau, ca sa nu fie nici prea acru, nici prea dulce.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Pentru varianta vegetariana<\/strong>, inlocuieste cele doua linguri de tarate de psyllium cu un ou. Oul leaga la fel de bine compozitia.<\/li>\n<li><strong>Sfecla rosie<\/strong>: poti folosi fie o lingura de pasta de sfecla rosie, fie o sfecla mica gatita, in functie de ce ai la indemana.<\/li>\n<li><strong>Sosul de soia<\/strong> poate fi inlocuit cu tamari, daca ai nevoie de o varianta fara gluten pentru sos. Dupa ce le fierbi in sos, lasa-le sa se raceasca si tine-le la frigider intr-un recipient inchis. Asa cum spuneam, mediul rece face sosul sa se infuzeze in chiftele, deci gustul devine si mai bun dupa o zi.
