Se prepara pe o foaie de aluat congelat, cu ciuperci, zucchini si ceapa rosie calite separat, si iese aurie, satioasa si complet vegana. De aici a pornit, de fapt, pofta mea pentru tartele sarate: ideea ca o coaja crocanta de aluat poate tine inauntru o umplutura calda, consistenta, suficient de bogata cat sa hraneasca pe cineva la pranz, nu doar sa indulceasca finalul mesei. Tarta aceasta cu ciuperci este versiunea mea preferata cand vreau ceva care arata pretentios dar se face fara batai de cap.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ceapa si ciupercile se potrivesc cumva atat de bine in multe din retetele mele &#8212; este o combinatie pur si simplu magica! In reteta de astazi am adaugat si felii de zucchini, care aduc culoare si o textura fina printre ciuperci. Eu una cred ca cel mai bine se potriveste un amestec de mai multe soiuri de ciuperci, pentru ca aduce mai multa profunzime de gust decat un singur fel. Cand le cumperi, alege ciuperci ferme, cu palaria inchisa si fara pete umede sau alunecoase. Important: nu le speli sub jet de apa, ci le stergi cu un servetel umed &#8212; ciupercile absorb apa ca un burete, iar daca se imbiba nu se mai rumenesc, ci fierb in propriul lichid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu moale<\/strong> este baza cremei. Foloseste tofu moale (silken), nu cel ferm pe care il calesti &#8212; doar varianta moale se mixeaza pana la o textura matasoasa, fara granule. El inlocuieste ouale si da umpluturii corpolenta, fara sa adauge gust pronuntat propriu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Caju crud<\/strong> trebuie inmuiat in apa peste noapte. Acest pas nu e optional: inmuierea inmoaie nucile cat sa se transforme intr-o crema fina la robot, fara bucati. Daca ai uitat sa il pui din timp, toarna peste el apa clocotita si lasa-l 20-30 de minute &#8212; merge si asa, chiar daca rezultatul ideal vine din inmuierea lunga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> (nutritional yeast) sunt ingredientul care da gustul de quiche. Au o aroma savuroasa, usor branzoasa si nuca, care lipseste in mod natural dintr-o reteta vegana. Nu ii confunda cu drojdia de paine &#8212; aici e vorba de fulgi inactivi, care nu dospesc nimic, ci doar aromeaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidonul de porumb<\/strong> este liantul care leaga umplutura la cuptor. Cele 3 linguri sunt ce face diferenta intre o crema care ramane moale si una care se inchega in felii ferme, ce se taie curat. Mixeaza-l bine in compozitie ca sa nu ramana cocoloase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zucchini<\/strong> aduce prospetime si culoare. Sau chiar felii de zucchini, cum am facut eu in reteta de astazi &#8212; le calesc separat pana devin aurii, ca sa scape de apa si sa nu inmoaie tarta din interior.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Aluatul de tarta congelat<\/strong> iti scuteste timp. Si eu am ales sa fac la fel, desi pregatitul aluatului de casa este o indeletnicire utila in bucatarie care te va ajuta si in alte situatii. Lasa-l sa se dezghete cat sa il poti intinde fara sa crape.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Inteapa bine aluatul cu furculita<\/strong> inainte sa il bagi la cuptor. Daca sari peste pasul asta, aburul prins dedesubt umfla aluatul si se ridica in mijloc &#8212; intepaturile lasa aburul sa scape si pastreaza fundul plat.<\/li>\n<li><strong>Cale legumele in straturi, nu aglomerat.<\/strong> Pune zucchini intr-un singur strat in tigaie si prajeste cate 4 minute pe fiecare parte; daca le ingramadesti, lasa apa si se fierb in loc sa se rumeneasca. La fel si la ciuperci: au nevoie de spatiu ca sa devina aurii in cele 6 minute.<\/li>\n<li><strong>Mixeaza crema pana e perfect omogena.<\/strong> Stii ca e gata cand nu mai simti niciun granulat de caju intre degete &#8212; daca ramane aspra, mai lasa robotul sa lucreze, altfel umplutura coapta va fi nisipoasa.<\/li>\n<li><strong>Lasa tarta sa se raceasca inainte sa o feliezi.<\/strong> Calda, umplutura e inca moale; pe masura ce se raceste, amidonul si caju se inchega si abia atunci taie felii curate. Se mananca excelent si rece, dar daca o preferi calda o poti reincalzi cateva minute in cuptor, ca sa redevina crocanta foaia (microundele inmoaie aluatul). Poti pregati umplutura si legumele calite cu o zi inainte, le tii separat la rece, iar a doua zi doar asamblezi si coci &#8212; asa imparti munca si ai tarta proaspata exact cand ai nevoie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu ciuperci, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/rulada-de-tofu-cu-ciuperci\/\">rulada de tofu cu ciuperci<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/chec-sarat-fara-gluten-cu-ciuperci\/\">checul sarat fara gluten cu ciuperci<\/a>. Iar pentru o alta tarta sarata in acelasi spirit, da o sansa <a href=\"https:\/\/gourmandelle.com\/ro\/tarta-de-paste-la-cuptor-tofu-fara-gluten\/\">tartei de paste la cuptor cu tofu, fara
