Se face din trei soiuri de ciuperci sotate cu ceapa, usturoi si cimbrisor, legate intr-un sos alb facut din unt, faina si lapte de cocos, totul acoperit cu foietaj presarat cu seminte de susan. Este consistenta cat sa fie fel principal, dar destul de simpla cat sa o faci intr-o seara obisnuita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Daca va plac ciupercile la fel de mult cum imi plac mie, atunci cu siguranta va veti indragosti de aceasta placinta cu ciuperci!<\/em> Asta mi se pare cel mai frumos la <a href=\"https:\/\/gourmandelle.com\/ro\/tag\/placinte\/\">placinte<\/a>: pot fi fie fel principal, fie desert, nu exista limitari sau o regula fixa. Eu personal prefer sa folosesc un amestec, de exemplu ciuperci cremini sau ciuperci de unt, ambele mergand de minune la placinte. Dar pentru reteta de astazi am folosit una dintre combinatiile mele preferate: ciuperci Champignon albe impreuna cu ciuperci Pleurotus. La acestea adaug ciuperci salbatice uscate si rehidratate, care aduc cea mai concentrata aroma de padure din tot vasul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ciupercile shiitake pot merge bine cu ambele soiuri pe care le-am mentionat inainte, dar nu va recomand sa adaugati prea multe soiuri in aceasta combinatie pentru ca placinta ar putea iesi foarte grasa. Cand cumperi ciuperci albe, cauta-le ferme, cu palaria inchisa si fara pete umede. Pleurotus trebuie sa fie elastic la atingere, nu vlaguit. Iar usturoiul, din punctul meu de vedere, face ca totul sa fie mult mai bun in foarte multe retete, dar mai ales in aceasta combinatie pentru placinta cu ciuperci!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum faci sosul alb cremos<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cremositatea placintei vine dintr-un sos alb simplu, facut dupa principiul unui rantas (roux). Topesti untul, adaugi faina si o amesteci pana se incorporeaza, apoi torni incet laptele si apa pastrata de la ciupercile rehidratate. Faina gatita in grasime ingroasa lichidul pe masura ce se incalzeste, asa ca obtii o textura omogena fara cocoloase. Adaugarea lichidului treptat, in timp ce amesteci continuu, este pasul care previne cocoloasele &#8212; nu turna tot laptele odata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu am folosit lapte de cocos din conserva, care da un sos bogat si o aroma fina, dar merge la fel de bine si laptele obisnuit. Nucsoara rasa este detaliul care leaga aromele sosului alb cu ciupercile, asa ca nu o sari. Umplutura fierbinte topeste grasimea din aluat inainte sa apuce sa coaca, iar foietajul iese moale in loc de crocant. Unge foaia cu putin lapte ca sa capete acea culoare aurie frumoasa la cuptor, apoi presara semintele de susan deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Crestaturile facute cu un cutit ascutit la suprafata nu sunt doar decorative &#8212; ele lasa aburul din umplutura sa iasa, asa ca foietajul se umfla uniform si nu crapa pe margini. Coace placinta 25 de minute sau pana cand devine aurie si crusta s-a umflat. Pentru a o reincalzi, foloseste cuptorul incins la 180 grade timp de 10 pana la 15 minute, nu cuptorul cu microunde &#8212; caldura uscata reda foietajului crocanta, in timp ce microundele il inmoaie. Poti pregati umplutura de ciuperci cu o zi inainte si o tii la rece, apoi nu mai ramane decat sa o acoperi cu foietaj si sa coci a doua zi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu ciuperci, ai de unde alege pe blog. Pentru zile cand vrei ceva mai usor, incearca <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-ciuperci\/\">supa crema de ciuperci<\/a> sau niste <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-ciuperci-canepa\/\">chiftelute de ciuperci cu canepa<\/a>. Iar daca esti in cautare de inca un fel de mancare copt la cuptor, <a href=\"https:\/\/gourmandelle.com\/ro\/musaca-de-dovlecei-cu-ciuperci\/\">musacaua de dovlecei cu ciuperci<\/a> merge perfect alaturi de aceeasi crema de ciuperci.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce se serveste<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Fiind cremoasa si consistenta, placinta cu ciuperci cere langa ea ceva proaspat si acrisor care sa echilibreze. O salata verde simpla sau o <a href=\"https:\/\/gourmandelle.com\/ro\/salata-de-ciuperci-cu-maioneza\/\">salata de ciuperci cu maioneza<\/a> taie din bogatia sosului alb.
