Toate acestea merg mana in mana cu amintiri pretioase, avand aerul acela putin melancolic, dulce-acrisor, exact ca gustul pe care il ofera. \ud83d\ude42<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Prajiturile cu lamaie sunt, din punctul meu de vedere, un desert clasic si sofisticat. Aroma lor nu poate fi confundata, insa e subtila si proaspata. Asadar, daca pentru tine desertul trebuie sa fie extrem de dulce si de puternic, e posibil ca aceste patratele cu lamaie sa nu-ti satisfaca pofta. Eu insa le aleg tocmai pentru ca echilibreaza acrisorul cu dulcele si nu te coplesesc niciodata. Cauta faina facuta din migdale curatate de coaja, mai deschisa la culoare si fin macinata; cea din migdale cu coaja iese mai inchisa si mai aspra. Daca o cumperi in punga, verifica sa fie cat mai uscata si fara cocoloase, semn ca nu a stat la umezeala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de ovaz<\/strong> &#8212; da structura blatului si il leaga, completand faina de migdale care, singura, ar fi prea grasa. O poti cumpara gata facuta sau o macini singura din fulgi de ovaz, in robot, pana devine fina ca o faina. Daca vrei reteta complet fara gluten, alege fulgi de ovaz certificati fara gluten.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> &#8212; au rolul de liant si ajuta atat blatul, cat si crema, sa se lege fara oua. Psyllium-ul absoarbe lichidul si formeaza un gel, asa ca inlocuieste exact functia pe care o aveau ouale in varianta clasica. Folosita macinata, se incorporeaza mai uniform decat in forma intreaga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos topit<\/strong> &#8212; leaga blatul si intareste crema dupa racire. Topeste-l la foc foarte mic sau pe baie de aburi, doar pana devine lichid, fara sa-l incingi. La temperatura camerei se solidifica la loc, iar aceasta proprietate ajuta crema sa devina ferma la frigider.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Crema de cocos din conserva<\/strong> &#8212; este inima stratului cremos si ii da bogatia care, la lemon bars clasice, venea din oua si unt. Cauta o conserva cu un continut mare de grasime; cu cat e mai groasa si mai concentrata, cu atat crema iese mai bogata. Nu o confunda cu laptele de cocos, care e mult mai apos si nu ar da aceeasi consistenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Suc de lamaie<\/strong> &#8212; este vedeta retetei si aroma care nu poate fi confundata. Foloseste lamai proaspete, stoarse pe loc, nu suc la sticla, ca sa pastrezi prospetimea acra si vie. Si nu uita sa speli lamaile inainte de a le folosi &#8212; de obicei sunt stropite cu tot felul de substante pe care nu le-ai vrea in mancarurile tale, mai ales daca pui si feliile de deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidonul de porumb<\/strong> &#8212; ingroasa crema atunci cand fierbe si ii da textura aceea de crema de lamaie care se taie frumos. Amestec-o bine inainte sa o pui pe foc, ca sa nu faca cocoloase, si lasa-o sa dea in clocot ca sa-si activeze puterea de ingrosare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de cocos<\/strong> &#8212; aduc o textura usoara si un parfum cald care se potriveste foarte bine cu lamaia. Folosesc fulgi neindulciti ca sa controlez dulceata, dulceata venind din cei 100 g de zahar din crema.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Preseaza bine blatul in tava.<\/strong> Apasa compozitia uniform pe toata suprafata tavii, ca sa nu ramana margini mai subtiri care se ard mai repede. Un fund de pahar te ajuta sa obtii un strat neted si compact.<\/li>\n<li><strong>Coace blatul doar pana se rumeneste usor.<\/strong> Cele 5-10 minute la 180 C sunt suficiente; cand marginile devin aurii, scoate-l. Daca il lasi prea mult, se va usca si va deveni sfaramicios dupa ce adaugi crema.<\/li>\n<li><strong>Fierbe crema pana se ingroasa cu adevarat.<\/strong> Las-o pe foc mediu, amestecand, pana da in clocot si zaharul se dizolva complet, aproximativ 10 minute. Stii ca e gata cand se ingroasa putin si imbraca lingura &#8212; daca o torni prea lichida, nu se va incheaga frumos.<\/li>\n<li><strong>Nu sari peste racirea la frigider.<\/strong> Prajitura are nevoie de cel putin o ora, ideal peste noapte, ca uleiul de cocos si amidonul sa se intareasca. Echilibrul acrisor ramane, dar parfumul devine mai proaspat.<\/li>\n<li><strong>Mai multa lamaie pentru un gust intens<\/strong> &#8212; daca, la fel ca mine, iubesti aciditatea, pastreaza cantitatea de zahar si simte-te libera sa accentuezi aroma de lamaie. Asa obtii niste patratele si mai vii si mai racoritoare.<\/li>\n<li><strong>Decor cu fulgi de cocos sau coaja de lamaie<\/strong> &#8212; pe langa feliile de lamaie din reteta, poti presara fulgi de cocos sau putina coaja rasa de lamaie deasupra, pentru un plus de parfum si un aspect mai festiv.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta prajitura este facuta pentru a fi pregatita din timp. Dupa ce o coci, lasa-o sa se raceasca aproximativ o ora la temperatura camerei, apoi pune-o la frigider cel putin o ora, ideal peste noapte, ca sa se incheaga complet. Pastreaz-o la frigider, intr-un recipient inchis, si o vei avea gata oricand vin musafirii. Datorita uleiului de cocos, ramane ferma cat timp este rece, asa ca o scoti, o tai in patratele si o decorezi cu felii de lamaie chiar inainte de servire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac deserturile vegane si de post racoroase, care se fac din timp, poti incerca si <a href=\"https:\/\/gourmandelle.com\/ro\/halva-raw-vegana\/\">halvaua raw vegana<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/negrese-fara-gluten-vegane-si-fara-zahar\/\">negresele fara gluten, vegane si fara zahar<\/a>.
