Se prepara din cartofi fierti pe jumatate, rasi, amestecati cu ceapa, usturoi, sare si piper, apoi prajiti in ulei de cocos. Probabil ati auzit de hash browns, un fel de mancare pe baza de cartofi cu un nume aproape intraductibil in limba romana. Numele specific de hash browns a luat nastere in Statele Unite ale Americii si a fost mentionat pentru prima data in 1888, de catre autoarea culinara Maria Parloa. Are, asadar, mai bine de o suta de ani de istorie in spate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vreti sa obtineti ceva foarte crocant, rumenit la exterior (asa cum cred eu ca ar trebui ei sa fie), e cel mai bine sa dati cartofii pe razatoare. Exista mai multe variante de a-i prepara, dar eu am ales varianta simpla pentru reteta de astazi. Si, din punct de vedere al sanatatii, cu totii suntem familiari cu reputatia proasta a cartofului, pe care eu sunt convinsa ca nu o merita.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Aceasta reteta e potrivita daca ai nevoie de<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>un mic-dejun consistent care te tine satul pana la pranz, fara sa stai ore in bucatarie;<\/li>\n<li>o reteta de post sau vegana, pentru ca varianta de baza foloseste ulei de cocos, nu unt;<\/li>\n<li>o modalitate de a folosi cartofii pe care ii ai deja in camara, cu ingrediente simple pe care le ai mereu la indemana;<\/li>\n<li>un fel de mancare versatil, pe care il poti servi la mic-dejun, pranz sau ca garnitura crocanta langa o salata;<\/li>\n<li>o reteta rapida pentru cand ai pofta de ceva crocant si auriu, dar nu vrei sa complici lucrurile.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Crocanta la exterior, moale in interior<\/strong> &#8212; secretul sta in rasul cartofilor si in prajirea lor pe foc mediu, ca sa se rumeneasca uniform fara sa se arda.<\/li>\n<li><strong>Ingrediente putine si ieftine<\/strong> &#8212; ai nevoie doar de cartofi, ceapa, usturoi, sare, piper si ulei de cocos. Alege cartofi cu continut mare de amidon, cum sunt cei pentru copt sau prajit, pentru ca dau cea mai crocanta textura. Eu ii fierb doar 5 minute, cat sa devina aproape moi, nu complet fierti &#8212; daca ii lasi prea mult, se sfarama la rasul pe razatoare si nu mai poti forma chiftelutele. Lasa-i sa se raceasca bine inainte de a-i rade, ca sa se manevreze mai usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; jumatate de ceapa tocata marunt aduce dulceata si aroma. Toac-o cat poti de fin, ca sa se distribuie uniform in amestec si sa se gateasca odata cu cartofii, fara bucati crude care raman crocante in mod neplacut.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; doi catei zdrobiti dau profunzime aromei. Zdrobeste-i, nu ii toca, pentru ca usturoiul zdrobit elibereaza mai mult din aroma lui si se incorporeaza mai bine in amestecul de cartofi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos<\/strong> &#8212; alegerea mea pentru varianta vegana si de post. Are un punct de fum ridicat, asa ca rezista bine la prajire si ajuta cartofii sa se rumeneasca frumos. Daca preferi varianta vegetariana, poti folosi unt in loc, care da o aroma mai bogata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sare si piper<\/strong> &#8212; dupa gust. Condimenteaza amestecul de cartofi inainte de prajire si gusta, pentru ca un cartof bland are nevoie de sare ca sa-si scoata aroma in evidenta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu fierbe cartofii prea mult.<\/strong> Cinci minute sunt suficiente, cat sa devina aproape moi. Daca ii fierbi complet, se vor sfarama la ras si amestecul nu se mai leaga in chiftelute.<\/li>\n<li><strong>Lasa-i sa se raceasca inainte de a-i rade.<\/strong> Cartofii calzi se rup si se lipesc de razatoare. Reci, se rad mult mai usor si pastreaza forma firelor.<\/li>\n<li><strong>Amesteca usor.<\/strong> Cand incorporezi ceapa, usturoiul si condimentele, lucreaza cu grija sa nu zdrobesti cartofii rasi &#8212; vrei fire intregi pentru o textura crocanta.<\/li>\n<li><strong>Aplatizeaza bine in tigaie.<\/strong> Foloseste cam doua linguri de amestec pentru fiecare chifteluta, formeaza cercuri si apasa cu o spatula mare. Cu cat sunt mai subtiri, cu atat se rumenesc mai uniform.<\/li>\n<li><strong>Stii ca sunt gata cand<\/strong> marginile devin aurii-maronii si crocante, iar chifteluta se desprinde singura de tigaie. Cartofii crocanti raman deliciosi si asa.<\/li>\n<li><strong>Condimente in plus<\/strong> &#8212; adauga boia dulce, putin chimen sau ierburi proaspete in amestec, pentru o aroma diferita de fiecare data.<\/li>\n<li><strong>Forma de placinta mare<\/strong> &#8212; in loc de chiftelute mici, poti intinde tot amestecul intr-un strat in tigaie si prajeste o singura placinta mare de hash browns, pe care o tai apoi in felii.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Hash browns sunt cei mai buni proaspat prajiti, cat inca sunt crocanti. Daca iti raman, pastreaza-i intr-un recipient inchis in frigider pentru 2-3 zile. Pentru a-i reincalzi si a recapata crocanta, pune-i intr-o tigaie incinsa sau in cuptor, nu la microunde &#8212; microundele ii inmoaie. Poti pregati amestecul de cartofi rasi cu ceapa si usturoi cu cateva ore inainte si sa-l tii la frigider, urmand sa prajesti chiftelutele chiar inainte de servire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu cartofi, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/crochete-de-cartofi\/\">crochetele de cartofi<\/a>, perfecte tot ca garnitura crocanta, sau <a href=\"https:\/\/gourmandelle.com\/ro\/draniki-chiftele-cu-cartofi-si-ciuperci\/\">draniki, chiftelele cu cartofi si ciuperci<\/a>, varianta din bucataria est-europeana. Pentru o masa mai consistenta, arunca o privire si peste <a href=\"https:\/\/gourmandelle.com\/ro\/mancare-de-cartofi-si-morcovi-cu-tarhon\/\">mancarea de cartofi si morcovi cu
