Imi place cat de diferite sunt mancarurile la ei in comparatie cu ce avem aici in Europa si cat de mult difera bucataria unor culturi diferite chiar si atunci cand au acces la aceleasi ingrediente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Unul din motivele pentru care fac atat de des preparate chinezesti acasa este ca multe dintre ele sunt vegane din start, deci sunt foarte usor de incercat. Iar daca persoanele din familia ta cred ca nu le-ar placea mancarea chinezeasca, le poti convinge tocmai cu pachetelele de primavara: sunt facute din ingrediente pe care le stie si bunica &#8212; morcovi, varza, ceapa &#8212; contrastul de texturi este exact ce cauti la un pachetel bun, iar foile subtiri prajite corect se sparg satisfacator la prima muscatura.<\/li>\n<li><strong>Umplutura e simpla, dar plina de savoare<\/strong> &#8212; legumele calite rapid cu usturoi si sos de soia raman crocante, nu moi, si pastreaza un gust proaspat.<\/li>\n<li><strong>Sunt vegane din start<\/strong> &#8212; nu trebuie sa inlocuiesti nimic; reteta este vegetala asa cum e, deci potrivita si pentru zilele de post.<\/li>\n<li><strong>Ingredientele sunt accesibile<\/strong> &#8212; Cauta foile subtiri din faina de grau (spring roll wrappers), nu foile groase de orez pentru rulourile de vara &#8212; acelea nu se prajesc crocant. Le gasesti de obicei la congelator in magazinele asiatice. Lasa-le sa se dezghete complet la temperatura camerei inainte de a le folosi, altfel se rup cand le rulezi. Tine teancul acoperit cu un prosop usor umed cat lucrezi, ca sa nu se usuce si sa crape la margini.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Varza<\/strong> taiata julienne este baza umpluturii. Eu prefer varza alba clasica pentru ca ramane crocanta dupa calire si nu lasa prea multa apa. Taie-o cat mai subtire si uniform &#8212; foile groase nu se inmoaie suficient in cele 5 minute de calire si vor parea crude in pachetel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcovii<\/strong> taiati julienne aduc dulceata si culoare. Taie-i in fasii subtiri, de grosimea unui chibrit, ca sa se gateasca in acelasi ritm cu varza. Daca ii lasi prea grosi, raman tari in timp ce restul umpluturii e gata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Germenii de soia<\/strong> adauga acel crocant proaspat tipic pentru bucataria asiatica. Se adauga la final si se calesc foarte putin &#8212; ideea e sa pastreze textura, nu sa se inmoaie. Cauta germeni fermi, de culoare alba-deschis, fara pete maronii; cei ofiliti au un gust amarui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sosul de soia sau tamari<\/strong> da sarea si adancimea umpluturii. Daca vrei o varianta fara gluten, alege tamari &#8212; are acelasi gust umami, dar fara grau. Adauga-l direct in tigaie peste legume, nu mai tarziu, ca sa se imbibe uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Alunele prajite si zdrobite<\/strong> aduc un crocant suplimentar si o nota de gust prajit in umplutura. Zdrobeste-le gros, nu pana la pulbere, ca sa se simta in textura. Daca le prajesti tu intr-o tigaie uscata, vei simti cand sunt gata dupa aroma intensa care se ridica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos<\/strong> pentru calit suporta bine caldura mare a wok-ului si aduce o aroma usoara. Calirea rapida, apoi o pauza de racire, este pasul pe care multi il sar &#8212; si exact din cauza asta le crapa foile.<\/li>\n<li><strong>Scurge bine umplutura de lichid.<\/strong> Legumele lasa apa la calire; daca pui umplutura uda in foaie, uleiul va sari violent la prajit si pachetelul va fi moale. O umplutura aproape uscata e cheia unei cruste crocante.<\/li>\n<li><strong>Ruleaza cat mai strans, impaturind intai capetele.<\/strong> Un pachetel lejer prinde ulei inauntru si se desface in tigaie. Unge marginile cu putina apa ca sa se lipeasca &#8212; functioneaza ca un lipici natural.<\/li>\n<li><strong>Verifica temperatura uleiului: 180 de grade.<\/strong> Daca e prea rece, pachetelele absorb ulei si ies grase; daca e prea fierbinte, se rumenesc pe dinafara inainte sa se incalzeasca umplutura. Stii ca uleiul e gata cand un capat de foaie aruncat in el sfaraie imediat si urca la suprafata.<\/li>\n<li><strong>Prajeste cate doua-trei odata.<\/strong> Daca aglomerezi tigaia, temperatura uleiului scade brusc si pachetelele se imbiba. Tine cont ca foile de orez se comporta diferit la prajit, deci urmareste-le atent ca sa nu se arda.<\/li>\n<li><strong>Mai multe legume:<\/strong> poti adauga ciuperci taiate fin, ardei gras julienne sau praz, atata timp cat le calesti scurt si scurgi bine lichidul. Pastreaza proportiile ca umplutura sa intre lejer in foaie.<\/li>\n<li><strong>Fara alune:<\/strong> daca eviti arahidele, lasa-le afara din umplutura si serveste pachetelele cu sos sriracha sau cu un sos de soia cu ghimbir in loc de sosul de unt de arahide.<\/li>\n<li><strong>La cuptor sau air fryer:<\/strong> pentru o varianta mai usoara, unge pachetelele cu putin ulei si coace-le pana se rumenesc. Daca vrei sa le pregatesti in avans, ai doua optiuni bune. Poti rula pachetelele crude, le asezi pe o tava intr-un singur strat, le congelezi si apoi le muti intr-o punga &#8212; se prajesc direct din congelator, fara dezghetare, doar mai adaugi un minut-doua. Asa ai mereu pachetele gata de prajit. Daca ti-au ramas deja prajite, pastreaza-le la frigider maximum doua zile si reincalzeste-le in cuptor sau air fryer ca sa-si recapete crocantul; la microunde se inmoaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac gustarile rulate, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/pachetele-cu-omleta\/\">pachetelele cu omleta<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/pachetele-de-pizza\/\">pachetelele de pizza<\/a> pentru o varianta complet diferita.
