Se prepara usor, are o culoare superba si un gust dulce-acrisor natural care il face o alternativa serioasa la burgerul clasic din carne. In primul rand pentru ca imi place foarte mult sfecla rosie. O ador in salate, imi place combinata cu usturoi, o iubesc pur si simplu intr-o multitudine de combinatii. Din cauza asta imi place sa inlocuiesc carnea rosie cu sfecla &#8212; nu numai pentru ca astfel pot prepara ceva cruelty-free, dar si pentru beneficiile ei. Cui nu-i plac burgerii? Sa le luam pe rand:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Sfecla rosie curatata si maruntita<\/strong> &#8212; da culoarea intensa si acel gust dulce-acrisor caracteristic. Alege sfecle tari, fara zone moi, ca sa nu fie fibroase.<\/li><li><strong>Orez fiert<\/strong> &#8212; leaga compozitia si aduce consistenta. Poti folosi si resturi de pilaf sau alte garnituri simple cu orez, e o reteta excelenta de recuperat resturi.<\/li><li><strong>Ceapa si 4 catei de usturoi<\/strong> &#8212; baza aromatica; sfecla si usturoiul se potrivesc perfect.<\/li><li><strong>Patrunjel proaspat tocat<\/strong> &#8212; prospetime care echilibreaza dulceata sfeclei.<\/li><li><strong>Curry pudra<\/strong> &#8212; o lingura care da caldura si adancime aromei.<\/li><li><strong>Pesmet Panko si faina<\/strong> &#8212; absorb umezeala din sfecla si tin chifteaua legata. Foloseste variantele fara gluten daca ai nevoie.<\/li><li><strong>1 ou (sau 2 linguri tarate de psyllium)<\/strong> &#8212; liant. Oul face reteta vegetariana; pentru varianta vegana inlocuieste-l cu psyllium, care se umfla si leaga la fel de bine.<\/li><li><strong>Ulei de masline, sare si piper<\/strong> &#8212; pentru prajit si condimentare.<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru montare ai nevoie de chifle de burgeri, sos sweet chili, castraveti feliati, ardei iute murat si fulgi de ceapa prajita.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Vegetarian sau vegan: cum alegi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Asa cum e scrisa, reteta este <strong>vegetariana<\/strong>, pentru ca oul tine chiftelele legate. Vestea buna e ca o transformi foarte usor in varianta vegana: inlocuiesti oul cu 2 linguri de tarate de psyllium, care absorb apa si formeaza un gel ce leaga compozitia la fel de eficient. Verifica sa fie vegane si chiflele si sosul sweet chili, iar restul retetei ramane identic. Sfecla lasa apa, asa ca daca simti ca aluatul e prea moale, adauga mai mult pesmet pana obtii o textura care se modeleaza usor si isi tine forma. Robotul de bucatarie iti da o compozitie omogena rapid, dar nu il lasa sa mearga prea mult &#8212; vrei bucatele fine, nu piure lichid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Prajitul in doua etape este cheia texturii: mai intai prajesti chiftelele cate 5 minute pe fiecare parte, la foc mediu, ca sa formezi o crusta crocanta, apoi le finalizezi la cuptor 30 de minute la 200C. Etapa la cuptor gateste interiorul complet si usuca umezeala reziduala din sfecla, ceea ce le fixeaza forma si intensifica aromele. Cauta o suprafata bine rumenita si o margine ferma inainte sa le intorci.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum montezi burgerul echilibrat<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ordinea la montare conteaza: taie chifla in doua, pune pe fiecare jumatate cate o lingura de sos sweet chili, apoi castravete feliat, chifteaua, inca putin sos si fulgi de ceapa prajita. Acopera cu a doua jumatate si serveste cu ardei iute murat alaturi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un sfat din experienta mea: ca veni vorba de castraveti, eu una as recomanda sa folosesti mai putini sau chiar deloc, deoarece sfecla deja aduce un aport de dulce-acrisor in burger. Fiecare are personalitatea lui.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum pastrezi si prepari din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Chiftelele se pastreaza foarte bine la frigider 3-4 zile, intr-un recipient inchis. Le reincalzesti cel mai bine in tigaie sau la cuptor, ca sa isi recapete crusta crocanta &#8212; microundele le inmoaie. Poti prepara compozitia si cu o zi inainte, o tii la rece si formezi chiftelele fix inainte de gatit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru congelare, aseaza chiftelele deja gatite si racite pe o tava, congeleaza-le separat, apoi muta-le intr-o punga. Se pastreaza pana la 2-3 luni si le reincalzesti direct din congelator la cuptor. Iti recomand sa montezi burgerul proaspat, cu chifla si toppingurile puse in ultimul moment, ca sa nu se inmoaie chifla.
