Sunt in stilul parjoalelor, dar complet vegane, gata in cateva miscari si potrivite pentru orice masa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cei dintre voi care ma urmaresc frecvent stiu ca imi place sa fac retete de gustari vegane gustoase si rapide. Mie imi plac in mod special aceste chiftelute cu quinoa, pentru ca mi se pare o reteta foarte intuitiva: nu ai nevoie de cantariri exacte, ci doar de quinoa gatita si de ce verdeturi ai prin frigider. Le fac mai ales atunci cand vin acasa obosita si constat ca mai am niste quinoa gatita ramasa, iar in zece minute am o gustare calda pe masa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sincer sa va spun, eu nu am cunoscut pe nimeni caruia sa nu-i placa aceste chiftelute de quinoa pe care le-am facut, si asta e ceva ce va doresc sa vi se intample si voua. Cea mai distractiva parte &#8212; sau cel putin una din partile mele preferate &#8212; este sa modelezi chiftelutele in formele pe care le vrei. Ai nevoie de 350 g quinoa deja fiarta, nu cruda. Dupa ce o fierb, imi place sa o las sa stea la temperatura camerei cateva ore inainte sa o folosesc &#8212; asa se aseaza, pierde umiditatea in exces si lega mult mai bine in chiftelute. Parerea mea este ca quinoa este o alternativa foarte sanatoasa la orez, iar din punct de vedere al texturii mie imi place mai mult decat orezul. Cand o cumperi, clateste-o bine inainte de fierbere ca sa indepartezi saponinele, stratul natural care da un gust usor amar daca nu este spalat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeiul verde<\/strong> &#8212; un ardei taiat marunt da prospetime si o textura usor crocanta. Alege unul ferm, cu coaja lucioasa si fara pete moi; taie-l cat mai marunt ca sa se incorporeze uniform si sa nu rupa chiftelutele cand le modelezi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa verde<\/strong> &#8212; patru fire de ceapa verde maruntita aduc o aroma mai delicata decat ceapa uscata. Foloseste si partea alba, si pe cea verde; cauta fire drepte, cu varful verde viu, nu vestejit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjelul si mararul<\/strong> &#8212; doua linguri de patrunjel si una de marar, ambele maruntite proaspat, fac diferenta in aroma. Verdeturile proaspete bat de fiecare data pe cele uscate aici; toaca-le abia inainte de a le adauga, ca sa-si pastreze uleiurile aromatice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Semintele de chia<\/strong> &#8212; doua linguri de seminte de chia absorb apa si formeaza un gel care ajuta la legarea amestecului, exact ca un ou vegetal. De aceea amestecul se lasa la odihnit cateva minute: ca semintele sa-si faca treaba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> &#8212; pentru varianta vegana, inlocuiesti cele 2 oua cu 4 linguri de tarate de psyllium. Psyllium-ul se hidrateaza si devine gelatinos, exact rolul pe care il are oul intr-o chiftea clasica. Daca nu tii post, poti folosi cele 2 oua in locul lui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> &#8212; 125 g faina dau structura si tin chiftelutele legate. Daca ai nevoie, foloseste faina fara gluten si reteta ramane la fel. Adaug-o treptat: vrei un amestec care isi pastreaza forma lingurii, nu unul uscat si sfaramicios.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimionul<\/strong> &#8212; o lingurita de chimion macinat da caldura si profunzime. Aceasta pauza nu este optionala: in ea, chia si faina absorb umiditatea si amestecul devine modelabil. Daca sari peste ea, chiftelutele se sfarama in tigaie.<\/li>\n<li><strong>Prajeste la foc mic spre mediu, nu mai mare.<\/strong> La foc prea iute exteriorul se arde inainte ca interiorul sa se gateasca. Stii ca tigaia e gata cand o picatura de apa sfaraie usor, nu violent.<\/li>\n<li><strong>Preseaza usor cu spatele lingurii.<\/strong> Iei cate o lingura de amestec, presezi ca sa obtina forma lingurii si o asezi in tigaie. Chiftelutele turtite se gatesc uniform si se intorc mai usor decat cele groase.<\/li>\n<li><strong>Nu le intoarce prea repede.<\/strong> Lasa fiecare parte sa se rumeneasca aproximativ 8 minute; stii ca e gata de intors cand marginea s-a inchis la culoare si chifteaua se desprinde singura de tigaie. Daca se lipeste, mai are nevoie de cateva secunde.<\/li>\n<li><strong>Foloseste quinoa racita.<\/strong> Quinoa calda elibereaza abur si umiditate care inmoaie amestecul. Cea racita, lasata cateva ore la temperatura camerei sau scoasa din frigider, leaga mult mai bine.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Oua in loc de psyllium.<\/strong> Daca nu tii post, poti folosi cele 2 oua mentionate in reteta in locul celor 4 linguri de tarate de psyllium. Rezultatul leaga la fel de bine.<\/li>\n<li><strong>Varianta fara gluten.<\/strong> Inlocuieste cei 125 g faina obisnuita cu faina fara gluten. Textura ramane apropiata, doar adaug-o treptat pana cand amestecul isi tine forma.<\/li>\n<li><strong>Alte verdeturi.<\/strong> Mararul si patrunjelul pot fi inlocuite cu coriandru sau leustean, in functie de ce ai la indemana si de aroma pe care o preferi. Dupa ce se racesc complet, le pui intr-un recipient inchis ermetic si le tii la frigider 3-4 zile. Le reincalzesti cel mai bine in tigaie, cateva minute pe fiecare parte, ca sa-si recapete crusta; la microunde se inmoaie. Amestecul crud poate fi pregatit cu cateva ore inainte si tinut la frigider acoperit, asa ca poti modela si praji chiftelutele exact cand ai nevoie de ele. In plus, imi place mult sa mananc quinoa la cina, iar chiftelutele pot fi servite intr-o multitudine de feluri si combinatii &#8212; de la aperitiv pana la fel principal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac chiftelutele de post, mai ai si alte variante de incercat: aceste <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-quinoa-cu-porumb\/\">chiftelute de quinoa cu porumb<\/a> sunt o ruda apropiata, iar <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-naut-falafel\/\">chiftelutele de naut in stil falafel<\/a> sunt perfecte cand vrei ceva mai condimentat.
