Se serveste cald, peste orez, si e gata in mai putin de 40 de minute. Satioasa, exotica si complet pe baza de plante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand zici curry, te duci cu gandul la mancarurile aromate de provenienta indiana sau thailandeza, cu acea combinatie de ierburi si mirodenii care umple bucataria de miros: <strong><a href=\"https:\/\/gourmandelle.com\/ro\/turmeric-retete\/\">turmeric<\/a><\/strong>, chimion, coriandru, <strong><a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-cartofi-dulci-ghimbir\/\">ghimbir<\/a><\/strong> si ardei iuti. Combinatia variaza de la o regiune la alta, in functie de traditii si de preferintele fiecarei familii. Retetele traditionale de curry mai contin uneori si peste, carne de vita sau de pui, insa mereu impreuna cu multe legume.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tocmai de aceea ador curry-ul: este foarte usor de &#8220;veganizat&#8221; &#8212; scoti proteina animala, pastrezi toate legumele si tot spectrul de arome, si nu pierzi nimic. In reteta de astazi va arat cum imi prepar eu pasta de curry verde in casa, de la zero. Cumpara firele ferme, cu baza groasa si carnoasa; cele uscate sau lemnoase la varf au pierdut deja din uleiurile aromate. Foloseste mai ales partea de jos, mai frageda, si zdrobeste-o usor cu latul cutitului inainte sa o pui in robot, ca sa elibereze mai mult parfum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chili verde<\/strong> &#8212; da iuteala si nota proaspata. Cea mai mare parte din capsaicina sta in seminte si in membranele albe dinauntru, asa ca daca vrei un curry mai bland, scoate-le. Gusta intotdeauna un colt mic de ardei inainte sa il pui in pasta, fiindca iuteala variaza enorm de la un fir la altul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbir si usturoi<\/strong> &#8212; baza aromatica fara de care niciun curry nu prinde viata. Alege ghimbir cu coaja neteda, lucioasa, care se curata usor cu marginea unei lingurite. Pentru pasta intra in robot, asa ca nu trebuie tocat fin &#8212; robotul face treaba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coriandru proaspat si busuioc<\/strong> &#8212; ele dau culoarea verde si prospetimea pastei. Foloseste si tulpinile de coriandru, nu doar frunzele &#8212; sunt foarte aromate si oricum se maruntesc in robot. Pastreaza cateva frunze deoparte pentru a le adauga la final, dupa ce ai oprit focul, ca sa nu isi piarda aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de cocos din conserva<\/strong> &#8212; cel care da cremozitatea sosului. Cauta conservele cu un continut ridicat de grasime (peste 60% extract de cocos) si fara prea multi aditivi; acelea dau cel mai catifelat sos. Cele 4 linguri din pasta sunt separate de cele 450 ml care intra in sos, asa ca tine cont de ambele cantitati.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Conopida data pe razatoare<\/strong> &#8212; secretul texturii. Rasa marunt, cat bobul de orez, ea absoarbe sosul si da volum fara sa ingreuneze felul. Nu o gati prea mult, altfel se face pasta &#8212; vrei sa ramana cu putin &#8220;muscat&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Legumele (broccoli, morcovi, dovlecel, fasole verde)<\/strong> &#8212; aici e libertate totala. Taie-le aproximativ de aceeasi marime ca sa se gateasca uniform si adauga-le pe cele tari (morcovi, fasole) primele, iar pe cele moi (dovlecel) putin mai tarziu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sos de soia \/ tamari, suc de lamaie si lime<\/strong> &#8212; triunghiul care echilibreaza totul. Sosul de soia inlocuieste sarea cu o nota umami profunda, iar aciditatea de la lamaie si lime taie din bogatia laptelui de cocos. Acest pas scurt face diferenta dintre un curry plat si unul aromat.<\/li>\n<li><strong>Nu grabi ceapa.<\/strong> Gateste-o pana devine translucida, nu rumenita &#8212; asta inseamna ca si-a pierdut nota cruda si ascutita si a devenit dulce. Daca o arzi, amaraciunea se va simti in tot felul.<\/li>\n<li><strong>Urmareste morcovii, nu ceasul.<\/strong> Vrei legumele &#8220;moi-crocante&#8221;, adica patrund usor cu furculita dar inca opun rezistenta. Incalzeste-l usor pe aragaz, la foc mic, si adauga o lingura de apa sau de lapte de cocos daca sosul s-a ingrosat prea mult. Se preteaza foarte bine si pentru caserole de pranz: portioneaza-l peste orez si il ai gata pentru toata saptamana (vezi mai multe idei in <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-pranz-pachet\/\">retetele de pranz la pachet<\/a>).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pasta de curry o poti face in avans si separat: pastreaza-o la frigider pana la o saptamana sau congeleaz-o in tavita de cuburi de gheata, ca sa ai portii gata oricand.
